    I have never been interested in working at a restaurant, but I would relish the opportunity to spend two or maybe three years learning from this man to experience his expertise in meat and wood fire cooking.

    A beautiful and magical human being and artist. His vision is revolutionary and respectful of the past. That being said he's about 10 years ahead of the everydayer or he's right on time for the right dream and idea. The variety is Insane and yet simple. Awesome presentation. Great staff. Hands down should he should be easily getting a Michelin and James Beard. A teacher that's naturally great at doing. Peace and Prosperity to this Chef.

    I’m coming next time in Singapore. This is my type of heaven. Well worth the money. Most butchers put this effort in. We just don’t see it.
    Love this. Put one in London. I’ll be there at least twice a week!

    Wow I would love to travel to Singapore and eat at this restaurant. It's incredible! There's an emphasis on high quality fresh ingredients. This chef truly understands flavor and that it takes time to develop it and he puts that time in. He's also really on top of things. His entire brigade is a well-oiled machine. His manner of running The restaurant is very efficient.

    IMO, This is a beautiful example of what composes the culinary arts. Yes, everything in the restaurant was idyllic, but that’s the point. Mise en place. Mise en place. Mise en place.
    Besides the beauty of the setting, hearing the years-emphasis on years- of work chef put in, in addition to a formal education is what I respect most.
    Before you get to cut the fish, you watch.

    This video was awesome. i love that everyone working there is so passionate and works hard. It sucks that the consumer shots are just them taking photos for social media. The table he plated just looked like they could care less

    I am all about this kind of cooking. Best line I heard from a chef is "Put a restaurant in the middle of a farm". But I wish we as a species make this kind of cooking for all not the wealthy. Ingredients from nature should be free for all.

    The beauty of this extraordinary establishment is the effort put into every detail by so many dedicated people. The downside to the business model is that you must hit your numbers by feeding wealthy folks that can afford the prices they charge. Lose that demographic group for any reason, and you're immediately in trouble.

    If the restaurant works out or fails in today's market that's one thing..if you ever wanna do it then do it properly , absolutely amazing but the truth is thete are street venues that will higher profits..it is what it is...

    I see all these dope restaurants with really passionate chefs doing 10 covers a night. How are these situations making money? This is a cooks dream.

      Simple economics - the kitchen has to bring in enough revenue to survive and with them only having 10 covers a night, you’d naturally assume guests are paying $$$ for their meal. Quality over quantity.

      So I looked at it, this place is actually a restaurant in an extremely expensive (aka $1000+/night) hotel called Raffles Singapore. They are charging an extremely expensive amount for the rich clientele of the hotel. That is why they have such low covers. Tasting menu alone is like $220/person, before any alcohol.

      Looked up the menu. The meat prices are BEYOND OUTRAGEOUS. Way more than you would even pay in NY. THey charge by the GRAM!! I would guess average 4 top.....1600-2000$ with alcohol!!!!!!!

      They are in a $1000/night hotel.
      A four top business dinner there is like $2000-3000.
      I’m sure they’re making a killing. The prices are higher than high end restaurants in NYC for example

    I live in the UK ..pleased can you tell me where I can buy the mobile wood fired grill I see in your kitchen?

      I am not sure but the most common wood fired grill is the Josper Grill. If you check on Nisbets you will find some smaller versions of these grills. Hope this helps

    Singapore 🇸🇬 is a wonderful place. Since this restaurant is in Raffles Hotel (5 Star) I know it is first class and quite expensive but well worth a one time splurge.

    Small portions at exorbitant prices aren’t really my thing.
