  • Here's a simple guide to baking Tiramisu with Anna.
    Click 'SHOW MORE' for recipe ingredients & instructions.
    INGREDIENTS
    Cream
    2 large eggs, separated
    1 large egg yolk
    ¼ cup sugar
    1 tsp vanilla extract
    1 cup mascarpone cheese, softened
    Syrup
    ½ cup coffee
    1 ½ oz rum
    1 Tbsp sugar
    Cream and Assembly
    ¾ cup whipping cream
    1 Tbsp sugar
    1 tsp vanilla extract
    24 ladyfingers
    bittersweet chocolate, for grating
    cocoa powder, for dusting
    DIRECTIONS
    Cream Syrup Cream and Assembly
    1. Whisk the egg yolks, sugar and vanilla in a metal bowl placed over a pot of gently simmering water until the mixture doubles in volume and holds a ribbon when the beaters are lifted. Remove this from the heat. In a clean bowl, and whisk in the mascarpone cheese until smooth. Whip the egg whites to medium peak. Fold the whites into the yolk mixture and set aside.
    2. For the syrup, heat the coffee, rum and sugar and stir just until the sugar has dissolved. Remove from the heat.
    3. For the topping, whip the cream until it holds a soft peak and stir in the sugar and vanilla. Chill until ready to use.
    4. To assemble, dip the ladyfingers quickly into the coffee syrup and arrange 3 into each of 4 serving dishes. Spoon a generous layer of the mascarpone filling over the lady fingers and grate a little chocolate over top. Repeat with a second layer of ladyfingers and the remaining mascarpone filling and grating of chocolate. Dollop the whipped cream over each tiramisu and dust with cocoa powder. Chill until ready to serve.

    I just made this recipe with your lady finger recipe and it was a hit! yoir lady fingers were sturdier than the store bought ones too! it was able to hold the coffee even with a short cooling time.

    I tried this recipe and let me just say that it was DELICIOUS!! I omitted eggs whites because I don’t like the idea of eating raw eggs. So instead I added a cup and half of whipped cream.And I was so happy with how it turned out. Thanks Anna for sharing this recipe with us ❤️

      1 in 20,000 eggs is bad in the US. and bad means an immunocompromised person (e.g. AIDS, person on long-term steroids, chemo patient, very young or old person, etc.) may get sick, a healthy person would just get an upset stomach.

    Hii Ms. Olson! Thanks a ton for all your recipes. They are so perfect I never went wrong trying any of them. I loved the tiramisu recipe and wanted to try the Yule log and the original tiramisu. Do you think I could use plain white rum instead of dark rum? As I dont drink often, I have some left and could use some? Please advise. Thanks again! Keep posting more :)

      I guess because a lot of us didn't think she was on the web. I missed an ingredient from her TV show, so went hunting on the web and found her site. I love to watch her cook; she's serene, gives clear instructions and explanations; she doesn't shout or carry on like an pork chop.

    You're a wonderful chef and I have learned so much from you - thank you. My question is: can you use cream cheese in place of mascarpone cheese? Mascarpone cheese is very expensive.

      It was really good! I just happened to put too little Lady fingers so it was a little bit creamy without "bread".

    I made this! With homemade lady fingers and cognac instead of rum 🍹 BEST TIRAMISU EVER! I have many dozens of versions! Dozens! Hundreds! This is INSANE! Like eating a cloud in the sky - make the lady fingers! And follow this recipe! Yikes! And soak lady fingers to use up the entire cup of coffee mixture

    Dear Anna! I love all your recipes and I'm sure this is delicious as well! BUT!!! This is not at all a clasic Tiramisu. For that you just need the Ladyfingers soaked in an coffee-amaretto syrup the mascarpone-egg cream and a generous amount of cocoa powder not chocolate. However I'm going to try this reinterpretation! ❤️

      Toma George-Bogdan I have to agree I Love Anna as well and love all of her recipes BUT, this isn't traditional at all. I've had this my entire life growing up in both Italy and here in North America and this isn't it. But, that being said it is close and I still love Anna just the same. But, I don't think she should call it "traditional" because that it isn't!

      the difference is that traditional uses only egg yolks and heavy cream combined together not on top They do not uses whites and chocolate. And add Kalhua or amaretto. I also add whine cause I think that it should be zabajone with maskarpone and cream.

      @@mightylordkuba I'm going to make a tiramisu as soon as I can get my hands on some kahlua but I have a question regarding the cream. You said traditional tiramisu doesn't use egg whites but does use cream. By cream do you mean heavy whipping cream that's already been whipped or do you just pour straight cream into the egg yolks and then whip? I've never had this before and I want to make it the way it's done traditionally. Hope to hear back from you as soon as possible. Thanks!

    Love that you made a zabaglione first. I always do. I was wondering. How safe is it to eat raw whipped egg whites? I know in Italy the eggs are raw when they add them to the mascarpone. Making the zabaglione gives a wonderful flavor to the tiramisu. I do cool off the zabaglione first before mixing it with the mascarpone. I just love your videos and recipes! Going to bake two batches of your chocolate chip cookies today!

      @@cindyyan9851 You guys need to stop worrying about raw egg whites. Almost 90% of pastry recipes uses whipped egg whites. It is always safe. The top cover of almost every birthday cake is also made of whipped egg whites.

    Awesome!! I made everything except the whipped cream because I live in Argentina and I don't know how people call it here. What is the percentage of fats of whipping cream?

      Blending a package of cream cheese with a 1/2 cup ofsour cream and 1/4 cup of heavy whipping creamtogether can make a suitable substitute for mascarpone cheese.

    Dear Anna
    I love your videos, I think that the carrot cake is the best recipe I've ever tried; but, as Venetian girl (the region where the Tiramisu was born; exactly in the city of Treviso) I have to tell you that this is your interpretation of the recipe, not the classic one. The REAL classic tiramisu recipe is: lady fingers lightly soaked in unsweetened moka coffee (or eventually espresso coffee), the cream is made only with mascarpone cheese, egg yolks and granulated sugar. Alternate One layer of lady fingers one layer of cream and on top of the last cream layer dust a generous amount of unsweetened cocoa powder. The secret of this dessert is the perfect balance between the sweetness of the cream and the strong bitter taste of the coffee amplified with the cocoa powder.

    Hey Anna, I tried to whisk my egg whites but they couldn't form peaks. Its just all bubbly & foamy. Is there anything I can add or change to make peaks?

      make sure your bowl and the whisk attachment are clean (no fat)

      You make mistakenly had some yolk in the whites. The whites will not whip with any yolk.
