Steamed shishito peppers: Kkwarigochujjim(꽈리고추찜)

    Ingredients:
    Kkwarigochu (shishito peppers), flour, garlic, sesame oil, sesame seeds, green onions, dried anchovies, soy sauce, honey, and hot pepper flakes.
    Directions:
    Prepare 300 grams (about 10 ounce : 0.7 pound) of kkwarigochu and remove the stems from each pepper.
    Wash the peppers and strain them.
    Place the strained peppers in a large bowl and add 3 tbs flour (use 1 tbs flour for every 100 grams of kkwarigochu). Mix it up with your hands until the peppers are coated in flour.
    Put 1 cup of water in a steamer pot and boil it over high heat.
    After the water boils for a few minutes, put the peppers into the steamer and steam for 5 minutes over high heat.
    *tip: Don't overcook them, otherwise they'll turn out mushy
    Turn off the heat, take off the lid, and set aside.
    Put a pan on the stove over medium heat.
    Add 1 ts sesame oil and 2 cloves of minced garlic to the heated pan. Stir for a few seconds with a wooden spoon.
    Add 6 large dried anchovies with the heads and guts removed and stir for 10 seconds.
    Add ¼ cup water, 3 tbs soy sauce, and 1 ts honey (or sugar) and stir.
    Lower the heat and simmer the sauce for 1-2 minutes.
    Add 3 ts hot pepper flakes and mix it up with a wooden spoon.
    *tip: The amount of hot pepper flakes you use depends on your taste.
    Use 1 to 3 ts to make it spicy, or none at all for a non-spicy version
    Add the steamed peppers to the sauce and mix it up well with a wooden spoon. Mix for about 1 minute.
    Turn off the heat and add 2 chopped green onions and 1 ts sesame oil. Mix it together.
    Transfer some to a plate and sprinkle roasted sesame seeds on top before serving.
    Serve with rice. The leftover can be stored in the fridge up to 2-3 days.

    I am confused which flours we hv 2 uses Weat flour, Plain flour or Corn Flour can someone help me please 😬

    Thank you for sharing! I tried it, but I changed the anchovy with dried shrimp. Taste really good! This is a rice killer. It makes me eat more rice than usual.

    Just tried shishito peppers for the first time yesterday. I sauteed them w green onion and garlic then finished them with a little salt afterwards. So yummy as a side dish

    Maangchi! I just made this and it turned out so well! I didn't have any anchovies or red pepper flakes so I subbed in chopped nori and gochujang. Now even though I'm too lazy to take the metro to H-mart I can eat my favorite side-dish at home :)

    This looks fantastic! Do you think Hatch peppers would work for this dish or would the skin not be thin enough? Hatch tend to be sort of fleshy, but they would be a similar level of heat I think to the ones used here?

    Maangchi, thank you sooo much for your fun and educational cooking videos! I am DEFINITELY gonna give this one a try! I could almost smell it through the monitor! @YueNagareboshi, if you know what shishito tastes like, I'm sure you can find something appropriate. How about baby bell peppers? THAT would be awesome. Even regular bells, just cut into thick slices would probably work. As Maangchi says, just don't over steam ~ bet it'll all be yummy!

    @Maangchi I personally don't like peppers and my mother (who DOES like peppers) doesn't like spicy, so I'll have to make this gorgeous dish for my partner! I'll be sure to try it though, it looks irresistable :) Oh and btw, you should really get to working on a print version of your blog (cook book) - I need it in my kitchen! There's no advice I'd take other than from foodwishes, cookingwithdog and maangchi! I want to show my family who doesn't have computer, too!

    Here in mexico we love chili peppers.... but unfortunately we dont have shishito peppers around. I wonder if we can try another kind of peppers with this recipe.
