Hi Nikki, I just made your Lemon Orzo soup, and it's one of the best soup recipes I've ever made! The only difference I made was to use fresh basil instead of dry. This soup is going to definitely be a staple in my house for any season ! Thank you for all your recipes and UA-cam videos, I truly enjoy them. ☺️

Thrifting is fun and great but not everything can be thrifted. If you need new jammies then get them new! It isn't fast fashion so you will have those target jammies for the next 5yrs. Also like you said thrifting has to be attainable if it is cheaper to get basics new (which is where we are at ) then do that. Not everyone has access to a thrift store too. Great video!!

The lemon orzo soup reminds me of a soup I got when I traveled to Italy. It was Lemon, chickpeas and orzo with the addition of rosemary. I'm definitely going to be trying your recipe!

Hi Nikki, I tried your soup today, I put my own twist on it and used the veggies I had, potatoes, onion, sweet green pepper and fresh zucchini and tomatoes from the farmers market. Also instead of using the orzo pasta I ended up using some cooked quinoa which needed to be used up, topped it off with a lot of fresh lemon juice and it was amazing!!! Thank you so much for your easy to follow and adaptable recopies. ps- I personally don't think you need to explain yourself to anyone, you're giving your followers so much joy and providing a service free of charges. I love thrifting, probably 85% of my wardrobe is secondhand, but totally understand why someone wouldn't want to thrift pajamas. For me, it's workout clothes, which I do buy at Walmart. I think your point about taking good care of your clothes is such an important part of sustainability! Air drying clothes is great for fabrics and saves on electricity. Wonderful video as always 💕

Your recipes are always great. I wash the couch cushions every once in a while. Especially when I have a guest sleeping over. I love thrifting. We have access to a lot of goodwills etc here in MD. Most of my clothes & my daughter's clothes are from thrift stores now but we also shop at target. I have some clothes from 20 or so yrs ago that I still wear too lol. Happy Sunday Nikki 🌞

I agree on thrifting! It’s crazy but sometimes you can get exactly what you want, on sale cheaper brand new than getting an inspired version that was thrifted. Totally hear you about the thrifting. I love incorporating thrifted clothes into my lifestyle, but it’s not practical for everything (*ahem*, underwear 😅😂) it’s completely real to say that you buy new clothes! Conscious purchasing is helpful to the bigger picture, too 💚

Thank you so much! And yes it's great in soups and pastas but make sure to cook it first before adding it to the soup. You'll want to brown it in a skillet with some olive oil first and then cut it into bite sized pieces and add it to the soup. It's great though! Hope you enjoy 🤗

Haha I'm either fully "done" or full slob kabob lol My loungewear was full of stains too, so having a few updated pieces has really made me feel better. Basics make it easier to get dressed and put together an outfit but they're so hard to shop for. I want the sparkly things that I'll never wear 😂
Thrifting is getting harder. They charge too much. My local thrift shops got rid of their change rooms during lock down, and did not bring them back. I have a hard time buying clothes if I can't try them on. I am like you, I try to get clothes that last if I can't get them second hand. There are some people who need to back off. It's too hard to be perfect. I have yet to meet anyone that should be judging anyone.
I wonder whether you would consider putting together a selection of pre-existing videos or super easy recipe segments, to help with school lunches? My two High School students have long lunch lines and by the time they get the food, they have to throw it away and return to class. Also vegan options are pretty terrible. I am about to have major surgery and won't be able to cook long and complicated recipes. So if you happen to have some good and quick recipe options already developed, it would be so nice.

I appreciate your balanced approach to sustainability. Too often people make things their god, whether it’s healthy eating, the environment, etc. which can really be distracting to basic enjoyment of life and can come across as really judgemental and haughty in attitude. I like an occasional Target haul and you will get many uses out of the pjs. Like my pastor ways says, it’s about progress, not perfection.
i liked your talk about fashion. im "guilty" of mostly shopping on sites like asos, zalando too, or buying a lot of band merch or clothes from skater brands. the thing is though, i still wear stuff i had 5, 6, 7 years ago. i dont buy masses of clothes every season, i dont buy bulks of the latest trends, i dont buy stuff i only wear once and then immediately sell them on vinted. like i never throw out stuff, i still wear underwear with holes in them, lol! i do wish sustainable brands who also treat their workers well would be easier to get things from though, or thrifting too.

I know it's hard to determine portion sizes just by watching a video, so it might seem like I'm eating small portions but these videos are more about sharing recipe ideas rather than showing the exact amount I eat each day, as that varies based on my needs, so you can't see that I eat large portions and often go back for seconds. It might also surprise you that even just that simple breakfast had well over 15g of protein - the bread has 5g each and with the homemade granola made from old fashioned oats, almond butter, and walnuts, plus the almond butter and banana it's more than 15g. I often pair this meal with a glass of soy milk or pea milk and it goes up to over 20g of protein. I had two big bowls of soup for lunch and a hearty plate full of chicken pot pie made with vegan chicken and lots of veggies. So no, I wasn't low in calories that day. I ate until I was full and satisfied and ate a wide range of nutrient dense foods. I've tracked my nutrients for almost a decade and I've never been low of calories or protein eating while this way. I try to fill my plate with a mix of fiber-rich carbs, protein, and fats and I focus on creating variety in my diet by incorporating lots of different plant foods. Plants have protein and it all adds up to be well over the amount needed in a day. I think educating myself about plant based nutrition and learning how to build a balanced plate was crucial for me, and something I recommend everyone do if you're concerned that you're not getting enough. Finally, I have lots of high protein recipes on my channel and blog if you're interested! Your recipes are always great. I wash the couch cushions every once in a while. Especially when I have a guest sleeping over. I love thrifting. We have access to a lot of goodwills etc here in MD. Most of my clothes & my daughter's clothes are from thrift stores now but we also shop at target. I have some clothes from 20 or so yrs ago that I still wear too lol. Happy Sunday Nikki 🌞

Thank you so much! And yes it's great in soups and pastas but make sure to cook it first before adding it to the soup. You'll want to brown it in a skillet with some olive oil first and then cut it into bite sized pieces and add it to the soup. It's great though! Hope you enjoy 🤗

Haha I'm either fully "done" or full slob kabob lol My loungewear was full of stains too, so having a few updated pieces has really made me feel better. Basics make it easier to get dressed and put together an outfit but they're so hard to shop for. I want the sparkly things that I'll never wear 😂

Thrifting is getting harder. They charge too much. My local thrift shops got rid of their change rooms during lock down, and did not bring them back. I have a hard time buying clothes if I can't try them on. I am like you, I try to get clothes that last if I can't get them second hand. There are some people who need to back off. It's too hard to be perfect. I have yet to meet anyone that should be judging anyone.
I wonder whether you would consider putting together a selection of pre-existing videos or super easy recipe segments, to help with school lunches? My two High School students have long lunch lines and by the time they get the food, they have to throw it away and return to class. Also vegan options are pretty terrible. I am about to have major surgery and won't be able to cook long and complicated recipes. So if you happen to have some good and quick recipe options already developed, it would be so nice.

I appreciate your balanced approach to sustainability. Too often people make things their god, whether it’s healthy eating, the environment, etc. which can really be distracting to basic enjoyment of life and can come across as really judgemental and haughty in attitude. I like an occasional Target haul and you will get many uses out of the pjs. Like my pastor ways says, it’s about progress, not perfection.
i liked your talk about fashion. im "guilty" of mostly shopping on sites like asos, zalando too, or buying a lot of band merch or clothes from skater brands. the thing is though, i still wear stuff i had 5, 6, 7 years ago. i dont buy masses of clothes every season, i dont buy bulks of the latest trends, i dont buy stuff i only wear once and then immediately sell them on vinted. like i never throw out stuff, i still wear underwear with holes in them, lol! i do wish sustainable brands who also treat their workers well would be easier to get things from though, or thrifting too.

Please make high-protein recipes. Your recipes are so low in calories and nutrients... How do you survive eating like that?
I know it's hard to determine portion sizes just by watching a video, so it might seem like I'm eating small portions but these videos are more about sharing recipe ideas rather than showing the exact amount I eat each day, as that varies based on my needs, so you can't see that I eat large portions and often go back for seconds. It might also surprise you that even just that simple breakfast had well over 15g of protein - the bread has 5g each and with the homemade granola made from old fashioned oats, almond butter, and walnuts, plus the almond butter and banana it's more than 15g. I often pair this meal with a glass of soy milk or pea milk and it goes up to over 20g of protein. I had two big bowls of soup for lunch and a hearty plate full of chicken pot pie made with vegan chicken and lots of veggies. So no, I wasn't low in calories that day. I ate until I was full and satisfied and ate a wide range of nutrient dense foods. I've tracked my nutrients for almost a decade and I've never been low of calories or protein eating while this way. I try to fill my plate with a mix of fiber-rich carbs, protein, and fats and I focus on creating variety in my diet by incorporating lots of different plant foods. Plants have protein and it all adds up to be well over the amount needed in a day. I think educating myself about plant based nutrition and learning how to build a balanced plate was crucial for me, and something I recommend everyone do if you're concerned that you're not getting enough.
