    Hi Maangchi! I tried this recipe last week. Wow!! It's amazing, with this recipe I lost the fear of making kimchi! Here in Argentina, nappa cabbage is not always available at stores so using regular cabbage was an excellent option for me. My family loved this kimchi. I am planning to use this kimchi on your kimchi stir fried rice recipe. You are the best Maangachi! Thank you very much for your No-fail recipes!!!

    9 years ago, when I was still in 2nd year medical school, was when I first came to know Maangchi. This emergency cabbage kimchi was the 1st video of hers that I saw and her 1st video that I tried. I'm already a specialist now, I'm still watching her videos, I still refer to her recipes, and gochugaru and gochujang have become mainstays in my kitchen. ♡♡♡

    Maangchi,
    I rent and live in a room here in San Francisco bay area, I don't have the luxury to make the traditional kimchi which my Korean Oma did when I was growing up in the Philippines.
    I really appreciate this recipe, it so doable and it reminds me of my family and specially my mother who have passed away last year. Thank you so much.

    I know this was posted so long ago but I hope you see my comment Maangchi! I’ve made all your other Kim chi recipes but not this one because, well, I thought it was not “ authentic” because it was a “ short cut.” I made this yesterday and it is perfect!
    The cabbage is crunchy, slightly sweet and savory. I rinsed it 3 times and I felt the salt sugar balance was perfect for the 2 lb cabbage. I love fresh Kim chi but appreciate fermented Kim chi in other recipes! I may even like this one the best! I also added 1 tsp of grated ginger because I love that ginger- garlic- sweet flavor. I’ll eat a little everyday- so nutritious! Thank you very much!

    You can eat it right away after making but if you want sour taste, ferment it by placing the kimchi container outside the fridge. When it ferments well, store it in the fridge. Check out the written recipe on my website please.

    hi, i am a korean living in north Italy. I make often cabbage(verza cappuccio) or radish kimchi (daikon). instead of fish sauce i use the italian acciughe sotto sale, instead of nashi pear, local pera williams etc. but for the pepper flakes, i have to stick to the korean ones because all the flakes i tried just didn't turn out right. i order it from the korean grocery in Germany... because of price and selection. probably you can get it from the Chinese stores too.

    I love your channel!! I've spent my whole life juicing my vegetables so i didn't have to eat them. my husband took me to a korean tofu house. It changed my life, the food is so good. Ive never eat food so good. I eat so many vegetables now. I want to learn all your recipes.
    All my mom had to do to get me to eat vegetables as a kid, was to prepare them this way. who knew? :D

      New Zealand is almost 4 hours into quarantine and I just made some earlier today!
      I used soy sauce instead, and used daikon radish instead of carrot
      Also, I gave half to my sister and she almost cried when I told her that I know how much she loves kimchi

    Thank you! I love all your videos. I spent a semester study abroad at Ewha, and have been 'homesick' for Korea since coming back--your videos have helped, I can at least still enjoy the food!
    This week, I ran out of both doenjang AND gochujang, then found out that my friend who gets my Korean supplies at the commissary is on vacation--and then my supermarket was OUT OF KIMCHI!!! Life is so hard sometimes! Not to worry, I have my dear teacher Maangchi, so I can make kimchi for this emergency! :)

    Add soy sauce and salt instead of fish sauce. And check out the recipe for vegetarian fish sauce recipe on the forum on my website which was posted by one of my readers. Type out "vegetarian fish sauce" in search box on my website, then it will lead to the recipe. Good luck with making good kimchi!

    It’s 2020 and New Zealand is going into quarantine/lockdown for 4 weeks (can still buy essentials).
    I went to my Asian supermarket today and couldn’t find any kimchi!
    So, I think I might use this recipe~

      I made this today! This was my first time making any type of kimchi. Now, we are finally in lockdown mode
      I tagged you in my Instagram story
      I am not sure if I have any fish sauce in the house, so I opted for soy sauce, as you suggested
      I currently don’t have any carrots, so I opted for daikon radish
      I made the same amount that you did, but gave half of it to my sister before we were all supposed to quarantine. My sister loves kimchi, and she almost cried when I told her I made some for her!

    My husband was craving bulgogi tonight, so I drove to our local Korean market only to get there 3 minutes after closing (hrs. changed due to Covid). I ran to the store and got a head of napa cabbage, because I knew you had this video up! An hour later, bulgogi is marinaded, cucumber kimchi made, and emergency kimchi ready! Thanks for saving the night. I grew up in San Diego and had never eaten Korean food before meeting him. I've watched many of your videos and am learning how to make some of his favorite dishes from his time in Korea.

    So excited to find a kimchi recipe that does not use Napa cabbage, since I can't get that here in southern Italy. I also can't get typical green onions, but the ones you used are similar to the ones that are here in certain seasons. Now I have to find something similar to the hot pepper flakes you use! :-)

      Anna Maria Stone (Writing in english for others to understand, but I'm italian like you, except I'm from the north) We do have the green onions here in Italy, they're just regular onions picked when they're very young (cipollotti). We even have red spring onions (cipollotti di Tropea), for all that matters. And for the flakes, the korean type is milder than the ones from Calabria. I sometimes use sweet paprika and peperoncino 50%/50% or 60%/40% mix.

    Thank you Maangchi! This is the perfect kimchi recipe for diabetics or those following a keto diet. I left out the sugar and used only 2 Tbsp gochugaru. My taste buds are smiling :) This is restaurant quality!

      What do you use incase you dont get hot pepper flakes? With the ockdowns theres none. Can I use normal chilli flakes?

    Maangchi I wanted to try making kimchi but we don't get that type of cabbage which you used in earlier kimchi episodes. But in this emergency kimchi, you showed using the same cabbage available here. Inspired to prepare one of these days. I haven't tasted kimchi or any Korean food yet. But with your step by step guidance anyone can do it. Thank you so much. I am very new to your channel.     Thank you Maangchi! I always wondered if you could make good kimchi out of "common" cabbage, since where I live Napa cabbage can be up to 8 times more expensive. I'm going to try this and see how I like it!

    thanks Maangchi for this recipe, i was going to finally write down my recipe for 'fresh cabbage' kimchi because i can't afford 1.79 a pound napa and am making it with on sale .50lb cabbage, (this week is St Patricks) i usually don't write down amounts but since i have been making this i thought i better because it's soooooo good. hubby even bought me a pear. i also added a half tsp ginger, it's all about the balance. i love that you are in Mexico and hope some day to go and meet my daughter in law, it's been 10 years since my son met and married this beautiful senorita and moved down there. i started another batch of mung bean sprouts and am on day 2 and they look good.. have a blessed day.     I was eating kimchi, and felt inspired to make it, but I didn't have all the ingredients. I continued to search, and found your recipe, Maangchi! I happen to have all the ingredients for this recipe, but I still tweaked it.
    I used 1/4 head of cabbage (salted the cabbage, waited 10 minutes, and rinsed out the water)
    While waiting for the 10 minutes, I minced 1 clove of garlic, julienned 2 carrots, and 1/2 daikon radish.
    In a separate bowl, I combined the garlic, 1/3 cup pepper flakes, 1tbs sugar, and 1/4 cup water. I added the mixture to the cabbage, carrots and radish, mixing until it was a red, red, yummy mess. I placed it all in a mason jar, and now i wait.
    I did taste it before placing it in, and it was tasty! Thank you so much for the recipe idea!

    Yes! just what I needed!!! I live in Cancun Mexico, kimchi is easy to find in koreatown in Mexico City, but impossible to find anywhere else. They don’t sell napa cabbage or green onions in the rest of the country which made it impossible to make my own, thank you for this!

    Hey Maangchi, I'm a college student from Indonesia and currently separated from my family due to me living in another city for my study and the Coronavirus travel ban happening recently.
    I'm a microbiology major college student, so I learned a few things about kimchi few years ago.
    Knowing kimchi is a fermented product and therefore is well preserved by itself I decided to make kimchi, and I just tried your emergency kimchi recipe but with napa cabbage because it's available. Thanks, Maangchi, now I can enjoy simple, healthy, well-preserved, multifunctioned food base (kimchi) for my social distancing college period.

    I tried this emergency kimchi 4 years ago just after my daughter was born and it came out amazing! After this I never got the time to make again.. I am expecting my 2nd child now and I am looking forward to make kimchi again when all my morning sickness goes away! 😂

I live in a small city in Italy and while I was able to buy fish sauce, gochugaru and any kind of Korean jang through Amazon, I couldn't find anywhere in my area the Chinese cabage.       From personal experience: Yes. Living in Idaho counts as an emergency on more levels than just kimchi related ones.

    i tried making kimchi with regular cabbage as i couldn't find it in the town i live !!!! literally today i made it and then i come to work and see this video !!! i'm glad i didn't give up without cabbage now

    Hello! I can't thank you enough for this video! My mom's been wanting to try kimchi for ever. But since she was diagnosed with cancer she hasn't been able to make it or find it. The rare days she feels well enough to have her former appetite, all she ever talks about is kimchi. I've never made anything like it so I didn't even know how to begin but this has helped so much. I plan on making this for her asap, again thank you! We are both such huge fans, keep up the great work.

    yes, use soy sauce and salt. Type out "vegetarian fish sauce" in search box on my website please. Then it will lead to the recipe for"how to make vegetarian fish sauce" posted by one of my vegetarian readers. yeah it sounds strange "vegetarian fish sauce" : ) She uses dried mushrooms and other stuff.

    I love your chanel Maangchi.
    I have a crazy method of making my "emergency" kimchi that I have used for years now.
    1 bag of shreaded cabbage and carrot.
    6 cloves of fresh garlic.
    1 bunch of green onion.
    1 med. white onion.
    1 tbs. sugar.
    1 small bottle of shiracha (sp?)
    Of course the cabbage is salted and wilted then rinsed with water.
    chop everything else and finely mince the garlic.
    add sugar and the entire bottle of shiracha and mix well then press out the air.
    Refridgerate for 24 hours but the longer the better.
    Works every time.
    Sadly, where I live there is no close source of fish sauce but my friends all love my quick kimchi.

      You can keep it in the fridge until it runs out. Kimchi never goes bad if you refrigerate it. It will keep fermenting in the refrigerator. When kimchi ferments, it tastes sour, so as time passes, the kimchi will get more sour. Press down the top of the kimchi occasionally with a spoon so that the top part of kimchi is submerged in kimchi brine.

    Oh yes!! I try it fresh and I like it very much. It's not sour and it does test like salad. I made it for my friends too as a gift (one small box each ). They love it and asked for more. Thanks a million :)

    This recipe helped get my confidence up enough to make my first batch of kimchi and I’ve been making several kinds (this one, oi sobagi, and pa kimchi being favorites) ever since. Not only is it tasty but it’s been so helpful during quarantine when I can make a big batch to use across several dishes. Thank you, Maangchi!

    Hahah, totally my kind of recipe !!! Because I have a very very small kitchen. But I'm still thinking about making it because my body doesn't allow me to have too much spicy hot food ! Can I put less of hot pepper flakes ? And maybe replace part of the pepper flakes with something else ? I saw others commenting and you said it can't be substituted, but is it because of the fermentation or the taste ? If it's only for taste, I know it won't be the perfect authentic taste but at least i'll be able to make some and eat it ... still better than nothing hahah, because my brain is BEGGING for it :p (btw your white kimchi looks delicious too ! but I can't find the ingredients :p)

    Hi maangchi, thank you so much for this recipe, I currently live in Pakistan where Napa cabbage is usually hard to find so this is a life saver. Could you let me know whether I can replace Korean red pepper flakes with regular red pepper powder/flakes?

      Adjust the amounts to your preference (spice tolerance) and mix red paprika powder if the amount of powder isn't enough.

    Ive been obsessed with eating cabbage salads lately, and kimchi didnt cross my mind because my partner is sensitive to ferments. But this emergency kimchi is fresh so i think we could both enjoy it ! I bought the red Korean paste and pepper , cant wait until the ingredients (i also got fish sauce) come to my door D:
