Hello, you can use any miso of your choice. You can use Awase Miso (red and white combined). If you want saltier, use the Red Miso and if you want sweeter, use the White Miso. If you want it balanced, look for the Awase Miso or you can mix the Red and White.

If you are fine having chopped garlic, ginger and onion in your soup, you can use the same pot. I also used clay pot which I don't usually use for saute so I use other pot to make a broth then assemble together in the clay pot as a finishing. Clay pot is better presentation especially if you have guests. But if you are cooking for yourself and your family, you can use any pot of your choice. 😀
