If you wanna try something really different I recommend this: Break 2 eggs into a bowl, add a bit of milk, a teaspoon of sugar and half a teaspoon of salt and wisk it with a handmixer for a few minutes. When its nice and bubbly, turn on your Pan with a tsp of butter Inside, let it melt and pour in the egg mixture. Let the temperature sit on low to middle heat. After a few seconds, add graded cheese and put a lid on it. When the egg mixture isnt runny anymore, take the lid off and fold it in half and enjoy. I created this myself after watching a bunch of different styles and I really love it this way. The flavour enhancement is incredible. You can also add different toppings like onions or some bacon bits if you like.
I've made a lot of omlettes and never thought of using chopsticks, but this makes total sense as 2 chopsticks seemed to help beat the eggs while cooking and allowing the layers to cook evenly. Nice work. I'd like to see a Chefs East video showing how to make a frittata with bacon, cheese, peppers, onions, etc. Nice work.

Your video shows that there are many many ways of making an omelette. I didn’t think it would turn out, but it looks pretty good....
don't crack on the edge of the bowl lol good tip tho, 2nd person I've seen use chop sticks to stir the eggs to keep the curd nice, small and light
