In the USA that type of pan is called Hexclad. I think there are a few different brands of Hexclad pans. They also make skillets and other sizes of pots.

Salt slows down the yeast reactions and makes prooding longer. Add sugar instead.
you can add sugar, but I think that flour already contains glucose and I wouldn't want to load it with even more, but everyone decides for themselves.
If you're worried about the salt keeping the yeast from working, just don't add it to the water. Mix it into the flour before adding the flour to the water and yeast. Salt is needed to give the bread flavor. I would not take it out of the recipe.
