- Today my son requested his favorite enchiladas for dinner. I typically use ground beef, but my son loves the ground turkey version even better. You can also make this a great chicken enchiladas recipe as well. This is gonna be good! Be sure to subscribe and click the bell icon for notifications.

⭐️ HOMEMADE ENCHILADA SAUCE 2 WAYS
• Homemade Enchilada sau...
INGREDIENTS
1 lb lean ground meat of choice
2 tsp light chili powder
1/2 tsp ground cumin
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
1/2 tsp salt
pepper to taste
14 to 16 corn tortillas
1/3 cup oil (for softening corn tortillas)
12 oz Colby Jack cheese
ENCHILADA RED SAUCE INGREDIENTS
4 Tbsp cup oil
1/4 cup all-purpose flour
2 Tbsp light chili powder
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
14.5 oz can of chicken broth
*extra water if needed
salt and pepper to taste
**You can substitute the broth with 16 oz of water
and 1 Tbsp chicken bouillon powder

Now at 54yrs old ,divorced after 23yrs of marriage, my advice to you is to please 🙏 enjoy your life 😊 weather single, married,kid's etc. Especially if you're married and have kid's, enjoy your family 👪 my husband came to me oneday and said, "I we don't need a maid or a cook, we I need a companion and bestfriend and the kids need to see you laugh, smile and rest 😀 ". I realized that I was spending so much time being super woman that I missed out on a lot. Now 54 single and alone I so wish I'd let the house and laundry go etc 😒 Enjoy your time now 😊

Go outside into the trees and woods if you can safely, just breathe deeply and feel the earth loving you. The Japanese call it “ Forest bathing”. Gardening helps me also. Best wishes and prayers for you and yours.

I truly enjoy your frugality that does not sacrifice taste and satisfaction. Plus your habit of using just one or two pans when possible.
Patting the next tortilla with the cooked one to absorb the oil is a pro-gamer move.

Actually, you should cook the first one on both sides and then keep putting the new ones underneath until you have a stack. This is the traditional way to use as little precious oil as possible.
Your videos have helped me so much. My mom passed away and I never got to learn the recipes to some of my favorite dinners growing up. Enchiladas seemed so intimidating to me but you make it look so easy! I'm using this recipe for dinner today and I can't wait 😊

I love making enchilada sauce this way! It comes together really quick. My great grandma would make her quick red chile this way; she'd fry the pork, making the roux with the rendered fat, and then season it up similarly to how this was! We ate it with beans, tortillas, and/or rice.

I have never made enchilada sauce from scratch, it always seemed intimidating. I thought I might try it as your video made it seem achievable. My was it delicious!! I didn't realize it was so easy to make such delicious food!

I made enchiladas tonight as well ground beef cheese and onion and a separate dish with cheese and onion I use a big can of chili con carne Tex Mex style the very first time I made these I was 15 and my dad my God rest his soul he fell in love with them he even said these were better than my mom's. 😳 Well ever since that was said I was the cook when it came down to enchiladas lol. He has been gone since 1997 and I miss him so much. I just wished he would have been here when I learned to make menudo he would be in love with that too. Good bless you and your family.

I also learned an easy way to prep tortillas for enchiladas from ATC, you just brush each one with oil, stack them up then wrap them in a clean kitchen towel and microwave for a minute. Works really well if I'm rushed for time :)
Great recipe! I am a type 2 diabetic so, when I make my own sauce, I substitute Carbquik for the flour. I also use low carb flour tortillas . The resulting enchiladas taste great and they don't cause a large spike in my blood sugar.
A few weeks ago, I was given two pounds of ground lamb at the food bank and I used it to make enchiladas. They turned out great. Thanks for the recipe and for all of the enjoyable videos.

@@ilax4318 Sorry, I misspelled it. It's actually spelled "CarbQuik" and it's a low carb flour substitute for Diabetics. I use it for many of my baking dishes. It's widely available and a quality product.

@@godslayer1415 Hey God Slayer, Rest assured that I only cook enchiladas with flour tortillas after the sun goes down and the window shades are fully down and the doors are all double or triple locked.
That way, the food police are extremely unlikely to catch me committing this cardinal sin. What can I say? I am a food criminal. I cook what I want in the way that I want with total disregard for any and all food statutes. I live a life on the edge and I love it. I'm an adrenaline junkie.

These turned out great. I actually started out by making your recipe for "Creamy Chipotle Enchiladas" but I accidentally made too many enchiladas with too little sauce. I figured I might as well try out this sauce recipe as well, and I'm glad I did. Easy and delicious.
I screwed up and forgot to halve my spices, but I think things worked out for the best as the flavor was excellent.

This casserole style with ground beef is how we make enchiladas in my family. And then later i worked in chicken and ground turkey from time to time but beef is always my fav.
My dad came from New Mexico so the dishes on your channel esp enchiladas!!! are part of my heritage. Crazy because im so white i need sunscreen to go to the mailbox.
I have also made my sauce with half broth and half milk which comes out like a spiced country gravy. I cook a jalapeno in the pan with the meat and pull it out before filling the tortillas. I have also used flour tortillas!
Its nice to know there are so many variations on these dishes and i appreciate that you show more than one! Which is best recipe? The one you grew up with. Or the one you figured out and perfected over time.
Are you familiar with el monterrey company near portales new mexico? It is a small family company and they have powdered enchilada sauce. I grew up in iowa and my grandma from portales would send us a case of it every year. When i didnt have access to it i came pretty close to the end result without it. My brother still orders it online for his recipe.

I think seasoning the meat is very important. I've had enchiladas that I've ordered from.some restaurants & they didn't season the meat & it didn't have flavor. I said to myself. U could of made these yourself & they be delicious 😋. I love ❤️ me beef enchiladas 😋

@@heidis4677 I was just guessing. I haven’t handle ground turkey in over 20 years. I have degree in both baking and kitchen management. The joy of my life was teaching 4-H kids for over a period of 22 years.
I didn’t have my hearing aide bc it isn’t working an is in for repair.
IVEBEEN watch her for few months about 23 months or so. I enjoy her cooking and I’ve pick up few ideas. I still love creamy chicken enchiladas using fresh baked chicken off the thighs and drum stick. I’m not a white meat eater of chicken or turkey most of the time the meat is to dry. You cooked it myself. Tell my wife that. I get the kitchen when she isn’t home. Then I baked cookies, make fudge, peanut brittle. More cookies, cakes, petti fore’s myspelling stay in high school. Then I learn the Army way of spelling.
As a new subscriber, I have been sort of binge watching your videos and I have found some variations in the ways you prepare some of your recipes. The variations are very well received because they give the impression that there are many ways to arrive at the same end result. I like that ! 😃 For example, in this recipe, you suggest heating the enchiladas for 30 minutes at 400 degrees covered with foil, and you explain why. In another enchilada recipe, you suggest heating for 20 minutes at 350 degrees while covered and then for 10 minutes uncovered, and you explain why ! It's all good !! Your Carne Guisada recipe will be a game changer for me. In a perfect world, I will become more adept at Burrittos, Huevos Rancheros, etc., and even Fajitas and Nachos ! Thank You !

I love this recipe. I never have enchilada sauce in my pantry, but I do have pretty much all of the spices that you used for this recipe. It looks so delicious. I cannot wait to dry it.
My recipe is similar but I use spicy peppers blended smooth with garlic

I made these enchiladas today and they turned out amazing even with the little mistakes I made here and there. I like my food spicy so I was generous with the hot Tapatio sauce, but these enchiladas are so delicious!
My mother would dip the tortilla in the red sauce before she put the meat in!

My wife use to make enchiladas like this with the exception of using sauce. She would use canned Hormel chili instead. Our kids loved it.

I’m guilty of a very heavy hand with ground spices..I never feel like a half teaspoon of anything has much effect in recipes..I need to try all of your lovely recipes. I tend to use organic flour tortillas for enchiladas with no need to pass through hot oil, and I make a big mix of say cooked shredded chicken, sautéed onions, spices, cheeses, moisten with some sauce or sour cream, mix thoroughly, then stuff, roll, sauce, bake..more ppl should make enchiladas at home..! Brian Lagerstrom has a nice quesadilla recipe, his terrific flour tortilla recipe is great when I use organic sunflower oil in them..
I've been making this recipe for a few months now they're bomb! And cheap to make ground beef is cheaper than other meats. Super delicious and comforting lol perfect for when its chilly

Looks delicious~! I always have to cringe-laugh when people say I add "a little bit of salt"...at what they consider a little. Like she said, a matter of taste. Anyway, for the inexperienced watching this wonderful tutorial, may I suggest that you barely need much oil when pre-cooking your tortillas. Even just spraying the pan is enough. You don't want or need them saturated. I've never made homemade sauce before and she makes this look so easy and tasty. I'm going to try it for sure~!
