    Chopping into smaller pieces and blending takes more time Aunt Flo, you can cut in larger cubes, Put in boiling water and cook for 4 to 5minutes then blend it without water(for a much firmer/harder consistency).
    If you prefer a much lighter/softer consistency like myself, add some of the eggplant stock into the blender....it blends very smoothly as it's cooked and so soft and mushy ...no need to sieve in a cheese cloth or napkin.
    Pour back into the pot, add your spoonful of psyllium husk and stir until it's formed.
    Try my method Aunt Flo and let me know if you like it.
    It's a much softer and finer texture just like amala itself

      Joy I already tried it ooo. Before I upload any video to UA-cam, I try different methods and share the one I like, just like I said that I did not like using xanthan gum as binder for this. I did not like that method because it made the eggplant fufu tooooo soft for me. I couldn't even mold it. Also, I used physics to calculate that to and fro journey from pot > blender > back to pot and it was much more stressful for me than a single journey from blender > pot. LOL

      Juliet Innocent Hi dear, where are you based? As that would determine where you can get the psyllium husk.
      If you are in Nigeria, there are keto vendors in different states which I can send you a list of names and numbers.
      However, if you are in Europe or north America, a lot of health shops carry it...not grocery stores, strictly health stores.
      Or you can order online too from websites like amazon or online health stores like bulkpowder and so many others.

    Thanks for the recepie, I think using the fruit dehydrator method is much easier and time saver, cos after drying in fruit dehydrated than you can blend and you get out dried powder then you can bag and label different flavours and just make your choice of fufu on a go.

    I was taught that when preparing Large Eggplant it's best to sprinkle the sliced pieces with salt to extract the bitter tannins. Then they are washed (sometimes squeezed if you are going to fry them) and patted dry before making baba ganoush or parmigiana. I will try this both ways and tell you if there is a difference. Thanks for sharing.

      Timothy Greer That's what I was taught too but after numerous experiments in the kitchen( I love cooking a lot), I found that except you intend on frying the eggplant, you do not need to salt the eggplant before roasting, cooking and grilling it. It will not impact the flavour or texture, hence you needn't be worried about the bitterness.
      This recipe involved cooking/boiling and I promise you, there's no bitterness to this, and none in the eggplant fries I roast in my oven and also none in the roasted eggplant I use for my vegan eggplant lasagne.

    Testimony time!!! I made this yesterday accompanied with banga soup with bitter leaves. This eggplant fufu issa hit for me. Kai! I felt so light yet filled. A favorite for now. Cauliflower fufu next!

    Wrapping hot food with nylon is not too healthy. Rather put in a plate allow to cool then judge the foo foo. Love your creativity in cooking. Already salivating.

    I used ground cereal as my binder...the one i used is shredded wheat and it's perfect
    Even though I didn't try it with egg plant and note that I'm not on keto diet ...I suspect wheat is not keto friendly

    Hello Flo. Quite frankly I love your road trip videos to death and you look great! I loved watching you walk through the villages of Nigeria in jeans (you ought to be a model:))! But, Im still hungry! So I found this terrific video of yours on cabbage fufu! Im in the process of trying it out for the first time. I just made green plantain fufu the other day. I also see like some other blogger said you can "fufu-ize" just about anything under the sun! That's exciting to me. I even saw a spinach fufu video title! So after I make this fufu Imbgoing to dive in and eat it! Right now all I need is some cheese clothe to drain the water from the pureed cabbage.

      Chidi Ezeakanwa all these veggy fufu meals store well in a working fridge for up to 48 hours so you can make servings for 3 lunches in one go if you eat a fufu meal every day. But if your fufu frequency is far between then yes, you have to make it every time.

    Which of these Fufu's store well in the fridge? I can go from dry garri to eba in 3 minutes using a microwave... I may be able to make a lot of these in advance, refrigerate them, and microwave later, but will be lying to myself if I want to make any of these from scratch when I'm already hungry lol

      Same thought as you. Most of the nutrients in the cabbage was lost with the juice! With this one much of the nutrients are retained.

      My thots too as a nutritionist. Most nutrients in veg are water and heat soluble. Anyway what they want to achieve Is fibre and no carb not necessarily nutrients

      Jane Amadi not at all. Oatmeal is very high in carbs with Quaker oats having 67g of carbs per 100g.

      All Nigerian Recipes that’s fine but my other question is if it’s used for only this particular recipe or can I use it for other swallow foods ?

      Jessica Obiang so far I've used it for tigernuts fufu, cabbage fufu and eggplant fufu and more on the way.
