Use another pan to place on top of steak while searing to prevent buckling and get a consistent crust. Started doing this and my crusts have been amazing ever since

I’ve cooked steaks so many different ways the last twenty years when I am finally able to afford the time and money to enjoy steaks. Both cooks present great pointers especially the second cook when she describe the buckle. Great video and appreciate that these two took the time to share their experience with the rest of us

Absolutely love these ladies. Rie is as always a fantastic host, and I'm absolutely loving Kiano's attitude toward presenting and cooking! I love love how she's explaining the why's in her cooking and why she's doing everything with her food. And I loved Rie's presentation with her steak! It looked like it was tucked into a tasty bed

i bought a portable propane burner for all my steaks. best $20 ive ever spent. i get to crank the heat way up without all the indoor smoke and the oil splatter. highly recommend.
i feel like the step of letting your steak come up to room temp before cooking it was not emphasized enough. i would call it the number one most important step for a great steak if youre trying to cook rare or blue rare.

Can you use olive oil instead of grape seed oil to make the garlic chips?
You can but keep the temperature low, olive oil especially extra virgin burns quickly.

I’m going to be all stereotypical and just say this but expect very flavorful tastes is such POC only cooking. The rice, the spices, the abundance of seasoning, you won’t even hear the cow moo in their dishes. Just perfect!
