    Ingredients
    1 lb or so dry red kidney beans
    1 lb. Smoked Turkey wings
    18 oz. Cajun andouille sausage
    1 1/2 cups white rice, cooked
    1 medium yellow onion, chopped
    1 green bell pepper, chopped
    3 ribs celery
    6 cloves garlic
    3 cups chicken broth
    3 cups water
    1 tsp garlic and herb seasoning
    1 tsp chicken bouillon powder
    1 1/2 tsp Cajun seasoning
    Salt and pepper to taste

    In Jamaica we call it Stewed Peas; we use salted pork or beef but any kind of meat can be used. We have it with rice too. Nice to see other variations. It must be a black people thing.

    Bruh, a couple hours ain't quick and easy! You need a pressure cooker and can Kidney beans and 30-40 minutes you got Red beans and rice!💯💯💯

    I’m from Louisiana so red beans and rice is a must in my home. My husband convinced me to try this recipe and I was a little hesitant because to me I was taught by my elders so it’s unnecessary to try anything else. I’m glad I did because this recipe is amazing!

      Real cornbread. Not jiffy or jiffy-like. Only one tablespoon of sugar. No more. I don't need cake with my beans! Government handouts changed the game. I prefer real cornbread using white meal. OMG!! ❤

    We are definitely all one people...in Jamaica 🇯🇲 this would be called stew peas. It is made with salt beef or pig tail. You can use chicken or oxtail. We add different seasonings and add a little bit of coconut milk... The Rastafarians eat this with veggies added only, no meat. So that recipe would be very convenient for all vegans. I just love that we all over the world are eating the same things, just made and named differently🇯🇲

      ​@@lawtishaI'd say no when it comes to turkey necks. They fall apart after a while & all the vertebrae bones will be in ur pot. They are tiny & it's hard to remove them all. Happened to me once & I was aggravated trying to make sure they were all out.

      In New Orleans we eat it with French bread or poorboy bread. Cornbread is Mississippi and other Southerners.

      After he added all the turkey neck and chicken broth he said to let it cook on medium high for a couple hours. How many hours did you let it cook? 2,3,4 hrs or more?

    As a Louisiana native now in Houston, well done! I’ve had the beans at Morrows too and it’s how I make mine! I save 40 min or so and now use a pressure cooker.

      Yup. Just cook the beans separately in a pressure cooker and they are done after 45 minutes to an hour tops.

      Yeah, I use a pressure cooker too sometimes. Then, there are times when I want my house to smell like “home” and I do it the way he just did it.

      Same it was pickle pig tails or pickle meat and red beans was cooked slow also never ate cornbread with red beans. I'm from the 9th ward.

      I love pickle meat but also smoked turkey necks are great if you wanna leave pork alone. They give just as much flavor and have meat floating all through the beans

    I pretty much do the same thing except I start with a pound and a half of andouille sausage, 1 pound of thick cut applewood smoked bacon and 2 thick cut high quality ham slices (approximately 1 pound each) with the bone and marrow. I add parsley at the "trinity" stage and don't forget the Tony Chachere's at the "spices" stage. Always serve with steamed white rice and garnish with sliced green scallions...

    I agree! In January I had gone to New Orleans and had the red beans and rice from Morrow’s and it was hands down the best we had while there, and I have been trying to recreate it since. Can’t wait to try your recipe! Thank you!

    I grew up on ALL beans and everyone used ham hocks, salt pork but I didn't like the fat. Love the flavor until I tried smoked turkey parts...preferably drumsticks! I also cook my greens the same way!!!

    Hey Dude. Nice try.
    19th generation Louisiana here. Straight outta NOLA. Creole/7th Ward.
    Couple things:
    1. “ CAMELLIA” brand beans O N LY!! Ever!
    2. You need to sauté those vegetables before going in the pot! Essential. No RAW onion, peppers, etc.
    3. You’re right, no water in beans. Unsalted chicken stock because the sausages are loaded with sodium.
    4.Andouille is pronounced AHWN-do-ee.
    5. You need a good smoked sausage.
    6. Cut you sausages in different sizes, for example thicker slice, thinner, in half, chopped… for different textures and interest. ALL MEATS must be sautéed BEFORE going in.
    7. No turkey in real NO beans.
    8. Add 1/2 pound at least HOT sausage fried loose.
    9. Use real seasonings not premade. Don’t forget bay leaf, Crystal hot sauce and fresh ground pepper.
    10. New Orleans Creoles BOIL our rice (BEN’S) not steam like Cajuns do.
    Your effort looks good but that’s the real deal for the same amount of work…and authentic.
    Never seen turkey like that in beans. But if you swapped out the beans for fresh, sautéed okra you would have a type of gumbo. Just add filè powder at the end. In NOLA we eat that with the leftover turkey from Thanksgiving and freeze a small cup for each person to have at the start of Christmas dinner.

      1 large chopped onion
      1/2 to 1 bell pepper
      1 to 2 stalks of celery
      3 to 5 toes of garlic
      2 to 3 bay leaves
      Seasonings: garlic powder, onion powder, kosher salt, cayenne pepper and Tony Chachere's creole seasoning
      One hour before the beans are cooked add 1/2 to 1 stick of butter. This makes the beans creamy, but it also helps if you mash some of the red beans. This is pretty standard for red beans in New Orleans. However, we also eat pickle meat which is pork that has been pickled in brine. You can only find pickle meat in New Orleans. Feel free to use pig tails, smoked turkey necks and ham hocks to add additional flavor.@@creativelife9871​

    Red kidney beans are so good, but they are harsh on my stomach... so I have to substitute with white; but that recipe makes me want to stick my fork thru the screen and get
    busy, Lol!
    My kids love smoked turkey wings and @Andouille sausage is my jawn! 😁

      SOAK BEANS IN 2 TABLESPOONS OF BAKING SODA.
      IT DRAWS OUT THE ENZYME THAT CAUSES THE BEANS TO BE "GASSY."

    Man I wish I could taste this. I live in New Mexico were Hispanics my mom always said youve never had good food til you eat soul food made by someone black. I hope that doesn't offend anyone. But my mom had a black friend and he used to cook for her she loved his food. I was very young too young to appreciate good food. I was around 7 or 8 when her friend was killed at a local park sticking up for a girl that was getting beat by her boyfriend. RIP CLYDE you died a true hero in our little ghetto town.

    I MUST try this recipe!!! I simmer pork neck bones (has SO much meat) in my family's favorite red sauce (that's spaghetti sauce, son) so I may try it with each separately. But I ❤ to watch you cook, it's so obviously your thing!
