  • Today I am making slow cooker red beans and rice. I love using an easy slow cooker recipe to get dinner on the table. After soaking your red beans, this slow cooker recipe takes 15 minutes to put together. The combination of smoked turkey wings, smoked sausage, Louisiana hot sauce and Cajun seasoning make are amazing. The vinegary and spicy hot sauce add flavor and balance to this dish. The addition of butter is a game changer to any bean soup or recipe. The slow cooker creates tender creamy red beans that are even better the next day! These creamy red beans and rice are perfect for the cold weather that's on the way.

    INGREDIENTS
    1 lb red kidney beans
    2 1/2 lbs smoked turkey wings
    12 oz smoked sausage
    1 small onion
    1 small bell pepper
    2 sticks of celery
    4 cloves garlic
    32 fluid oz chicken broth
    2 dried bay leaves
    3 Tbsp butter
    2 Tbsp Louisiana hot sauce
    1 tsp Cajun seasoning or season to taste

    I cook this frequently in my Instant Pot. The one issue I have is all the teeny tiny bones from the turkey wings. I bought a sieve that fits in the top 4 inches of the pot so the wings cook in the broth but don’t get lost in the dish. I can pull the sieve out, pull the meat off and put it back into the stew. This is a very favorite dish at our house. I’m salivating due to this video and will need to make it again soon.

      Pork is more traditional, salt pork, fatback, bacon or pickled pork

      @@emilymulcahy True. I often use ham hocks, but sometimes I can’t find them and use turkey. I like the wings, but LOVE the tails. All of them break up into small bones so I still use the sieve.

      @@TygerBleuToo in all my 44 years as a Louisiana native I've never put turkey (unless you count turkey sausage) in my beans lol it just seems unnatural to me, I'm sure it's delicious but it's not what I'm used to

    That’s my kind of meal. I love and use smoked turkey for certain recipes especially greens. It takes it to the next flavor level.

    Beans and cornbread sounds great to me. I think I am going to try this. Wish I knew Mom’s cornbread recipe. I have all her cast iron, but I don’t have her recipe.

      1st x cooking beans? Been there! My husband's family were big time bean eaters. So, they knew how to cook up & season a pot of delicious beans (although they liked pinto beans, exclusively). Anyway so, after we were dating, he taught me how to prepare, season & cook pinto beans just as his family had done for decades. Nowadays, I like beans A LOT (just not much into pinto beans).
      All that being said, here's my point if you're still reading this, lol, kidney beans are quite unique, I've learned. They are literally deadly if undercooked (I jest, not). I don't recall the technical or medical terms but it's quite a serious issue.

    Ok.... I made this recently. Smoked wings, kielbasa, soaked beans (even rinsed them a couple times), seasoned with tony cacchare or whatever his name is. Slaps? Is that what kids say now? Holy cow, best red beans I've ever had. I mean those smoked wings (mine fell off, shredded) just send this thing to another level. Thanks for putting this video up, this is the only way I can make them now.

    EXCELLENT! Although I soaked the beans overnight, it still took at least 6 hours or more for the beans and wings to soften. Many things may have caused that. Maybe the beans are really old. Maybe using a crockpot liner slowed it down. Maybe the crockpot: it's an old one maybe dying. Maybe the salt in the turkey wings and full flavor broth. Maybe this maybe that but one thing was not a maybe: THIS RECIPE IS GREAT! I did not need to add any extra salt between the turkey wings and the broth. I only added cayenne pepper and the Louisiana hot sauce. I served it with cornbread that had jalapenos and cheese in it and green onions and cheese as a garnish. Thank you again for sharing your recipe.

    You used the chosen beans (camellia is the good stuff in nola) but we typically use pork not poultry in our beans

      As a new Orleans native who has eaten beans at least once a week for all 44 years of her life, I've heard it, it doesn't work, nothing but eating beans a lot does, you're always going to fart, unless you eat beans daily and it lessens

      Soaking the beans in water with baking soda does reduce some of the gas, but not all. And what gas still produces, will peel just as much paint off the walls as without the baking soda. So the issue is being slightly more comfortable. You can do better by trying products like Beano which has the digestive enzyme humans don't produce. Again it will reduce the amount of gas, but what remains is still a few dark green clouds in the sky but not a thunderstorm with lightning.

    I just made a quickie version of sth similar to this. Had a pack of smoked sausage I needed to use. The cone__a brand, sooo good. My husband won’t eat this so have to make for just one person.
    Sliced the sausage. Cooked. Put chunks of bell peppers and red onion in the pan drippings. Sauté till mostly done, add a couple or few minced garlic cloves at the end. One tsp or so of beef better than bouil…stir in 1 can of l_cks red kidney beans(they are soft and creamy)Over rice. Was soooo delicious.
    Not near as delicious as this one I know, but will tide you over if you’re craving this but you live alone(don’t need a huge amount) or your significant other has bad taste in food lol 😆.

    1. RE: Bean Soaking
    Folks instead of soaking in water overnight, you can bring the beans to a full boil and then cover and turn off for 1 hour. The beans will be ready to cook. use “Camellia” red beans. No other red bean comes close!
    2. RE: TYPE OF BEAN TO USE
    “Camellia” beans are the only ones to use.
