    I like to use a can of drained white beans to my cauliflower sauce. I find that it makes it creamy while boosting the protein.

    I love that you cross utilized EVERYTHING you used not just the main ingredients of the video. And i love that you do that in your other videos. I hate when you purchase ingredients for these fancy recipes and then don’t know what to do with the leftovers! Thank you for not promoting wastefulness!

      I think the 3 ingredients were cauliflower, potatos and onions, she just used them as the base for the meals. :) But you are right, I thought like you, too. :D

    This video and her 5 dressings’ video have changed my life. I will prep on Sunday for the week while I do my laundry. I have everything ready and no excuse why I have to drive through somewhere for food because I’m tired. The sauces and cashew cream cheese etc take it over the top for me!!!!! Thank you Nikki!

    You’re amazing Nikki! Thanks so much for this video. I made all three things (potatoes, cauliflower, and pickled onions) and then I made your baked veggie dish, crispy potato wedges and the cauliflower Alfredo and put the onions on a salad. And it was all soooooo good!! My husband was so impressed by the cauliflower dishes and my kids really liked everything too. It can be hard to make meals for a family that are easy, healthy and affordable so I appreciate you sharing these recipes. Love your channel!

    You're a GENIUS Nikki! These recipes all look soooo great! Definitely planning to make that cauliflower & zucchini bake for Easter with my family! I would add garlicky asparagus on the side and a nice salad full of spring veggies..thinking radishes, snap peas and green onions with kale, spinach and arugula - maybe with a lemony vinaigrette? Oooo, the possibilities! Thanks for this video! Always love, love, love when you post and enjoy your style of videos so much! My nephew is allergic to eggs, so there are no egg-containing anything at family suppers, but your deviled 'egg's would be a great addition! Also- so cute! The 'eggs' and you & Nisha! Throwback!

    Normally I watch videos and then never try out the recipes. However, I’m gonna plan my next grocery trip around these, everything looks so appetizing! When you first mentioned the pickled onions, I was thinking, “ok cool but I’m not actually gonna do that”, but after seeing how well they seem to work in your dishes, I’m really excited to try it out.

    you can also chop onions ahead of time and freeze them! it doesnt change thier texture at all and its a great way to ingredient prep

      I used to do this but struggle with keeping the chopped onion from turning into a frozen block. Any idea what I’m doing wrong?

      Corinna Henderson sometimes if the onions are extra juicy that can happen but honestly, i usually just break up the block by twisting my knife in it and that has worked fine for me. Mine hasnt ever frozen as a solid block and i usually even dice them. Another suggestion is maybe use glass freeze ware. Thats what i use...maybe if your using plastic its not as easy to break up the onions?

    I made a batch of pickled onions. They are really good. I add parsley & green onions which i chop & freeze to pretty much everything I eat. Now I will be adding pickled onions also. I used 1/2 white vinegar &1/2 cider vinegar cause I was almost out of cider vinegar

    Or for the pizza use whole wheat tortillas. My kids love it that way. Easier for us to hide the veggies they don't see them. I also blend sometimes braccoli, cauliflower and other veggies add seasons and use like a dip on the tortilla and roll up and perfect for on the go.

    Great ideas!! Love the trick with the potatoes! I always peel and cut them then boil but I definitely will do it your way now..looks much easier. Thanks for all your wonderful videos! 💕

      It's sOoOo much easier and faster! The trick is to let them cool completely before peeling otherwise they might fall apart. Also try not to overcook your potatoes. They should be cooked through but not falling apart 😊

    This was a great video!! You had some great suggestions that I hadn’t heard of before: carrot noodles/strips and batch cauliflower plain. I also think you could use the juice from the marinated onions as a dressing if you mix it up with some tahini! Thanks!

    You like quick...you need an air fryer....makes the best fries, veggies, wraps etc...
    Taking the mashed potatoes add seasonings of choice and make into patties and air fry then make a good sauce...so good.

    I think this is my favourite video of yours! That burger- I have lived for years with needing a creamy element and a pickle element on everything! Seriously- we go through jars of pickled veggies at my house every week. And creamy anything is amazing. Totally love all the tips- and I want to make that casserole stat!

    Try cucumbers AND pickles. The combination is mind blowing. The pickled flavor with the fresh is amazing and reinforces the complex cucumber flavor. like you said with the pickled onion on the burger, but accentuating the cucumber theme .

    Also: mashed potatoes with roughly mashed carrots is super delicious.
    Recipe is the same as in the video but you add pre boiled carrots, around equal parts.
    (Idk if it's a German recipe, but I've been eating it a lot as a child lol)

    Fun fact when you cool potatoes for 24hrs after boiling it lowers their carbs and glycemic index by about 50% making the diabetic friendly. After they’re cooled you can cook them however you like. Of course everyone should research this on their own before trying ❤

    Nikki I loved this! I usually don’t have enough time to meal prep work lunches plus all of dinners so this was such a good idea! I bet this was really helpful to people getting bored with meals too

    Thanks for sharing your recipes. I just made the creamy cauliflower pasta, since I had some of the ingredients on hand. I doubled the recipe because we always depend of leftovers for lunches, thinking it would be enough for half a box a fettuccine (4 servings) but it made enough for a whole box. Just FYI for people cooking for multiple people. I loved the consistency of the sauce, but it was lacking in flavor. I usually make hot for foods recipe and I am happy with the seasoning. I will use the sauce base in the future, but Lauren’s flavors. I also added broccoli and some chickn. Thought I would share some tips.

    For the cauliflower, Dr. Gregor recommends letting your cruciferous vegetables sit after chopping for 15 minutes before steaming. It helps retain a certain enzyme.

    What a great idea! I find it difficult at times to make vegan dishes because of all the prep work time involved....but this is going to help so much. Simple ideas (which I wasn't smart enough to think of!). Thank you! And those sauces look amazing! One question though...I'm not a fan of flavored vinegars...would white vinegar be OK or would it be too strong?
