    Mix the Cottage Cheese:

    You can seperate yolks from white by "pouring" the yolks back and forth between the broken egg shells while the white drips into your bowl. And beating egg whites don't get better or more stiff by continuing to beat them. Once they reach the point of stiff peaks, stop. If you continue to beat them they fall and will become liquidy.

    Cooking Hints:
    1) Crack eggs on a flat surface. When you crack eggs on the side of a bowl, it’s pushing the egg shell into the egg and then you get egg shells in the bowl.
    2) Salts are different from each other. Sea salt is different than the stuff in the blue canister. The density of the salts are different and you may have a saltier result or it might have deflated your batter.

    Please do not Crack eggs on bowl rims. More destroyed yolks and shell possible. Just crack on the counter. I enjoy your trying new things. Glad you like to cook.

      Dave, the one thing that you can do to keep the parchment paper in place is to throw some water droplets on the cookie sheet first and then the parchment paper will stay in place. I said droplets but you got to use a little more than that. Another way to separate your egg yolk from your egg white is to use a 2 liter bottle or 20 oz bottle or whatever some kind of a plastic bottle like that and just squeeze it with your hand and then put it up to the egg yolk and suck it right into the bottle.     I separate eggs using my fingers. With clean hands, I scoop my fingers under the yolk then the whites fall out between my fingers into the second bowl. Messy, but I have never broken a yolk.

    Hey, Dave. I found this mat on Amazon. It’s for mixers. One side is smooth to scoot your mixer easily, the other is sticky to keep it from moving. It’s awesome! I also like the cord wrap thing we stuck in the back to keep cord out of way. Also, found on Amazon. 😁

    Ok so now that I’ve watched the whole video 😅 I wanna tell you the first batch turned out like it did because your fluffy mixture sat too long. When I’ve made lemon meringue for the second time I got distracted and let it sit and it settled and went back to liquid form almost 😅. So glad these turned out to where you’re gonna try the recipe again. I think I will too

    Get the right whisk attachment and watch a video on how to fold your egg whites then it will turn out. You already mentioned you’ll do each recipe separately and read recipes ahead of time. Next time should come out great!! thanks for showing the real attempt and not cutting it out. I made my first cottage cheese. Flatbread and it was solid brown on the top. My oven has a confection button that I use for everything. And I think that was a no-no, I thinking that’s what made mine turn so brown on edible.. lol. I love watching your videos!!

    You had some yolk in the whites at the very beginning, so they were never going to reach stiff peaks. Any amount of fat in whites, and it will not turn out, and they were deflating as they were sitting, and waiting…then your “folding technique”…well there’s that.🤣🤣Also if you don’t drop the eggs from so high, you have a better chance of not breaking the yolks.👍👍

    Watching some tutorials on folding will help you get the motion down. It is very gently moving the contents from the bottom to top in a vertical circular motion and when you reach the top you "cut" down the center to the bottom again, all while rotating the bowl each time. Makes almost no sense unless you can watch it being done. 😉

    Maybe you can google how to separate eggs through your hands. It’s really easy! I do it all the time.
    Also- I have the Commercial Series 8 Quart Kitchenaid and the cord is super thick and red- for commercial kitchens.
    I wonder if you have any Kitchenaid Attachments in your storage space. Just a suggestion…
    I will be sure to try this recipe.

    Assuming the dough viscosity/texture/consistency is an issue in the future: Once you have the dough ready for the oven chill it in the freezer [not fully frozen but close to it] before you bake it for a chance to give them a uniform shape and put an egg wash on top so the outer crust looks more like the thumbail.

    add a spritz of oil to your pan and then put the parchment paper on it. The oil will hold the paper to the pan....

    Dave beat the yolks until they as thick first or while you are whisking the egg whites, do not get egg yolk in the egg whites! Have every thing ready before you start. Fold in dry ingredients( the salt can go into the egg whites as beating.) mix in half of egg whites gently then fold in the rest Have your baking trays ready first! I do hope this helps you! In the past I have grated lemon zest and a little sweetener a couple of drops lemon extract they make a nice dessert with a squirt of cream ❤

    Watching this makes me feel like a triple Michelin star chef - better make that a 2.5 star chef since my knife skills aren't the greatest. Had to speed this video up to prevent falling a sleep face down in the beaten egg whites.
