I’ve taken my family off all modern wheat, and have returned to ancient grains and heritage grains. Einkorn is mans original wheat, it contains 14 chromosomes compared to 42 of modern wheat…so it’s no wonder people have wheat intolerance, illnesses related to digestion. We are beginning to see a huge difference in our health, sense of well-being, and basic food tolerance in general. Modern wheat is also often sprayed with glyphosate ( Roundup) …as a desiccant, and sprayed pesticides to produce a high yield crop….literally a poisoned grain. It’s been a bit of work …but well worth the journey. I’ve gained a tremendous amount of knowledge about how to enjoy grains without being exposed to all the poisons that BIG-AG is shoving down our throats…literally! The original wheats are totally healthy, intensely fragrant….and make the healthiest products ever. Give it a go…you won’t be sorry!
Better health wise . You do want to use this instead of all purpose flour if your are and /or cancer ; high blood pressure, diabetes, gluten issue. And etc. Other flour substitute is highly recommend than all purpose.
Bobs red mill has certified gluten free oats. Oats are gluten free but the concern is the factory it’s done in. Bobs uses a kitchen dedicated to gluten free items
If the Oats are ground in a mill that grinds wheat in same facility, then it may not be gluten-free. Only certified gluten free facility or bobs red mills are truly gluten-free.
I've just made an oat bread recipe by Amy Lee, it looked lovely.but I was confused, it said two cups of oat flour 300g I weight the oats 300g them made into oat flour it stated 250g yoghurt but I found I needed to add most of the 450g of the yoghurt to be able to mix all the dry ingredients.have I missed something here with this recipe if you look at Amy Lee recipe you can see what I mean many thanks Patricia obrien from Dublin Ireland 🇮🇪

I couldn't get my flour fine enough so I used a professional electric spice grinder. That worked out really great! The flour was super fine.

I don't use eggs so I will try using ground flax seed (flegg) to see if my scones will not be crumbly. Thanks for the tips.

Add 1 tsp of Psyllium husks to 1C Oat flour for a soft glutenous texture like you get with Wheat flour
