- Thanks for watching another video with My mom and I . Hope you guys enjoy this quick recipe.
There are multiple ways to make this , so here is of course my favorite version -which is my mom’s. The best thing about this dish is, that it does not have a fishy taste at all.
Recipe:
Prep for fish: Mahi Mahi: put the filets in a bowl of water, 2 tablespoons of salt and juice of 2 whole lemon. Leave the fish in bowl for about 3-5 minutes. Then after the time is up gently squeeze the liquid out of the fish along with running it under fresh water.
You can use the frozen fillets, just defrost them.
Mahi Mahi (raw filets- no bones) - 5 to 6 cups (cut the fish into medium sized cubes)
Diced fresh tomatoes- 2 or 2 1/2 cups
Green onions (scallions) - 1 1/2 cup
Shredded cucumber- 1 1/2 cup
Shredded jalapeños- 1/2 cup
Half and half - 1/2 or 3/4th of a quart
Mayonnaise- 3 to 4 tablespoons
Lemon juice - 1/2 of a medium lemon
Sorry that these measurements are not exact. These are the estimates, you will want to test the dish as you go. Add more ingredients based on your liking.
For the juice that the fish sits in, you want to have the juice cover about 1/2 or 3/4ths of the fish. You do not want the fish to be fully submerged in the juice.
Eat this with rice or any type of sweet potato or Taro.
