I was able to work under Dario for a week in 2012 in Italy. This man is a true legend, his shop is the heart beat of that town. What a magical time that was!

For my parents 25th wedding anniversary we went to his restaurant. Everything you see about him coming into the reataurant and singing like a songbird in the butchershop is exactly how he is in real life. An absolute treat.

I am Italian, moved to the USA 9 years ago, meat is my favorite thing ever. Recently I stopped eating it and became a pescetarian. In the US, the meat tastes like unhappiness, stress, and you absorb all those toxins from the animals you consume, resulting in heart disease, high blood pressure, and worst. I am currently looking for local farmers in Virginia that I can visit to start buying directly from them. At 6:50, Dario explains my concept, and trust me, you can taste the difference.

I watched him on Netflix a year ago, glad he’s in good health and his business looking good as well, cause this kind of passion is rare. Ever since I found this incredible person, I added his butchery to my long bucket list, hoping to visit this wonderment soon.

In 1992, I was working on a PBS documentary on Italian food and culture. We stayed in Panzano for a number of days while we filmed in and around Chianti. Dario at that time was a single, Dante-quoting butcher with a wicked twinkle in his eye. (The big persona had yet to fully emerge, and the red and white pants came later). He invited me to dinner at a hilltop ristorante with a sweeping valley view. Dinner was bistecca from Macelleria Cecchini, and pici with truffles. We had fun, needless to say, and it both fascinates me and does not surprise me to see how his fame has spread.

I went to his original shop in 2000 & the new combined shop & restaurant in 2018 . He has certainly grown in that time & embraced the tourist business. He does a fair bit of media in Italy nowadays. In 2000 he was much more self contained. Panzano is a nice town to be contained in.
This guy's friendliness is impressive. It's a life goal for me to leave Brazil to have lunch there with him. It has an atmosphere of us in Brazil. A full house with the whole family gathered on Sundays for lunch. We Latinos still carry this. Family gathered around good food with great joy.

This man doesn't need Michelin stars to prepare good food because the main ingredient is passion and love, and then he doesn't spend too much time in complicated menus, all is simple but so good, this must be one of the best experiences in life, it's incredible how happy and passionate he is !
I visited Dario Cecchini 2 years ago.....and my God what an experience it was! I remember me and my wife jogging to the church trying to survive all this fantastic food! Salve Dario da Atene, Greccia!

I met Dario last week. He is a wonderful man and has a wonderful staff. I was literally star-struck and so appreciative that he would shake my hand, but instead, he gave me big hug, took pictures with me, and gave me a signed apron. Kudos to LORENZO! who made it all happen. He works at the restaurant and butcher shop. These people made me feel so at home. Brilliant Artisans of wonderful art.

I ate at that restaurant and met the master, one of the highlights of our trip to Italy.
This gentleman is a little "crazy”, but in a very positive way ! He is a great lover of meat and a great lover of his work. For him, his work is more like a hobby. Regarding meat, he has his own whole philosophy. Also in terms of socializing with people, getting people all together and enjoying the food all together. He is a famous character throughout Italy. You will certainly have had a great experience.

My family had three generations of butchers. My great-grandfather started The John J Leech Company, which had a stall st Cross St Market, in Baltimore, MD. They eventually moved to a building they called, “The Plant”, in West Baltimore, and my grandfather took over after John J died. My Dad, and his 3 sisters worked there in their teens, to around college age. Unfortunately, the business went under for several reasons. My grandfather switched professions, and became a handyman. For 18yrs, my Dad worked in the meat business, but eventually changed careers, and became a respiratory therapist, ultimately working in home care, with a specialty in C-pap machines for vets with sleep apnea. That ended our family’s ties to the food industry, but they learned valuable life lessons, still drawing from those experiences, currently. I’m sending a link to my Dad, as he will surely appreciate all of the things that make this a great exposé of one of the greatest butchers to ever live. The passion he has for food, and the people in his life is inspiring. Also, he seems quite the character, and his personality fills the room. His “Republic of the Heart” is a nice touch, and I love that it’s membership is an exclusive club.” Eat, drink. Be merry.🙂
