Cucumber kimchi (Oi-sobagi: 오이소박이)

    Cucumber kimchi (oi-sobagi) is made by turning a cucumber into a pocket and stuffing it with vegetables and kimchi paste. It's delicious and refreshing and it's a great kimchi to make when cucumbers are in season and you don't feel like waiting for your kimchi to ferment. You can eat this right away: they're cool, spicy, and crunchy. Cucumber kimchi is a good example of a kimchi that doesn't have to be fermented to be great.
    It's been a very popular recipe on my website ever since I first posted it. However my original video used copyright-protected music ('A Message to You, Rudy' by The Specials), and the sound was recently removed by the copyright holder. Many people have been asking me to remake the video, so with cucumbers in season it's a good time to do it. Enjoy the updated video!
    Ingredients:
    2 pounds kirby cucumbers (9 or 10 cucumbers) or 4 4½ inch long small, thin cucumbers.
    2 tablespoons salt
    1 cup buchu (Asian chives), chopped into ½ inch pieces
    4 garlic cloves, minced
    1 medium carrot, cut into thin matchsticks (about 1 cup)
    1 cup onion, sliced thinly
    ½ cup hot pepper flakes
    3 tablespoons fish sauce
    1 tablespoon sugar
    ¼ cup water
    1 tablespoon sesame seeds

    I bought big amount of cucumbers couple days ago and didn't know what to do before it's soggy. It was always in my mind to try this recipe after I tried your amazing traditional kimchi recipe. I tried it today and I'm speechless to describe how tasty is it! I lowered the quantity of hot pepper flakes but my tongue is still burning yet I can't stop myself eating it. Thanks Maangchi!!!

    This just made my night. As a child my best friend was Korean and her grandmother ALWAYS made these and we would devour them. I've never been able to remember the name and my description of them has always baffled people; but, the flavor and sight has always stuck with me. Soo tasty.

    I tend to make something similar but with regular kimchi paste. I stuff them and pour the leftover paste on top. Then slow ferment them in the refrigerator for a day. So delicious!

    What a lovely Lady! It is such a joy to watch you cooking your national dishes just the way your mum used to cook it. It's also very interesting because fermented dishes could be discovered in many cultures but in most Western ones they had been forgotten and replaced with unhealthy fast food just for the sake of convenience . Also, last 2 - 3 generations of modern women don't make such fermented dishes either because they have not been passed such recipes from their previous generations, or , they just don't have time or desire to spend hours in the kitchen. But, I think , cooking something from a very scratch is rather therapeutical because it does takes mind off daily stress and pressures of our modern lives.

      My family is Korean and I've watched my mom make kimchi at home ever since I was little - even helped her make the paste or collect the excess ingredients for a geotjeori(겉절이). The salting part is a teeny bit easier these days, because many plantations have started to offer pre-salted napa cabbages online. Still, it takes two or three full days to get everything in order! I know how difficult kimjang (the process of makig kimchi) is, and my mom does NOT want me to make my own kimchi when I start living alone. Guess what? I WANT to do it by myself xD

      @@indaanisa1132 it's the probiotics from fermenting - good bacteria are essential for good but health, and good but health is essential for good overall health. This is why, since ancient times, all cultures have eaten fermented foods, and is also one of the many reasons modern processed foods are unhealthy - almost nothing available in a supermarket is properly fermented (except sauerkraut and traditionally made dill pickles). Fermentation equals life.

    Now that I have the Kimchi process worked out nicely, time to try something new. THIS IS IT ! :)
    I very much enjoy watching your videos not just for fresh ideas but also because of your joyous nature & the way you teach us how to prepare these delicious recipes of goodness & health. I like your recipes because not only are they heavenly, delicious & HEALTHY, but they are also extremely affordable to make & we all know how expensive healthy food really is. With your recipes I can alter them if I choose to change up the recipe once in a while which I have done with the Kimchi by adding Turnips & other fruits vs using pear.
    I will be changing my diet very soon to help me find other ways to cope with 2 health conditions & these fermented foods are ideal for me. Thank you for sharing your knowledge with us, it really helps make being in the kitchen a joy & not a chore.

    I saw this years ago and still like to come back because is the easiest recipe I've seen I tried making them, they were good but I don't think as good as yours! I will try and make them again!!!!😋
