- What I eat in a day as a healthy plant-based vegan who LOVES to eat well but also no interest in bland, boring, or time consuming food. If you can relate, these easy recipes are for you! Eat well, nourish your body, treat yourself, and have fun doing it - that's my philosophy :)

1 handful of blueberries, fresh or frozen
1 handful of raspberries, fresh or frozen
the juice of half of an orange
1 tbsp maple syrup (optional)
Note: the oatmeal I made in this video was cooked with almond milk and had apples, cinnamon, and raisins in it. SO good, especially with the berries on top. You can sprinkle on a little granola too if you really want it to taste like pie :)

↠ Peace and Parsnips Corn Bread recipe:
150g rough corn meal
150 g whole wheat flour
2 tsp baking powder
1 tsp salt
1 tbsp nutritional yeast
1 tsp red pepper flakes
250 ml soy or almond milk
1 tbsp brown rice syrup or other sweetener
90g sweet corn
↠ My Modified Version:
2/3 cup cornmeal
2/3 cup spelt flour
1 tp salt
2 tsp chili flakes
2 tsp baking powder
Mix dry ingredients in a bowl until well combined.
1 cup unsweetened almond milk
3 tbsp agave
Add to dry ingredients and mix very very well. If you have a hand mixer, mix for about 1 minute on high speed. This will add air to the batter and make it lighter and fluffier.
Then stir in 1/3 cup corn and transfer to a parchment paper lined loaf pan. Bake at 350 degrees for about 40 minutes or until the center is cooked through :)
My version is slightly sweeter and more fluffy because of the mixing and the first time I made the mistake of adding the corn in with the wet ingredients and not folding it in at the end, which made for a less fluffy cornbread too.

↠ Minimalist Baker Curry Chickpea and Quinoa Burgers: bit.ly/2MenI7C
↠ My Lower Oil Version
1.5 cups chopped potatoes, cut small
1 tbsp curry powder
3-4 grinds of salt and pepper
1 cup cooked quinoa
1 can chickpeas rinsed and drained
1 tbsp tamari
2 tsp curry powder
2/3 cup cashew, soaked
1 small Serrano pepper, deseeded if desired
1 inch piece of ginger, peeled
2-3 cloves of garlic
2 generous tbsp tomato paste
coconut oil
Cook potatoes and quinoa in separate pots until the potatoes are fork tender and the quinoa is fluffy. Let cool.
In the mean time, rinse and drain a can of chickpeas. Transfer to a baking pan and season with tamari and curry powder. Roast at 375 for about 15 minutes.
While those things cook, add soaked cashews, serrano, ginger, and garlic to a food processor and pulse until very fine.
Then drain the potatoes and mash with curry powder, salt, and pepper. Add a few splashes of water to make into an almost smooth mashed potato consistency.
Then add quinoa, cashew mixture, chickpeas, and tomato paste, and mash until well combined but still slightly chunky.
Scoop out mixture using a a large ice cream scoop or 1/3 cup measuring cup like I did to make sure they're all the same size.
Flatten them with your fingers to form patties and drizzle with melted coconut oil.
Bake at 375 for about 30-40 minutes until golden brown and crispy on the outside.

I know the struggle! I've been super busy lately too, and it can be so tempting to just reach for a bag of chips (and trust me, that does happen sometimes) But I always feel so much better when I prioritize eating well. I am so excited that I found this video with the cornbread recipe. Everything else looks amazing as well. I'm from the south originally and the kind if cornbread you make here is wheat I consider "real" cornbread and cornbread is something that I have struggled with as far as finding the perfect recipe to replicate those childhood memories of like chili and cornbread or soup beans and cornbread. Most people I know are used to cornbread tasting more like cake! So I get where you are coming from on that one! Thank you for this!

Have you ever had Romesco sauce? It's SO GOOD! I've been playing around with recipes since tomatoes are in season. I've been making it as a pasta sauce but where I work we sometimes have it seasonally on bruschetta with spicy roasted cauliflower and corn - topped with fresh basil! So so good.

Hi there Nikki...Thank you SO MUCH for ALL of your videos, but ESPECIALLY these types which show such wonderful details of what you do with your eating. You're such a WONDERFUL teacher, seriously, and I'm a (non-career) teacher too, so I KNOW what I'm talking about and MEAN every word I'm saying! I am ALWAYS amazed at your ingenuity and creativity in making these meals not only MUCH healthier, but also DELICIOUS. Just adding a little bit of this & that with the sauces and varying the ingredients to provide different textures and flavors....When we're busy, sometimes it's easy to forget that ALL of that makes such a HUUUGE difference in the enjoyment level, without adding a lot of excess fat (as with the oils and even what I consider WAAAAY too much of even the healthy fats ingredients!). and also without, necessarily, spending a whole lot of time, EVERY TIME we cook. (Like preparing some things ahead and making a lot, to eat through the week, or even freeze for further use later.) I tend to be very creative as well, not only in my day-to-day cooking, but also in my recipe-creation (I'm writing a cookbook!). HOWEVER, we all can learn SO MUCH from each other, and I wanted you to know that I have learned SOOOOOOOO VERY, VERY MUCH, so many tips and tricks from you, so I especially wanted to write you this comment to let you know how MUCH I appreciate you and all that you share with us. You are making a REAL DIFFERENCE in my life, and I know in MANY other people's lives as well! ALSO: One more little thing . . . aside from the flavors & textures and healthiness of these meals you show us, your PRESENTATION is always so artistic and beautiful and ALWAYS makes me DROOOOOL LIKE CRAZY....I wanna make EVERY SINGLE MEAL YOU PREPARE!!.....So THANKS FOR EVERYTHING DARLIN'!!! Well, please understand, too, Nikki, that, yes, I certainly DO enjoy your videos, but it is SO MUCH MORE than just enjoyment. I can go to a movie or a play or to concert or a ball game or wherever and certainly "enjoy" those experiences, thoroughly! But there's a big difference between sheer enjoyment of an experience, and having it be LIFE-ALTERING in some very real ways, even sort of "soul-nourishing". THAT is what you're creating here, at least for me. (And I suspect for MANY of your subscribers!) Beyond the helpful hints and tricks and tips and ideas, YOUR HEART comes through, LOUD & CLEAR, and I think that's RARE in this kind of UA-cam forum. Which is why I said you're a "WONDERFUL teacher"---because, in my mind, TRULY wonderful teachers INSPIRE their students. One very poignant definition for the word "inspire" is, according to one dictionary, "to BREATHE LIFE into something or someone". . . THAT is what you do, Nikki, and I think you do it naturally, almost subconsciously perhaps. You BREATHE LIFE into your "students" out here who are trying so hard to LIVE better, happier, maybe even longer. Forgive me for being so long-winded with these 2 comments, and I PROMISE I won't go on and on about this, but I just wanted you to understand just how genuinely POWERFUL a teacher I believe you are! (And I also wanted you to know that it really IS possible to "teach an old dog new tricks", since I'm an "old fart" at 68, and still learning every single day. Yummy! You're right, drizzling some nut butter on the oats is the best way to do it! I love having some nut butter with every bite!
And this is what I'm doing with other recipes too! I tweak them (or modify them altogether) and make them my own. It's nice to create new things!

Let me find it for you! In the mean time, basically slice red onions very thin and out in a clean container or jar with a lid. Cover with Apple cider vinegar and add a few drops of agave or maple syrup, some sea salt and if you want you add herbs. I love using fresh or dried dill for this 🌱 let it sit overnight and use it on salads or sandwiches through the week! So good
