- Easy 15 minute dinner recipes! Simple veggie tacos, vegan tuna melt, and crispy maple miso tofu. RECIPES BELOW

↠ Simple Veggie Tacos
Makes 4 tacos
1 15oz can tri-blend beans (or black beans)
1.5 tbsp taco seasoning
1 tbsp tomato paste
1/4 cup water
4 tortillas (I prefer flour for this)
toppings:
shredded lettuce
pickled red onions (or jalapeños or cabbage slaw)
avocado
vegan sour cream
cilantro
Rinse and drain the beans, then transfer to a pan over medium high heat. Add water, taco seasoning, and tomato paste. Stir and reduce heat to medium.
Let the beans simmer for 6-7 minutes, stirring occasionally, mashing gently with the back of a wooden spoon.
If the pan gets too dry, add an extra splash of water as needed.
While the beans cook, cut up lettuce and warm tortillas.
When the beans are thickened and warmed through, distribute evenly between tortillas and top with a squeeze of fresh lime juice.
Add desired toppings on top and enjoy!
↠ Vegan Chickpea Tuna Melt
Makes 4 servings
1 15oz can chickpeas, rinsed and drained
1/2 lemon
1 stalk celery, finely chopped
3 tsp sweet pickle relish
5 tbsp garlic hummus
lemon pepper, about a 1/2 tsp or to taste
salt to taste
sourdough bread
spinach or lettuce
shredded vegan cheddar cheese
tomato slices
Rinse and drain chickpeas and pulse in a food processor a few times until coarsely chopped (you can also mash the chickpeas by hand using a fork or potato masher)
Add hummus, celery, relish, lemon, salt, and lemon pepper. Mix well, mashing as you go and set aside.
Toast sourdough, add spinach leaves if desired, and add a generous helping of chickpea "tuna" on top. Top with shredded vegan cheese and tomato slices. Season with black pepper and broil for 2-3 minutes to melt the cheese.
Serve with cucumber spears dressed with fresh lemon, salt, and lemon pepper on the side.
↠ Maple Miso Tofu Recipe
Serves 3
3 tsp miso paste (I use chickpea miso)
1 tsp sesame oil
2.5 tsp maple syrup
2 tbsp dijon mustard
5-6 dashes cayenne pepper
1 block of extra firm tofu
scallions
sesame seeds
Drain water from the tofu and press between a clean kitchen towel to remove excess moisture.
Cut into squares and heat a large non-stick pan to medium high heat.
If needed, add a touch of coconut oil to the pan, and once it's warm add the tofu squares to the pan.
Let sear, without touching or flipping, for 3-4 minutes and then brush on a generous layer of the maple miso sauce.
Flip and brush the other side with a more sauce. Cook for 1-2 minutes and flip one more time. Edges should be golden brown and the sauce should be caramelized.
Transfer to a large plate, then top the crispy tofu with scallions and sesame seeds and serve with extra sauce on the side if desired.
While there tofu cooks, steam bok choy or green veggies of your choice just for 3 minutes, or until bright green and slightly softened. Season with salt or a splash or tamari and serve along side the tofu.
Quick additions would be sliced avocado or a side of quinoa. If making quinoa from scratch, start that before the tofu so it will be ready when the tofu and veggies are done :)
TIP: don’t have time to make the sauce? A store bought teriyaki or bbq sauce would be tasty too! I love the Trader Joe’s Soyaki sauce

I also like making chickpea and avocado mash sandwiches! One can of drained and rinsed chickpeas, 1 ripe avocado, fresh lemon juice to taste (probably around 1/2 a lemon worth), celery salt and black pepper to taste. You make it in a food processor and then serve it on grainy bread with sprouts and tomatoes.
The mock tuna melt was my favorite.

when i saw the bowl full of your tuna salad smoothed over at the top & all ready to put in the fridge for later, i thought WOW!
im gonna make a double (or triple) batch of that tuna salad & its gonna be the base of all kinds of quick-cos-im-zausted-meals & snacks for a typical working week! Jumping out at me first is the idea of filling the gap of celery sticks with this tuna salad ~ instead of nut butters.
ooh and also, adding it to warm pasta! like... shaking half a cup of the tuna salad in a jar with a few big spoonfuls of the hot pasta water...then pouring it out onto my fave spiral noodles?
or just adding half a cup of the tuna salad to my next bowl of hot mac n cheese! yum!
and and instead of storing plain baked potatoes in my sunday night meal prep, i'll scoop out the baked potato centres, then mash them with this tuna salad, & spoon it all back into the spud frames. i'll happily eat a couple of those (cold) for a work lunch, or even better ~ air fry a few for an easy dinner after a long day! thanks so much for the recipes and the inspiration mate. There is something weighing very heavy on my heart and mind and I am wondering if you might be able to give me some advice? I have to take a lot of western medicine because I have a very rare cancer that I got when I was about 10 yrs old I am now 58 yrs old . I am very very fortunate to be alive and am incredibly grateful. I was exposed to Malathion when they sprayed our whole area and they told our parents to keep us in for about 1 hour after they were finished, then we could go play outside, within a year I had the beginnings of a very rare cancer that manifested on my skin.Long story. Bottom line is that I’ve been vegetarian and at various times macrobiotic for about 30yrs. I have been on an awesome journey that has been an amazing gift, unfortunately though I have in the past and do take medication now that I assume is tested or has been tested on animals. It is heartbreaking to think of and almost unbearable for me to be a part of. My compassion and empathy is why I don’t eat animals and all that that entails, but here I am taking medication, it’s so contradictory to who I am, yet I will die without it. My heart aches, my chest literally hurts, I’m soooooooo sad about my choice, I don’t think my life is more important than any other sentient being, I thought, but here I am having made that choice. I’ve been watching your videos for a while now and admire greatly your heart, mind and spirit. If you have any words of wisdom I would be so grateful❤️🙏🏼❤️Kathy

Excellent video & recipe's. It was interesting that you used hummus instead of veganaise instead in the vegan tuna melt. I will definitely try the vegan tuna melt because I haven't eaten tuna since being vegan and hopefully never will.

Yes! I use it all the time! I think I might have even reviewed it back in the day in an old video lol it’s not hard to clean at all if you get in the habit of rinsing it with warm water when you’re done using it before it gets a change to dry and stick on the blades. I just rinse it clean with warm soapy water and it’s good to go !
I love it for chopping things quickly. I’ve also used it to make my quinoa salads with nuts, and herbs, and vegan oatmeal. I’m not sure which video that’s in but I make it a lot. Also for my holiday nut roasts etc, so many things. It’s awesome but note, it is small so I sometimes do larger things in batches but I like that it’s small because I have a small kitchen ☺️

Great recipes- will definitely be trying some! What’s up with the no oil deal? Healthy fats are good and much needed for everyone, especially vegans! And they are absolutely necessary for pregnant and breastfeeding mom and small children (especially for healthy brain development).
Would cucumbers work in place of the celery for the tuna melt? It looks so yummy!!!!
Yeah! it would be different but still tasty! I would try to remove the seeds though so it doesn't make the chickpea tuna too watery 😊
