Clean and cut into smaller pieces. Roast with olive oil, herbs, salt and pepper at 400 degrees F for 30 minutes. Mushrooms should be velvety in texture.
Two quick questions 1) I have seen some people peel off the top layer of button mushrooms , is that a good idea. 2) also is a quick rinse good enough even if the mushrooms especially button variety has some dark spots on its head ? By the way are Button mushrooms same as Oyster mushrooms ?
Hi, it is not necessary to peel the top layer off the mushroom. The dark spots are the result of bruising and don't come off. Mushrooms are grown in loose compost soil. The dirt comes off easily under running water. Button mushrooms and oyster mushrooms are not the same.
You never wash or siak your mushrooms in water. waterlogged mushrooms will develop a diluted flavor and have a rubbery and slimy texture after cooking," If you're doing it the way she's showing, is just completely lazy. If you're fine with rubbery & slimy mushrooms that will not brown properly yhen be my guest & be lazy! I was taught in culinary school & several kitchens across the world & everyone has said what I just said!

How to remove the smell? Or prep it?
If your mushrooms smell, they are not fresh. This video is just a how-to. Here's a link to a mushroom recipe:

That information is old. If you wash quickly, rub away the dirt and dry, they will keep for days in paper bag. Done it many times.
