Korean Style Green Chili Pepper Pickles (Gochu-jangajji: 고추장아찌)

This is one of my most favorite kinds of jangajji (Korean pickles). It’s made with green chili peppers and tastes salty, sour, spicy, and a little sweet. It’s very crispy and crunchy.
Hey! I'm from Sri Lanka. We don't have korean green chilli peppers but we have green chilli anyway. But the freaking spicy small ones. 🥵🥵🥵. So I made them with this recipe. They were very good and helps to boost my immune. Thank you maangchi! 😌😌😌

Oh man, my mouth started watering the minute I saw you mix the chilies with the rice and seaweed. That looked so good! Your last couple recipes have really made my mouth water. I can't wait for a vacation from school so I can try out these recipes!

I bought a two pound bag of these peppers awhile ago but due to my heavy schedule I haven't been able to do much with them, I'm pretty stoked that they won't go to waste now! I just put them in the jars with the brine and tomorrow I'll try to boil the brine again when I get home, thanks Maangchi!

In Russia we eat these peppers with hot soups, but not with rice. They are sold in small Korean restaurants. Well as a snack to vodka. They are much smaller in size. Pickled garlic in the wine vinegar also very tasty .

Maangchi, I made this using Serrano peppers 😣😂. Its a tad too spicy and it has to pickle for a little while longer bc the skin is super thick. I also put whole garlic cloves in it. 😊
Hello Maangchi, My sister will be grilling her own version of samgyeopsal for our dinner today. She marinated the pork belly with a ssamjang which we bought in an upscale grocery. It was pricey but we still bought it because we are fascinated with Korean flavors and Korean cuisine. This is all because of your influence. By the way, we'll be buying our kimchi by next month. we'll be making lots of kimchi-based mouthwatering dishes by the time we have it. Thank you again for your helpful videos. =)

It is so funny you posted this today. I was at my mother-in-law's house today and she had three huge baskets of those peppers on her table. I asked her what she was making with them and she said she was making pickles for the whole winter but she had to go buy a lot of soy sauce first. Now I'm pretty sure she's making these! hi maangchi! i'm from Chile, the country of that lovely and spicy little green chili. We've got a lot of deferents chilies but here the people don't like to spicy on their dishes but i do! i like too much kimchi, is really good. Hi Maangchi. I love watching your videos but hardly ever make anything b'cos Korean ingredients are not available in India. But this green chilli pickle I'll definitely try. It is the season for ripe green chillis in my part of the country. And this hot, sour, slightly sweet pickle appeals to my Indian palate. Thanks for the recipe.

Maangchi! These peppers look delicious. I went out and bought a pound of korean peppers as soon as I finished watching your video. When I was making the brine, I poured it directly into the peppers without letting it cool down. I realize it after a minute and poured it back into the pot to cool down. Do you think my mistake will affect the final taste?
Tyler Owens Yes, you should pour the boiling hot brine directly into the peppers in the jar as I did in the video. And 1 day (24 hours later), pour out the brine into a pot and boil it again. Wait until it cools completely, and then add the cool brine to the peppers in the jar. Refrigerate it for a week and you can start eating.
Oh good, so I did do it correctly! Can't wait to get home next week and try these!!

Too much work but looks so tasty. I usually just remove the whole stems, throw them in a bottle, add a full bottle of vinegar and some salt. Leave it out for 3 days then put in the fridge for about a week. Sour n spicy, PERFECT
