Isnt the bitter taste the medicinal properties of the mushroom though? So basically this is a way to eliminate the medicinal value just to make it taste good
2:02 Japanese chef, 'Made with Lau' suggested soaking the dried shiitake mushrooms for 10 min maximum with warm water as the mushrooms will lose flavour if soaked for too long.
For everyone struggling with smelly and funky dried shiitake even after this washing process: Roast them in the oven at highest setting for about 20 minutes and remove every shiitake which is still soft/slimy/spongy. Prepare them as desired afterwards, they'll taste much more intense + without funky aromas.
I have a question, is it safe to eat dehydrated shiitake? My brother tasted two of them yesterday and seems fine today I just tasted two also, hopefully I’ll be fine too. 😅😂 I got mine from a place that sells spices, not labeled. My only concern there is whether I should wash them or not.
I've cooked shitaki mushrooms with my vegetables stirfry but the Mushrooms are mostly kind of rubber when I chewed it. I soaked them overnight, sliced them thinly and add it to my stirfry. How long is the best to cook shitaki Mushroom to a soft texture after dehydrating? I love the flavor but it seems to be tricky when cooking this kind of Mushroom. Thanks for answering question. 🙂 😊
I was wondering what type of shiitake mushrooms did you buy. You can get the ones like in my video. You have to braised for at least 2 hours. Please watch the video till the end.
Can I also use the mushroom for pasta? I have dried shiitake mushrooms and I am planning to go on what you did in your mushrooms but hesitant if it can also be used for pasta.. Thanks in advance
Yes thats what i do. I will portion them in containers let them cooled before freeze. Saves a lot of time. If i want to braise chicken i will take one portion defrost n Add to chicken. Its so convenient.
this is my first time cooking these marshroom and I've seen other videos where they soaked them in boiling water and then they squeezed while draining them i was wondering do you use cold water instead? and you don't squeezed them, may i ask why? It's because of the recipe?
Yes I used cold water to soak and I did squeeze dry before use. Please watch video till the end. Full written recipe n method in the video’s description box
How long are the mushrooms sauteed? If it's just until they're coated then will that be just a couple of minutes? Also, how long can dried shiitake be kept? I haven't done well with similar recipes although I know that the results can be exquisite. I proved that with my two successes. I'm beginning to think that my using old shiitakes might have been the problem.
Yes saute just a couple of minutes. Dried shiitake mushrooms can be kept for a few months. Depends on how new or old When you bought them. Best to buy When you need them. Thank you for watching. ❤️
I think this is a good way however, the corn starch is an unnecessary step and a waste of corn starch lol. The major key is after soaking and cleaning they have to be covered and braised in seasoned water for at least 1 hour until water level is reduced.
Get rid of dirt and other contaminants. If you dont do this you still have to soak in water with a few changes of water to be ready to cook. No it wont make you sick.
have been preparing my shiitake mushrooms wrong since last september! so glad i saw this. better learning late than never :)
Yes good motto. Thank you for watching ❤️

If you are skeptical you can try both ways and you can come to a conclusion and decide for yourself.

I think if you have smelly and funky shiitake aromas, you shouldnt eat them and should be discarded.

I just tasted two also, hopefully I’ll be fine too. 😅😂

Yes any flour can used to wash
This method for all types of dry mushroom? What abt tea flower mushrooms?
I supposed tea flower is almost the same as shiitake mushroom so this method is applicable for thick mushrooms.
@@1228cooking thks
what bitter taste?
Dried mushrooms will sometimes have a bitter aftertaste when eaten.
Can I also use the mushroom for pasta? I have dried shiitake mushrooms and I am planning to go on what you did in your mushrooms but hesitant if it can also be used for pasta.. Thanks in advance
Of course you can use for pasta. It will be very delicious. You can slice into pieces for pasta.
I tried cooking shiitake once and it tasted very weirdly. By any chance is that the bitter taste you were referring?
I think so. Dried shiitake also cannot be kept for too too long.
You soak them twice , what temperature of water ? Hot ?
Normal water not hot water
@@1228cooking thank you
Measurement of oyster sauce please thanks
You can add 2-3 tbsp oyster sauce….depending on your taste buds ( some oyster sauce are more salty than others )
Why did you cut the stalks? Did you put them in trash can later or you can cook them too?
The mushroom stalks can be use to boil traditional chinese soup in place of mushrooms.
You soaked mushroom initially for 20 mins. Was it in room temperature water or warm water?
Yes room temperature water
@@1228cooking thanks
Can I use potato starch instead of corn?
Yes you can
Can I just simply boil the mushrooms without adding any sugar, salt or oyster sauce?
Yes by all means
Where does mushroom water comes from? Didn't you drained it earlier?
Please watch the video till the end.
That's quite the process for just 1 component...
Haha…not really. Some good Chinese foods need long process and are more complicated.
n mushrooms be cooked ahead and kept in refrigerator for future use?
can i add sea cucumber?
Yes ready to cook with anything you like….canned abalone, fish maw, chicken, sea cucumber or whatever. Can sliced and stirfry with pork or vegetables.
@@1228cooking ok... good... thanks alot chef
@@1228cooking isnt abalone illegal?
No it is not but shark fin is illegal.
I read I could soak them up to 24 hrs, but they smell very strange, was that too long?
No you cannot soak them for too long. If you you are not cooking them that day, they need to go into the refrigerator.
🙏
Tq 🥰🫰
Can I freeze the mushroom for future use? By when hv to finish it.. Tks

It a bit neche for European audience due to corn starch is nonexistent. Does it work with potato starch?
Yes it works with all purpose flour too
Will be good with baby boy too
