4 Levels of Meatloaf: Amateur to Food Scientist | Epicurious
Вставка
- Опубліковано 16 лют 2021
- We challenged chefs of three different skill levels - amateur Emily, home cook Lorenzo, and professional chef Chris Scott from the Institute of Culinary Education - to make us their favorite meatloaf recipe. Once each of them had presented their take on this family pleasing classic, we asked food scientist Rose to weigh-in on their choices. So what do you think, want to try them all? Even two out of three ain't bad when it comes to meatloaf.

yesss
emily should make Heinz her brand ambassador.
Lol yes
@@katanafourzeronine that’s almost as funny as the actual joke!
Ketchup in meatloaf...really? Use a nice tomato sauce instead.
This level 3 chef seems like that one fun teacher from school
You can tell he's a teacher, he tells you what he's gonna do and then explains what he's doing as he does it.
He looks like an incredible lay too.
He says he’s been doing this for 30 years…Mans look 30

Chris is so underrated, wanna see him more frequently!
His voice is so... juicy and meaty!
I remember him from Top Chef, he was cool most of the time but he would get drunk and start fights sometimes.
Nah Frank my Boi
A bit too cocky compared to the other level 3 chefs. It’s probably why they don’t him so much.

Yeah
Yeah what a COINCIDENCE
Healthy friendship
is no one gonna talk about the AMAZING garlic mincing hack?!
Things..I’m trying
One of the things I love most about these videos is all the little hacks like that you learn. It isn't just the level 3s either... I've picked up little tips from every level
Great idea. Does any one else feel the professional chief has forgotten what meat loaf is?
Yeessss.... the garlic mincing hack - that's tertiary education on UA-cam 👩🎓
Chris' meatloaf is the recipe in all my cookbooks... Only with some sass - the vodka to stop the gluten from getting chewy... genius!!!
@@lindencamelback2305 i mean he is making a meat loaf Wellington. So technically there is meat loaf in it, it’s just strange

Emily: Im not going of script there is ketchup in the loaf.
Also emily: starts to drown raw onions in ketchup
You know that tasted like nothing but onion, ketchup and cremated meat. Because that's damn near all there was
Emily: Let's bake a meatloaf!
Lorenzo: Let's bake egg roll filling!
Chris: Let's bake a post-it.

I like that Lorenzo has meat as a topping for meat
Ayyyy our boi is back
Yeah really, my favorite food is meat.
Was looking for this comment XD
Emily: grabs ketchup

Most meatloaf recipes have ketchup
😂 Mrs Ketchup
@@andrewthezeppo Oddly, I grew up with meatloafs that used mushroom gravy rather than ketchup. My own meatloaf doesn't use ketchup either.
I really want Epicurious to do 4 Levels of Huevos Rancheros with Emily, Lorenzo, and Saúl.
I never thought I'd see the day where Emily's the only one who actually made what they were supposed to..
Honestly they all looked like something I'd like to try but Emily's was the only one that seemed like a meatloaf.

Only so many things you can do with meatloaf to make it impressive, for the simpler dishes I don’t mind chefs going outside the box to show off techniques
@@kristinal-ghoul2680 I'm trying it tho with my normal meatloaf -- cause i love piecrust and i think this would make a cool combo.
Lorenzo's is a pork and shrimp loaf.

Level three: probably amazing but also probably $500
out of this world? it is very much in this world. sadly.
i love how emily and lorenzo just talk about each other and rose like they’re all old friends
When I saw the title and thumbnail, I knew exactly who Level 1 would be.
Facts!
Emily and Lorenzo in one video. My day just got better
I never knew you could put Sticky Notes in the oven for over an hour at such a high temp!!!
Paper doesn’t burn until you reach a temperature of like 451 Fahrenheit so for recipes like this it’s ok!
It wont burn the paper, i've tried it twice at 172°C/350°F
I love the way chef Chris cookes
Man he's talented
Toques off to Rose for pointing out the make or break techniques for something as simple as meatloaf, to Emily for her tribute to Meatloaf (unsurprising that she’s a comedienne), to Lorenzo for being himself and to Chris for truly bringing his “A” game.
I love Lorenzo
Great video again .But apart from wonderful chefs and amazing Rose, I would like to praise editor/editing team - really great cuts as always and I love those double camera/splitscreen views! Keep up great work and stay all safe!
I love Emily! Her uniqueness is very refreshing. Seeing her is always a delight.

Was hoping for Frank. Got Chris.
Absolutely no disappointment here.

I think Frank would have understood the assignment and done a classic meatloaf.
More Chris, please! He's super-informative.
Emily’s classic call about nothing bad happening on medium except the TV show was amazing. I love Emily!
That minced garlic trick is amazing. I would never have thought of that!!! Thank you!
Lorenzo isnt even capable of a smart hack like that. Lorenzo is a hack.
@@cliquemate6453Touch grass.
Absolutely here for Chris's energy.
What energy
This episode was perfect. A clear division in the skill level required to make each level. Emily perfect as always don't change a thing, Lorenzo's food looked delicious and I want to cook with him. When Chris said he was making a meatloaf wellington I scoffed and said "Are you making your own puff pastry?" and then he comes out with rough puff recipe, the great vodka tip, grinds his own meat using a wonderful combination of flavors and then when I'm impressed enough he pulls out quail eggs and a terrine mold. Simply amazing, the editing at the end of the episode felt a little off though Rose felt like she was about to get cut off at the end and her segment is where all the magic is.
Highly skilled chefs can make an actual meatloaf and do make them with simpler ingredients and less fuss. What Chris made is not even close to being a meatloaf.
You can add to a classic, but what Chris is doing is overcomplicating a classic.
LOVE CHRIS! Dude is straight up chilling! Bring him back!!!
"I would do anything for loaf."
The fact that it references a song by an artist called Meat Loaf makes it perfect to me.
came to the comments for this.
Emily referencing "Medium" took me straight back to middle school. Used to watch the show on TiVo between school and dinner time.
Seriously. That garlic grating on your fork tip? Best thing I've ever gotten out of a YT video, ever. Thank you, Chris.
I was like, "they better have Emily.... oh there she is, PERFECT!!!"
And she better be ketchup'ing her loaf.
Emily is really in her element lmao
Just made meatloaf and it wasn't to shabby lol
Did my man Chris say SPRUCE tree from the backyard? LET ME FIND OUT
He said spruce but thats a Hemlock branch
@@jadejanitor Isn't hemlock poisonous?!
@@benvoliothefirst No Sorry. I meant Eastern Hemlock, a conifer, Thuja Canadensis. There is posionous hemlock but its more like a small flowering plant, looks like Wild Carrot.
@@jadejanitor Thanks for giving me some learnin' to do!
Yep, yard waste in the farce wellington.
Emily needs her own show with jokes like that!
Emily saying "don't make it weird" about Katsup feels like an invitation to make it weird! Ha
Christopher feels like the combination of Frank, "I grew this lamb myself" and Penny's "alcohol good in everything" and then he goes and pulls out the spruce from his back yard! This is a great L3!
Also love to Lorenzo, because he's all cheer!
that fork tip? omg life changing! I will never cut my garlic with a knife ever again.
i use a cheese grater! i have longer acrylics so mincing is super hard, grater trick is perfect 😇
All I can say... is all three of them made a meatloaf fancier than I

Meat in the shape of a loaf= meatloaf
When Level 1 Emily and Level 2 Lorenzo introduced themselves, I kinda anticipated that Level 3 would be Frank 😂😂😂
Emily's "I Would Do Anything For Loaf" is Joke of the Year.
I need Emily and Lorzeno in the same video?! Life is good!
that level 3 meatloaf is too beautiful to eat
ive gotta say Lorenzo absolutely has an eye for plating, every video that hes been in his presentation is beautiful!
Emily singing to her loaf is the best thing I've seen in a long time
Well Chris, you made pâté en croûte but it looked fantastic
God bless Emily and her ketchup.
“I would do anything for loaf” A double meatloaf pun. I love it!
i swear, emily is the best character, she single handedly carries this series
With Frank this could be a dream team.
I really enjoy Chef three voice and recipe, Frank is cool, but now I have a new crush

Chris' meatloaf Wellington looks so good
I want a Lorenzo playlist of his Philippino take on everything he made with you’ll please and thank you :)
i was waiting for lorenzo to come out and say "Hi i'm a dad and i got the MEAT"
ps: i've never had meatloaf but it looks, interesting. mexican moms don't have meatloaf recipes lol in my experience.
Bad meatloaf is joked about in sitcoms and cartoons. Good meatloaf is a treat.
It seems like a very simple dish to make, but it's super easy to really mess it up.
Gotchu, hermano/a. I am mexican. Here's how I make my stuffed meatloaf:
1 lb of spicy ground pork
1 lb of lean ground beef
1 lb of sliced ham
1 small package of mozzarella cheese (I have no idea how much)
2 eggs
1 medium jar of spicy, chunky salsa (the more stuff in the salsa, the better)
1 sleeve of Saltine crackers
Pepper
Ketchup
In a large bowl, mix pork, beef, eggs, half the jar of salsa, pepper, and half the sleeve of (crushed) saltine crackers. Mix well. You want the mixture to be moist, but not falling apart. Add more salsa for moisture or crackers to firm it up as necessary. Flatten mixture out evenly in the bowl, make a line down the 40/60 line (like Lorenzo in the video).
Preheat oven to 400°F. On a broiler or pan, take the 40% portion of the meat mixture and create a flat 1" oval. In the middle, layer the ham and cheese so there is minimum 1" from the edges of the meatloaf. I usually do 4 or 5 layers. Use the remaining 60% meat mixture to cover the entire concoction; you'll want to take small handfuls and flatten them out before building your exterior. MAKE SURE there are no holes or the cheese will melt out during cooking. Cook for one hour, take out and baste with ketchup, cook for 10-15 more minutes.
Sometimes I throw in stuff like Cilantro and corn. Hope this helps!!
@@Talley. I'm definitely gonna try this
I see Emily, I click View, Like, Comment & Share. I 💟 her so much 😍
Weird with love but other ok
you know you've gone too deep into this series when you recognize the chefs by their hands at the beginning
the thingies on a fork: "tines" *duly noted*
Looks like Emily is growing. Cast iron skillet 🚬😎
a lot of people make meatloaf with ketchup 🤭 I think meatloaf with gravy takes it to another level . My dad used to be a chef and he cooks so gooddd.
I never liked the gravy version, but I've never had it made properly either.
I've never tried gravy... I typically use bbq sauce-but I may try gravy next time!
Luckyyyy
I'd certainly try it, but it makes me think of Salisbury Steak... loaf.
I do both. It depends on what I am serving and if I want a sandwich the next day. However, I don’t use bread or eggs in my meatloaf.
Thats a great terrine mold Chris has there, also great idea to do it in a wellington
Yay! I love to see Chris! I’ve been a fan since seeing him on Top Chef
I can't wait for the moment Emily becomes a Level 3 chef.
Specializing in Ketchup.
Chris's voice and the way he talks remind me of Obama.
das racist
he sounds so professional
@@kiro9291 it’s not
I always appreciate the variety of techniques and willingness to go the extra mile put forth by the level 3 chefs. Additionally, the level 1 chefs always come off as innocent, pure and humble. They always sort of take shortcuts but keep the dishes as close to the transitional as they could. Too often I feel the level 2 chefs come as arrogant. Many times they try to be cute by adding their own twists that from my alter the dish in an unnecessary way that takes away from what the dish is supposed to be.
Yayy the best trio! Loved Chris, Emily and Lorenzo are classic at this point
Finally, a recipe that calls for ketchup. Have at it Emily
Now I want meatloaf- at 10 in the morning 😂🤤
Me at 10 in the evening
me at 5 in the morning
Me at 3 in the afternoon
I love it when the level 3's acknowledge that they're going miles above the guidelines
I made Meat Loaf Level 3. Everyone in my family loved it. Mushroom deluxe make the meat moist, outside is crunchy. The only thing I did not make is the sauce. The main reasons were too expensive and I don't live near the forest to get Spruce leaf. Anw, worth it to try.
The last chef never says they are a *Level Three* chef in the introductions😂
30 years is beyond level three, lol.

@@beccayates3718 good idea! I’ve never thought about it 🤔 I absolutely might because I love these videos 😂
Literally when I hear it I’m like “... that’s not what they asked”
Is no one gonna talk about Emily killing that cast iron pan with tomato ketchup 😶
It only really effects the coating if left on the pan for a long time.
literally love every chef who appears on 4 levels but i think these 3 chefs are my fav ❤️🥰
Level 1: made a meatloaf
Level 2: made a meatloaf shaped wrapperless eggroll
Level 3: Went all the way off the reservation and made a paté en croute
Lorenzos's plates always look the most appetizing, even more then the level 3 chefs.
Yea sometimes bruh
It's so good to see our boi back on his game
Legends have it that Emily is still grinding that pepper
It's wild how different everyone's meatloaf recipes are
Lorenzo is level 3 chef in disguise to make all of us home cookers feel bad he chops like a pro cook’s like a pro and on top of all that he has the most amazing personality ever and I’m out of words 🙂💔
This gives me so many good ideas for the next time I make meatloaf! I use my mom’s recipe, which used ground turkey-for the longest time I thought that was the only meat people used for meatloaf. 🤦♀️
Emily's meatloaf looks EXACTLY how my Mom used to make it and now I miss my Mom.
I'd rather they replace the food scientist segment with them tasting and criticizing eachother's dishes. They always pull it out, eat it, and talk about how good it is.
Emily singing Meatloaf while eating Meatloaf is the kind of meta I need in my life.
