I love this dish. I usually grill some fish on the pan first (render the fat) and proceed to cooking the zucchini/garlic/lemmon.

Yum! This looks delicious! I make a version of spaghetti alla nerro (spaghetti with zucchini) using chickpea pasta instead of spaghetti . The zucchini is deep fried then left overnight to firm up, It has a lovely creamy sauce made from an emulsion of cheeses similar to how cacio e pepe is made. I’ll try your lemon version next week . Thanks!
