Been there many times, last time in 2012. Nothing like entering the small butchery with the deafening music of AC/DC blasting all around, then the huge chef himself with always the smile on his face serving salame and other cold cuts, the glasses of wine always full. Dining at the long table with guests from all over the world is an experience in itself. Love the man and his team.
He is truly an amazing individual…we have been fortunate to meet him on several occasions…a very friendly and passionate man! Panzano should be on your travel itinerary….one or our favourite places in Italy…hugs from Canada 🇨🇦 Dario!

Again, that does not mean that Dario doesn't have the same quality food or even better than some Michelin restaurants. If you ask me personally as a chef, simplicity makes perfection , especially when you don't want your excellent main ingredients to get lost in a mess of tastes. Some chefs argue thought that you can construct amazingly layered dishes, which is also true. Each to his own i guess.

Even my xfather said perfectly cooked. My daughter that was nine that time said that the steak was better than chocolate 😊. Now she is 22 and we still remember the taste.

As a carnivore and meatlover it’s a must to eat at one of his restaurants! He‘s a joy to watch and his staff share the same enthusiasm. And the meat you’ll eat is out of this world good!
Dario's a master marketer but you want to go to Osteria Nandone in Mugello just North of Florence. In the middle of nowhere and you need to call 3 weeks in advance. The best.

When you arrive at your table will have all the antipasti laid out and what they offer depends on the season with everything locally sourced from within a couple of kilometers. For the second course, he does only one thing and it's bistecca all fiorentina which is farmed raised, and grass-fed nearby cooked over a roaring fire right in front of you. Ask to eat where they cook the steaks. Paolo is the best!!!
I have a lot of respect for this man. The beef marbeling looks superb! I've always been conflicted about eating our beef. Perhaps it is because they die at around 2 years of age. I've cooked chicken in a similar way, I will try this for sure!

A few years back I spent a few days in Florence. I did notice a lot of restaurants had sandwich boards outside advertising steaks. It somehow didn't dawn on me that steak is a Florentine specialty. Oh well, maybe next time.
The best farmer will give an animal that is going to be slaughtered for food, a life of great days with one bad day. Each of us owes one death and if you can imagine someone making that day as fast and painless as possible, you are thinking of a very good farmer. I cook a pretty nice steak myself so it would be a quite a life time exlerience to taste something from a master's best work.
