You just have to play with it until you get the right recipe for YOU! My personal recipe is: 3 GREEN Bell Peppers 1 RED bell pepper 2 onions 1 BIG tomato (or 2 SMALL ones) 1 whole clove of garlic 🧄 (I use elephant garlic -personal preference) Whole stock of Cilantro (sometimes half of another stock because I love the recaito taste). *Recaito is a puree of Cilantro, Onions & Garlic 😋 Puree everything together. Don't chop the pieces too small otherwise you'll lose some of the juices. Add just a little bit of everything as you go, so you get a good blend of flavors. That rice cooker is a cheap one. In the uk £12. Ignore the name, they are all made in China. 😉 Yumasia do excellent rice cookers far less that Zojirushi. £200 is only worth it if your using it everyday. Had my £12 rice cooker for a decade. Its used for rice, one pot meals. hot pot, cakes I eat alot of rice🤣worth every penny.
Replace the ingredients with no/low sodium Ex. Low sodium stock instead of Sazon and water. No salt added beans. Sofrito is a paste/puree with peppers, onions, tomatoes, garlic, cilantro. You could make a big batch and freeze into portions. Instead of salt/sodium you can enhance dishes with umami- nutritional yeast, MSG, mushrooms ... and a little goes a long way in regards to things like liquid aminos, miso, worcestershire, anchovy paste which aren't themselves low sodium but you don't need a lot to boost flavour
Use onions, garlic sautee real good, add annato(which is in sazon and gives the color) or just a bit of the sazon packet and some fresh cilantro leaves, cubanelle peppers and oregano. Season it up to taste with all else and you have a way better option than the whole sazon packets. No sofrito needed if you dont have it cause you have the base there already. Im puertorrican and thats how i do mines. The sazon packets have hella’ sodium monoglutamate; theyre ok to use complete when cooking a whole pack of rice or something , not 1-2 cups. Hope this helps. As for one can of beans, you dont need to put the whole can of tomato sauce, just a bit and simmer well. And lastly, rinsing the beans can help avoid the extra sodium in their liquid
I'm New Yorican and have never seen an acid, other than tomato sauce, added to beans. BTW, I've seen many different Puerto Ricans, including my mother, neighbors and relatives, cook beans from scratch.
That looks delicious. That's why I cook some smoked neckbones, take off the meat, save the broth too, then cook my beans so there's a bit of meat in my beans. I freeze the cold neckbones and broth until I need them. I would have dropped the chunk into the beans. I don't care for beans (except for a few in my chili). But generally I eat black beans. They put off a bit more water. Glad you mentioned them. My hair grew a LOT when I was eating beans and rice.

I am cuban, always add a little vinegar and some sugar like a tablespoon in any beans I make. If I add any green leaves to any of my food, my daughter can't stomach that. Instead I can add a little parsley. Also I always keep the juice in the black bean cans. If you want to thicken any of your beans After cooking, just take some out and smash them with a fork or anything. Love lentils made with the latin taste. Bacon can add a great taste when it renders its fat @ yummm

Black beans are better out if the van if you rinse them off. Most of the recipes I follow say to rinse the can juice off.
On all beans except the black ones.
Think about it like pasta water… sometimes those juices have things in them that help the dish both flavor and texture wise :)

What kids know a our door dash unless you use it? You can cook ahead and freeze meals too. And always have prepared meals. I do that for myself!
