Stems from the mushroom are good to boil, to then simmer. Strain liquid to add as gravy flavor or soup. Taste savory umami flavor. You can also steam your vegetables in the mushroom water from your mushroom stems.
People tend to wipe them with a cloth or towel that is slightly damped to take off the dirt there are also brushes for that as well. I've also heard people rinse them really fast then leave them to dry for 30 I wouldn't want to do that besides it being time consuming it could easily absorb the water.

I've never seen shitake mushrooms that are so well formed like the bellas, No need to discard stems, waste not especially if for broth or stews.

DO NOT remove the STEMS ! OMG what a waste and NO you are WRONG !! they ARE TASTY and plenty of vitamins INISDE the STEMS !

If you wash them they become mushy. Dust wipe with a dry dry paper towel. They attain very little dirty anyway.

No need to clean a shiitake. It doesn't grow in soil. I'd use the stems for soup or a compost pile.

Sure you may, but the most flavor is in the skin, just like with veggies.
