The Spicy Zucchini Pasta I Can't Stop Eating

  • This spicy roasted zucchini pasta with Calabrian chili paste, mozzarella, Pecorino Romano, and fresh herbs in a simple garlicky tomato sauce is so good and so easy! It is very similar to the pasta alla Siciliana that we made a few episodes ago. Watch that one too! I hope you enjoy this spicy roasted zucchini pasta.

    SPICY ROASTED ZUCCHINI PASTA
    INGREDIENTS
    1 pound pasta - ziti, rigatoni, penne, etc
    1/2 cup olive oil
    1 28 ounce can high quality plum tomatoes
    5 medium to small zucchini - seeds scooped out and cut into half moons
    1 medium onion, diced
    4 Cloves of garlic - sliced
    2 cups smoked mozzarella - cubed
    ¼ cup Pecorino Romano cheese - grated
    ¼ cup packed basil leaves - chopped
    ¼ cup parsley - minced
    1 teaspoon Calabrian chili paste - plus more to taste
    Salt and pepper - to taste
    1.Toss zucchini with a 1/4 cup of olive oil and spread out on a baking sheet. Sprinkle with salt and pepper and roast zucchini for 20-25 minutes at 450f on lowest oven rack or until well browned.
    2. Meanwhile, bring a large pot of salted water (2 tablespoons kosher salt) to boil.
    3. In a very large pan saute the onions in a ¼ cup of olive oil over medium-low heat until translucent (about 3- 5 minutes) then add the garlic and cook for 2 minutes more until golden. Add the Calabrian chili paste into the oil and cook for 30 more seconds.
    4.Add the tomatoes to the pan and bring sauce to a simmer.
    5. While the sauce is simmering, cook the pasta until al dente.
    6.Taste test the sauce and adjust salt and pepper to taste. Add the pasta and roasted zucchini to the sauce and toss to coat. Cook for 60 seconds, then turn off the heat. If the pasta is too dry add a splash of pasta water. Add the basil and Pecorino Romano cheese and mix together.
    7.Add the cubed mozzarella cheese. Toss once more and serve immediately with more Pecorino Romano and Calabrian chili paste on the side. Enjoy!

    Made this using eggplant instead . It was so easy and fabulous. I always go to sip and feast when I have a urge for pasta. And that’s what I do…SIP AND FEAST. thanks for your easy to follow tutorials. So good.

    Literally SO GOOD! My boyfriend accidentally bought whole plum tomato’s in sauce but I didn’t give up & got tomato sauce. Worth it. I will be making this more! I added vegan chorizo too

    I just made this for the first time, just sauteing them in olive oil. And o boy, i've been missing out on Zukes since growing up in Buffalo's West Side, which was a very Italian area back then? Now I get the feeding frenzy shot at the start of this. Thanks for this one folks, and can I go back for seconds now?

    This looks delicious! Im big fan of hiding anchovy in things deliberately for feeding people who claim they hate them! Ive just had a great early xmas gift of a bunch of cheese & charcuterie from a fancy place in southern england, all of it locally made.., theres a big chunk of nduja, im going to try this pasta using that, see how it turns out!

    Great recipe! I made this tonight and it's fantastic. I enjoy your videos very much. Mine wasn't overly spicy but I also used a different chili paste (I couldn't find Calabrian and already had a Korean chili paste on hand). Keep up the great work.

    YUM!!!!!! I am a HUGE zuke fan so I'll do this one soon!!! I'll sub some Sambal Oelek chil paste since that is what I have on hand. What a great video!! BTW, when I clean out a zuke like that, I save all the insides along with ALL my veg scraps in the freezer and use them to make veg or chicken stock. I try not to waste anything.

    Made this tonight… it was so delicious. Roasting the zucchini makes it kind of sweet. I didn’t have the smoked mozzarella so I used regular and it was still very good. I’ll be making this regularly!

    I just made this and it was quite good! I couldn't find the hot pepper paste so I used some Lee Kum Ki chili sauce in it... and some red pepper flakes. I also did go for the anchovies. Not too bad. I would have liked my sauce a little spicier - I think I was too careful. The zuchinni was suprisingly sweet. So it can definitely take the heat. Would you call this an Arrabiatta? Mine was probably Arrabi-maybe. Next time I will try the right pepper sauce if I can find it. Also I might use a different garlic. I used elephant and maybe purple would have been better. But overall yummy. Thanks for another very good recipe!

    I just made this recipe for the family and it came out great. I need to get the zucchinis right though, a little mushy. But everything else came out great. Thanks for the recipe

      The zucchini can be a little tricky. High heat and 20-25 minutes seems to do the trick. Just fold it in at the end to avoid crushing it. Glad you enjoyed it!

    I've watched about a dozen of your videos and they are outstanding. When you add the mozzarella at the end of this video is it supposed to be melted or just eating in chunks? Again, great videos and you have great charisma.

    Hi, I notice a lot of cooks/chef’s use parchment paper when roasting veg. Is this just for clean up purposes or does it make a better job of roasting? Thanks

      It doesn't really help with roasting color, but it's great for cleanup and even handling. I was able to just grab the whole parchment paper and slide the zucchini in at the end.

      Actually roasting on your roasting pan and getting it dark makes for better roasting! The problem is people like to scrub the dark off to “clean” it. Also make sure to use diff ones for baking sweets
