I often cook FISH CUTLETS EXACTLY THIS! Crispy on the outside, incredibly tender on the inside

  • Hello friends. Today I have for you my summer version of fish cakes. I even freeze vegetables for the winter so that I can cook such delicious fish cakes in the winter. Just look how soft they are!
    So, let's begin
    Today I have minced silver carp. Silver carp fillet (without skin and spine) I passed several times through a meat grinder.
    Now, in a small amount of vegetable oil, fry finely chopped onions, carrots, grated on a coarse grater, and finely chopped parsnips. If you do not have this root vegetable, then use only onions and carrots. I want to note that it tastes better with parsnips.
    When these vegetables are fried, add the zucchini, cut into small cubes, to the pan. We fry everything together with the zucchini until the zucchini is soft. In time, it took me about 10 minutes to fry the vegetables.
    We put the cooled vegetable into the blender bowl, add garlic, slices of a loaf or white bread here, also add eggs and a little water. Grind everything until smooth. You can grind all this with a meat grinder.
    Now put the vegetable additive into the bowl with minced fish and mix everything properly. Add salt and pepper to taste and mix thoroughly again.
    I do not add other spices, so as not to clog the taste of the fish with them.
    The cutlet mass is very soft and tender, but cutlets can be formed immediately using a spoon.
    But you can put the cutlet mass in the refrigerator, and so that it freezes a little, then the cutlets are perfectly formed by hand.
    I will make cutlets right away.
    We spread one tablespoon with the top of the cutlet mass in breadcrumbs. Roll a portion of minced meat in breadcrumbs and form a cutlet.
    We fry cutlets on a sufficient amount of well-heated vegetable oil. First, fry the cutlets over high heat on both sides to form a crust, and then reduce the heat and cook the cutlets over low heat under the lid. Over high heat, I fry the cutlets for 1 minute on each side, and it takes about 5-6 minutes to cook under the lid.
    It is better not to stack ready-made cutlets on top of each other, as they turn out to be very tender inside, but with a crispy crust on the outside.
    Just look at how tender the meatballs turn out. And it’s a pity that it’s impossible to express in words how delicious they turn out!
    RECIPE:
    Minced Fish - 900-950 g
    Onion - 150 g (1 pc)
    Carrot - 200 g (1 pc)
    Parsnip - 150 g
    Vegetable oil - 3 tablespoons
    Salt, pepper - to taste
    Zucchini - 300 g
    Bread (loaf) - 200 g
    Eggs - 2 pcs
    Garlic - 2-3 cloves
    Water - 50-100 ml
