A lot of the painting techniques are similar to my painting Cadian tanks video, if that helps! Key is to paint the armor panels separately and attach them at the end.

How much did that cost to paint and build? I want to know because I'm building a vehicle based army, and I think a knight would be a powerhouse of an advantage. (Edit: are you also going to do a leman Russ?)
The knight itself is about $130 on Amazon (just get the Canis Rex kit, it comes with all the options), and the paints aren't too bad. All the paint in total was less than $40--you don't need many to get a knight to look good and you can reuse them for all your other vehicles.
