      Mousse cakes but I think it will work equally well on cakes with other types of frostings...

      hi mine was little thick..i followed the same steps..but when i pour on temp she mention it was really thick and after one hour it was matt...and other side i pour with little temp above than she mention because in that temperature it was not that thick and oki to pour ..and i saw that it was shiny after 1-2 hours..could u tell me whats your experience

    I made this. I’m not such big fan for chocolate but had to do this for my kids. This is very good recipe. I couldn’t stop licking off the bowl .. so good 😊

    the glaze looks amazing, i was wondering do you add the chocolate right after you get the water and the sugar off the heat? or do you wait till it reaches a cooler temperature?

    225g granulated sugar
    104C
    150g chocolate
    30g sifted cocoa powder
    65g heavy cream 35%
    60C
    10g gelatin powder + 1/4 cup cold water

      +Zaineb Zainouba Just use it exactly like you would use the sheets, except put them in with the 1/4 water instead of taking them out of cold water like with the sheets

    Thank you for the recipe! I tried this recipe with 10 g of powdered gelatin and also just semisweet chocolate chips. I also didn't have an immersion blender so I just sifted at least 4-5 times. Didn't really get the some of the bubbles out. And lastly, just before I get to the glaze, my candy thermometer broke so I had to go by see and feel. The temp was warmer than it should be so the sides looked like a drip cake instead. But nonetheless I think it's a great recipe. I'd love to do this over again with the right tools next time:)

    Hi, such a beautiful job! I´m from Argentina, and we don´t have gelatin sheets, as other person ask, what can I use instead? The non flavoured gelatine here is powder and needs to be hidrated with cold water (but it still stays like a liquid after that because it melts). Could you please help me? (Sorry for my spelling mystakes) I love your work! So inspiring!

      +Victoria Ellenberg You can indeed find gelatin sheets in Argentina. Go to any repostería supplier and ask for "cola de pescado". It may not be easy, but it's out there! Suerte!

    I have searched the internet for hours today but have not been able to get a definite answer. Can this kind of mirror glaze be used over a normal chilled buttercream frosted cake? Will the glaze just fall of the cake or will it look shiny just like it would with a mousse cake? Some people seem to say you can do it some not... Would really appreciate your answer.

      Parisa Khan the buttercream must be very cold. The glaze cannot be too hot

    I'm guessing to use 10 grams of the Knox powder gelatin in replacement of the gelatin sheets but how much water should you use for that then? I know it would be less since she rings out the excess from the sheets. love this cake, it's amazing how it actually had a mirror quality!

      No, the one I make is very similar to this, and if your mixture is warm enough, the gelatin will dissolve completely. I don't wait to add it, I just add bloomed gelatin straight in.

      you don't need a hand blender. just take your smoothie mixer like a magic bullet or so :)

      The cake isn't "covered" in anything actually! Mirror glaze is almost always used to cover mousse cakes. What you though may have been chocolate frosting was actually all chocolate mousse!

      yup cover it in butter cream and let it set in the refregirate for a while and when it's hard to touch then you can glaze it
