  • Georges Blanc is one of the chefs who made the history of French cuisine. His 3 Michelin star restaurant, outside Lyon, is a real gastronomic village, designed to celebrate the great excellences of the Bresse region, first and foremost chicken. Chef Matteo Rossatto, together with his very Italian brigade, presents the legendary chicken en crust created by Blanc on the menu for more than 40 years.     Che orgoglio mi suscita vedere una brigata di ragazzi italiani diretti da uno chef italiano così bravi e professionali da renderli eccezionali.     being 25% italian and french i am so proud to see the best our 2 cuisines stay the best on this planet for the quality of our products and savoir faire . french technics are the base just fantastic ..a bit long if u do it yourself but cuisine is passion ❤

      @@user-vw6bk4pb4l exactly the point! as if other people does not seen good food! both French and Italian cuisine is highly overrated n comparison to what Asia, Africa and south America can offer. Just like this chicken, they use fancy techniques, and fancy ingredients to make the sauce. however the dish looks so unappetizing at the end. Even so much effort is made to make that fancy decorated inedible crust. Absolute waste of time. may be stupid rich guys want to waste money on this ''fancy stuff'' which tase below average, which i can just judge by looking at it.

      French food is not only made on palace and rich expensive restaurant. I an French and never consider that it is the best cuisine. I am proud of my mum cuisine without being arrogant. French are more open minded than what you think. Don't stick to the cliché

      Last year when I went camping in the spring I purchase a hen from a local i stuffed it with fried chicken livers rice onions and wilde mushrooms. Brush it on the outside with butter, stuck to that butter grape leaves and wrapped the whole thing in two layers of parchment paper and a layer of mud. When the mud dried up I put the whole thing in an empty cement bag and into the fire. When that fire died out I made a smaller one on top of it. It was wonderful. No special sous.

    Si capisce che ascoltare critiche e insulti da persone su internet è inutile dato che riescono ad insultare e criticare pure chef con 3 stelle Michelin, che hanno creato piatti che durano da decenni con un'incredibile ricerca dietro.       Amico mio, ma veramente bisognerebbe pagare per buttare via il burro. Lo capisci che il commensale lo sta pagando? I commensali pagherebbero quindi per una crosta "brillante"... Questa è una cretinata indipendentemente dal numero di stelle. Prima di rispettare gli chef stellati imparate un po' di cultura del cibo.

    This is just so beautiful, and executed with such ease (at least from the viewer’s perspective😂). And yet those who cook know the sheer labor that goes into a dish like this, the couple hours alone that goes into making just the sauce (and remember, all those onions need to be chopped!), not to mention adorning the crust with decorations, serving it, etc. Mind blowing, I am amazed🤩

      @@kimpritchard4322 Unfortunately, that’s not as easy as it sounds. That crust is a salt crust, which is made of mostly salt and designed to seal in moisture of whatever it cooks inside as well as add some seasoning. To eat it would be like eating handfuls of pure salt, so not very pleasant😉

      @@stacey248 But they do see it!!! That’s the whole point, it’s brought out to the table in that decorated salt crust looking all beautiful and shiny. Then, at the table and in front of the diners, it is cut open and the chicken is plated. This is called “Les Arts de la Table”, the French style of dishes that are presented table side. Since it is being seen by the diners at every point, not only does it have to look beautiful (carved, glossed, etc), but the waiters have to be extremely skillful in carving and plating the dish.

    Si tratta di una preparazione di lusso, che evidenzia una grandissima tecnica, che difficilmente può essere economica e che esalta le qualità intrinseche della materie prime (il pollo innanzitutto, molto particolare e direi unico) e delle preparazioni, tra cui una salsa quasi irripetibile altrove. Un piatto da circa 150 € con un calice di livello (ci vedrei bene uno champagne). Credo che l'intero pollo potrebbe costare circa 400 €. Mi divertirebbe proporlo a casa mia, ma con alcune varianti. I gusti sono sempre personali ma non si può demonizzare ed offendere cotanta qualità espressiva; certi commenti sono proprio espressioni di ignoranza e maleducazione. Si deve poter sempre criticare, se si vuole, ma con rispetto verso tutti, buona educazione ed eleganza. Un grazie allo chef Rossatto e al patron G. Blanc, davvero un creativo. Ed anche a I.S., ovviamente. Saluti a tutti.

      Buonasera, la ricetta è costosa: per un poulet de Bresse contate 40€, una bottiglia di vin jaune 35€ e una di Madeira 30€.
      Questi sono i prezzi medi in Francia.
      Prima di cucinare, credo sia una buona idea provare prodotti meno costosi...

      Acheter un poulet de Bresse, disons 65 €uros, à Lyon ou Bourg, et réunir ses 3 amis pour ensemble un festin. Et convenir que nous n'avions jamais avant manger de bon poulet.... Sur l'A39, j'espère qu'ils ont gardé les rotisseries de Poulet de Bresse dans les aires d'autoroutes ?? Le premier qui monte un KFC.....j'y fous le feu. Merde à la sale bouffe. Et vive la Bresse.

      It seems totally worth it. A chicken of that quality alone costs around 50-60€. Then you add the wine, a bottle that's around 30€ in France, plus the madère wine, another 8-10€. Then you add all the other ingredients for the chicken as well as all the sides, and all in all, you have perhaps 120€ of ingredients.
      Then you have enough work to occupy 2 highly trained chefs for 2 hours, so I think it's well worth the price.

    That is truly freakin cool, and I'd pay a lot to experience a meal this complex. This is the first time I've seen a sauce so complicated be made, and it was super interesting. Man, I bet it's good. Reduced good wine, juniper berries, strained, flambeed, with walnut oil, I am amazed how someone was able to invent it. Just a baked chicken sounds so plain to me, too plain to order at a restaurant, but now, I feel like I need to try this chicken at any price!!

    Ho mangiato qualche anno fa da George Blanc, il miglior piccione della mia vita. Girando nelle campagne si vedono grandi prati con una specie di casetta con le ruote e intorno le galline che razzolano😊
