I love reading cookbooks to learn how different ingredients are used and how different people treat them for different purposes, and of course the food is great too. I know I'd definitely consider picking one up. So many of your dishes look amazing, this one included (and I'm sure they taste as good as they look).
Chili crab and black pepper crab are classic Singaporean crab recipes. I'm glad to hear you and Jocelyn are loving it! I recommend trying to make salted egg yolk dungeness crab for your next recipe!. It's also one of the popular crab dishes here too: it's sweet, savoury, yolk-ey and has a hint of curry leaf spice to it. Really good too! Don't forget to eat crab with fried mantou buns if you can make them or rice, since they pair pretty well with the sauces. Enjoy! Cheers and greetings from Singapore!
I second that, BP Crabs are great with rice and a sunny side egg on top. Besides Salted Egg Yolk Crab, You can also try Steamed Crab with Sake and Mirin and Ginger. Greeting from Singapore as well.
My man, this is a major go-to dish in Malaysia! You can find it almost anywhere coastal and it never fails to blow your mind with amazing flavor. Excellent choice.

Best subscription I've ever done! Man, that looked good. We used to cook it similarly with garlic black bean sauce and a little ginger with some onion and bell pepper. I like your method for catching them by snaring. You are truly embracing a more 'mobile' type of lifestyle; "lets do what works in a minimalist sort of way, forget the 100 lbs of other gear we would normally take". 😊
The first time I had fresh Dungeness crab was in Seattle. The restaurant offered three ways to serve it, one of which was “Julia Child’s style (cold with mayonnaise and lemon juice). I was surprised how good it was, usually wary of mayonnaise. Btw, your show really kept me occupied and happier during the quarantine days. Thank you!
I'm so glad everyone is getting on that crab action! I've been limiting each time right on the beach since opener up here. I recommend initially boiling the dungies in some OJ with onions. You can skip the onions, but the OJ really accentuates the meat's sweetness while not masking the crab flavor.
I prefer equal parts water and oj but yessir I wish people wouldn’t be scared of orang juice for seafood 😂🤣 whether simple coil or like a Cajun boil it really adds flavor without overpowering

Try soaking shrimp/crawfish meat in the riches OJ you can find with soysauce and Sriracha, then quickly batter (mix dry seasoned batter flour with some OJ added) and fry them. Pure heaven.
I could almost taste the black pepper sauce. Looks good. You kept on saying "hoisin sauce" while cooking. Glad you correctly said oyster sauce at the end

That recipe looked so good I am going to try it for sure 🔥🔥 One of my favorites with the crab is cook it up, crack the meat out, sautéed it in some garlic butter, then grab a piece of salmon and turn it into pita pocket and stuff it with the crab. The drizzle the garlic butter over the salmon and cook it in the oven. That was great with the subscribers at the end as well! Great stuff!
My mother who is Taiwanese makes an incredible crab dish. It's curry based with ginger, scallions, garlic and coconut milk. The key here is that you cook the crab along with some thin rice noodles that soak up all the gravy and juices. Cook them all together. Soak the noodles in warm water before adding it to the crab. Serve in a big plate but be prepared to get messy :) I've had black pepper crab and chili crab but this by far is the best!
I was expecting a battered and fried crab like the salt and pepper crab at R&G lounge (which is delicious in its own right), but your recipe looks really good too. I think it would work well with all kinds of seafood, and maybe served with noodles to pick up the rest of that sauce. We moved away from N. CA a while back and fresh dungies are one of the things I miss. Best crab in the world.
When you have extra, do you freeze it? What's your favorite recipe for frozen dungee? I'll sometimes throw them in chicken broth with garlic, shallots, white wine and serve with warm sourdough.

In Hawaii, we have spanner crab. Locals call it Kona crab. When am able to get hands on one, or two, like to either plain steam or cook w/black bean, garlic & green onion. Cooked similar to this Dungeness video but sub out Kona crab. Watching this has me DROOLING on my phone screen!...Keep Videos Coming!
Gotta try your recipe on my next catch! My fav was to first steam the crabs Til they r cooked. Then on the side, heat up some butter or regular oil, add minced or chopped garlic and stir fried til it turns golden color, and add Yeo’s Satay Sauce ( the amount is up to u. Usually is half a bottle with 2 crabs ) with a teaspoon of sugar and a pinch of salt…. Lastly thickening the sauce with cornstarch. ❤️🤤
Awesome video as always! The little guy caught at the 10-min mark is a Graceful Crab, also known as a Slender Crab. It is a relative of the Dungeness but is smaller and has hints of purple coloration on the legs.

One of the best fisheries I ever had when I was a kid when I was living in California was mackerel fishing catch tons of mackerel 50 mackerel a day or 50 mullet a day is the easiest fishery I didn't have to go far as I go in my own backyard and crabbing was awesome got a lot of small rock crabs five to seven inches limit was probably half a bucket full 10 was the limit
We Filipino like that Crab be cook in coconut cream but my first time to see Japanese way to cook a crab like that witbalack pepper powder and oyster sauce mirin hondashi its look yummy and awesome my Friend "Taku".
Good recipe will definitely try this one. Maybe next time you can try crab with misua it's a filipino recepi soup it's with patola squash. It's soo good. Just fry garlic onions add the crab cook it a little then add water let it boil add fish sauce and add the patola and last the misua noodles then finally some green onions and it's done good soupy noodles deliciousness. Hope you try it and thank you for all the videos.
This reminds me of a black pepper crab recipe I had on the coast of Cambodia in Kep, where they produce really good pepper. Delicious and delicate. Will try to make this recipe if I ever catch a crab lol.

Hey Taku and Jocelyn, have you ever tried or cooked the crab with coconut milk? I bet there are lots of recipes online for this dish. But where i come from, we basically cook the crab with water spinach, garlic, little bit of onion if you like, ginger,, and of course coconut milk, and green onions for garnish. I don't have the exact measurements for the ingredients cause i grew up using the "spice feels". 😀 Try it out. Peace n Love from Palau! And yes, it goes well with our beautiful white rice.
