- Italian sushi? No, It's called "Pesce Marinato" and it's a favorite Italian seafood dish. The name means "marinated fish" and it's cooked without fire, using vinegar. Interesting, isn't it? You don't even need a stove to make this. We use the acidity of vinegar (the marinade) instead of fire to cook. It's exactly like the way ceviche is cooked, if you are familiar with that, except that ceviche uses lime juice as the acid. It's very healthy, and it's a great way to cook fish because the fish retains its moistness and flavor, where as if you use fire, sometimes you overdo it just a bit... and forget it. Fish kaput. The other advantage to this method is that it is also a kind of "pickling" process. This preserves the fish and gives the dish a long shelf life. In fact, that is probably how this dish originated, along the seaside towns where fish was the main diet, but they needed a simple way to prepare a lot of fish and not let it go to waste afterward. The dish is finished by covering in olive oil, and as long as you keep the fish submerged under the oil, it should keep very well.

Chef Antonino Scarpati, you are so good at what you do. This looks delicious and enticing. I mean, I am a Vegan for 5 months now, but seeing you make this brings back the old Pescetarian (eating seafood/fish) in me back in my Omnivorous (meat, fish/seafood, dairy/cow's-milk, eggs, fruit and vegetables) days. :) I like that I could use white vinegar from a gallon, which saves money in bulk, compared to those special vinegars out there. The way you squeeze lemons on the dish in this video is how I was raised to squeeze lemons back in the Philippines (often using that same sieve strainer you were using). I love that you drenched the whole platter (Pyrex glass baking dish) with olive oil and can still use olive oil in other things, because that is "exactly" what I would do. I do not like throwing away ingredients too soon. I try to reuse them as much as allowable before discarding. I would love to use that olive oil in other things because it would already be infused with seafood flavors along with the lemon juice, lemon zest, and garden herbs you seasoned it with. Maybe, I can do a similar thing like this with vegetables, like "Marinated Vegetables" and use those same herbs, garlic, salt, etc. :)

I did give up most meats but love all from the see and yes a grilled veggies would work wonders like this maybe we can make an episode just about that

No I do not take them off I actually find them entertainment when eating but if you do not like them they are very easy to remove
