- We challenged chefs of three different skill levels - amateur Emily, home cook Beth, and professional chef Penny from the Institute of Culinary Education - to bake us a fresh apple pie. After each of them had presented their creation, we asked food scientist Rose to review their work. Which pie is the apple of your eye?

I love this trio, it’s like: EMILY - cooking with your sister. BETH - cooking with your gramma. PENNY - cooking with your drunk aunt who’s actually a great cook but puts liquor in everything including herself while cooking hahaha

I love how this series doesn’t bash down or criticize anyone. It shows us three different ways to make a recipe and then explains the science behind them and why doing certain things work. It’s like “here’s the basic recipe for an apple pie, and here’s what you can do to take it up a notch and why it works.”

Level 4 Chef: Aiden added ketchup to the top of his pie. Tomatoes contain a wide culture of acids which give it a bright flavour. The spices and sugars added to the sauce are going to give this topping a bright and tangy quality.
I actually prefer to leave the peel on. I just really enjoy the mix of color it brings, as well as texture. Also, the booze in the crust is just such a great technique. I tried using bourbon the other day and it was soooooo lovely.
Frank: "Okay, so the first thing we want to do is get some Gala apple seeds. Then, while we're looking for a field to plant them in, we can find our choice of cow for the icecream."

Good episode. Beth might be my favorite level 2 from a culinary stand point. There are more entertaining level 2 chefs, but she brings the real experienced home chef recipes. A lot of the time, my recipes are closer to hers than any of the other chefs.

My grandma passed away a few years ago. She really resembles Beth physically and in her mannerisms so I really enjoy watching Beth bake and cook, kinda makes me feel nostalgic

@@chriswhinery925 I worked in a restaurant in my early 20s and I remember someone ordering cheese on the side of their pie and it was the first time I had ever seen this. They were American and it blew my mind.
@@chefmayi70 I don't know about on the side but I will say that cheddar cheese melted on top of the pie is where it's at. I don't know where the concepts comes from originally... I got it from my dad who got it from his dad... But cheddar and apple pie are phenomenal together and everyone should try it at least once.
Do make sure you melt the cheese on top though, I've had people just stick a slab right from the fridge on it and then wonder what all the fuss is about. Cold cheese on pie probably wouldn't be so good but melted on is fantastic.
