    I purchased all of your cookbooks.I took them to Office Depot and had them put in three ring binders. By putting them in binders its easier for me to make notes on Post It sticky note pads. I’m diabetic and your cook books have helped my A1C considerably.. It was pricey having them all put in binders but makes turning the pages easier. Also you can’t put a price on health...Thanks for the wonderful video’s!

    THIS is the best keto pancake recipe! Look no further! I would say, as close to "regular" pancakes as you could get with almond flour. Not dense like other almond flour recipes, but definitely more filling and satisfying than your standard white (junk) flour recipe.
    My son liked these as well, which is awesome. Thank you, Carolyn! Another fantastic recipe! 💯👍

    After seeing this it gave me another reason for needing a blendtec for Mother’s Day. It arrived early and I just made these and WOW!! Huge props go out to you for creating something so amazingly perfect!! This is the most delicious pancake recipe ever (keto and non)!!! I’ve tried multiple recipes and the kids would never take more than a bite because it was too gritty! These are not gritty at all and so fluffy! My kids ate at least 5 and asked if we could have them every weekend 🥰 I’m so thankful for all your recipes and videos!! They’ve helped tremendously with this new keto lifestyle that I’ve been on for about a year now!

    Oh goodness Ive got to look this new book of yours up. U said u have 5 books,,,I only have 2 of those 5,,so I've got to get to searching for your others for you are truly a master with keto and lowcarb. I watch alot of keto utubers,,,and you are up there with my top five!! I love u all. This is a life changing experience. Been almost a year and a half for me being keto and I'm so thankful!! Great utubers and bloggers like yourself have truly inspired me. I love Lisa at low carb yum,,Kristie Sullivan and CJs kitchen,you and several others. I'm so grateful and thankful to you all.     Not only do these pancakes look delicious, the way you flipped the pancakes looks like a game changer. When I make any ketofied pancakes, the hardest part is always flipping them without destroying them. I always have difficulty getting the spatula under the entire pancake (like I usually do with conventional pancakes) because they are so delicate and they break apart. Your method of wiggling the spatula just under the edge and then lifting the pancake and flipping from there, looks like the trick to successfully cooking them without destroying them! Thank you! I can’t wait to try this recipe and method. 😊💕

      You're welcome! Glad I was able to show you how. Gluten free things are always more fragile and delicate, because gluten is such a key "glue" for conventional foods.

    Just made a batch of your pancakes,, had to use greek yogurt,,also made your strawberry jam !!!WOW ! love the pancakes light and fluffy but texture..the jam delyicious !     I made these today in pancakes and waffles. I didn't have blanched almond flour.. I used almond flour by Blue Diamond. My pancakes were very dry and dense. I added more avocado oil to mixture and used the rest to make waffles. They turned out a little better but still dense and dry. Light and fluffy they weren't. But I have faith I will master it with a little practice. :) The taste was very good! Thank you for this recipe.

      If you’re using natural almond flour, that still has the skins, these pancakes are never gonna be light and fluffy. Unfortunately, the skin of the almond makes them heavier.

    Tried this recipe twice, thinking it was my mistake the first time. I find them really difficult to swallow. When I get one down it feels like a lead ball in my stomach. No, not an allergic response. I enjoy many of your other almond flour recipes, especially the zucchini muffins.

    Ugh. I don't know what I did wrong but mine turned out runny and flat as a flitter. The taste was what I expected but not the appearance. I added a tablespoon of bovine gelatin and 1/4 cup of water + 1 tspn of baking powder. Woohoo, they rose up and were solid pancakes.
    I had to print out this recipe because I don't have your Breakfast Recipe Book so I need to get that. Thanks, Carolyn, for all the recipes. Tonight, Ginger Molasses Cookies!

      Well I have a butter syrup in the book that these pancakes come from. But I really like the ones made with allulose - which unfortunately I don't believe are available in Canada.

      They don't have to be room temp because you aren't creaming butter, and yes, a handheld should work!

      I recently tried an 'award winning' keto pancake recipe and it was so dry! I had a hard time eating it. I'm just wondering if adding cream cheese would've helped with the dryness?
      I'm not on a keto diet but I am trying to watch my sugar (the carbs are just a bonus), so why not try keto recipes?
      I think you've nailed it here by mixing it in a blender. I will definitely be giving it a try.

    How equivalent to real sugar is the sweetener? Basically I have sucralose, but not the regular off the shelf splenda and copies, but the actual pure sucralose that doesn't have any dextrose or maltodextrin. Information about amounts are pretty scarce since everyone seems to be afraid of Sucralose. Also does it need the volume since only a tiny bit of sucralose is super sweet?

      Yes, I know what you're saying. I think you probably have a liquid form? Either way... Swerve measures like sugar so it should be pretty easy to adjust and this recipe doesn't need the bulk for consistency. Pancakes aren't meant to be very sweet as it is, so you would add only a tiny amount unless you like yours sweeter.

    These are really good. Have you made a Tres Leches Cake? This batter would be good for the base cake. I did use olive oil rather than avocado oil, so I don't know if that changes the taste any.

      I do have a Tres Leches cake but it is coming out in my Ultimate Guide to Keto Baking which is due out in December.
      I think olive oil could change the taste a little but as long as you liked it!

    Looks yum will balance my ratio of the flour to be almond and coconut flour for a more all purpose flour feel. I wanted to ask if you have the metrics measurement it’s always more accurate for me not to mess of the recipe especially since I need it to calculate what ratio of the almond flour to make coconut flour

    I really love this recipe! Do you have any recommendations with regards to freezing the pancakes? I am usually in a rush during the week and often batch bake and freeze so I have enough keto foods to last me through the week.

      Flash freeze first by laying out on a baking sheet and putting in the freezer. This way they won't stick together. once they are solid, you can pop them into any old container you like.

    Thank you. I am going to try this. But first I have to find a good sugar free syrup. I have spent a ton and have literally thrown them all out due to them tasting just awful. I will order your new book for your syrup recipe. I have all your others and really love them!! Never change the format or paper quality. They are a joy to use!! Also I love seeing you use your BlendTec. I enjoy mine but don't use it enough.

      Have you tried All-U-Lose (made with allulose... smart name!)? It's the only syrup that tastes any good to me. Sadly, I can't really eat it because allulose makes me sick.

      @@AllDayIDreamAboutFood No, I have not tried that one. Thanks for the tip! I have not used allulose (yes, that is a clever name!) so I don't know if it will sit well with me either. I have tried Lankanto maple syrup and Birch Benders as two examples that really stick out in my mind. They were both extremely bad - like toxic waste or something. I think I could do FAR better with my own concoction of water, xanthan gum, maple extract, butter and xylitol. I also liked your idea of the maple bacon butter that I will try from your new book. Just put it in my Amazon cart!

      @@AllDayIDreamAboutFood Oh my. Just saw the praline pecan sauce. I can tell I will like that! I can think of all sorts of uses for that along with pancake syrup. Like over an ounce or two of cream cheese as a quick but delicious sweet treat after dinner. I'm looking forward to trying both the pancakes and the sauce. Thank you so much.     I wonder if they have that "stale bread" after-taste like most foods made with almond flour? And the texture is always thick and dry like cornbread.

    I did these as waffles, only two things, I didn't have avacado oil so I used coconut oil. It initially looked too thick and I added a little extra almond milk. They came out not bad, probably my most successful keto dish. I think my waffle maker is a little under powered, because I have to leave them in quite a long time, and then by that time the outside taste like burnt almonds (not really burnt, but a hint), and they come out pretty dry. Any suggestions?

      Is it one of the deep Belgian style waffle makers? Almond flour things don't do very well in those... I recommend taking them out early and popping them in a 300ºF oven to finish cooking...

    I have tried eating keto a couple times but am allergic to all eggs. Most keto recipes call for lots of eggs. I have heard that applause and pumpkin can be used as egg replacement. I Have not tried that yet. I wonder if you have tried any of your recipes with these or other egg replacement products successfully??

    She says to put in 2 1/2 cups almond flour!! Don't do this it doesn't work! I should have looked closer and saw she said 2 1/2 cups but only put in 1 cup. I will try this again!!

    Ok she said “you’re going to need a cup of oil” so I wrote 1 cup oil, and didn’t hear her say “ok a quarter cup of oil”. Ruined batch.

      She said both. At the end when she is putting in the oil she says 1/4 cup, I caught the 1/4 cup.

    just cooked these, stuck to your recipe. I will use less Almond flour next time as a bit too thick for my liking, but they taste lovely. thanks
