Omg that's kausar Bhai! I've worked with that chef in blaby balti in Leicester like 15 years ago. He is a lovely guy and phenomenal chef 👌 Couldn't get enough of his food working as a packer in the kitchen. Makes sense why poncho Khana is good eating.

Look at the rice portion! That's how we do it! Always big portions. For £2! I had a freaking turkish platter last week and the rice wasn't even 70% of that plate in this restaurant. When you BD restaurants you'll never be disappointed with portions especially rice!

It means a lot to thank all the staff and treat them with respect it costs nothing .You understand this as you have a great family at your restaurant . My biggest criticism of all curry houses is the lack of decent fish curries. They always seem to think prawns and salmon are the essential fish dishes, that fish curry he cooked on the bone looked the bomb. I used to have a Bangladeshi work colleague who would bring me a similar fish curry every so often, I really miss that aspect of my old job. Latif, can you recommend somewhere in South London where they do a banging fish curry?

Bangladesh is a land of river and sea. So we have such a huge number of river as well as sea fish varieties that I think hardly any country has. So it's actually not possible even if people want to have different types of fish curries in the west cause the fish varieties there are limited and mostly they are sea fish. As a Bangladeshi student in the US I always get into problem trying to buy fish and fish curries cause there are like 3-4 types of fish highest in any grocery store. So it's a real struggle to make Bangladeshi fish dishes here abroad. There is a Bangladeshi grocery store in my city which imports a lot of Bangladeshi fish though all of them are frozen, not fresh like we used to get back in home.

Well 90% of the 'Indian restaurants' in UK, are owned and run by Bangladeshis and the best Curry chefs are Bangladeshis. Some of the dishes are Bdeshis added to menus too, but it all gets lost under the highly irritating tag. We rule this industry and I disapprove the name Indian restaurant. It should be fair, equal, called British-Asian/desi restaurant/Takeaway. Desi refers to the 3desi countries, Ind,BD,Pk. Asian refers to south asians in UK, but chinese and others can get mixed in so, South-Asian be more specific as BD,Ind,Pk are south asian countries.

    • @taherajenz
      @taherajenz 2 роки тому

I agree well said, it's not really Indian cuisin it's the south Asian subcontinent cuisine and each country have similar dishes with subtle differences different cooking techniques and spice mixtures. One thing for sure Bengalis know how to cook all varieties of food such as meat, chicken, seafood and vegetables, also their deserts are top notch.

For salmon or any fish that is soft and might not hold its shape, fry the fish pieces first in oil after marinating them in turmeric and salt. Highest 2-3 min fry them. Then remove them from oil. In that same oil throw chopped onions, garlic (chopped or paste), green chilies, red chilli powder (according to your spice tolerance), cumin powder, turmeric and add 2-3 tablespoon of water so that the spices doesn’t burn and in medium heat close the lid and cook those masalas (it’s called koshano) until the oil comes on top of it. Then use any vegetables that you want with the fish curry and add some water. Close the lid again. Let it cook for sometimes. And then add the fish in the last. Close the lid again and cook 3-4 mins. Then turn off heat and enjoy

What kind of fish was that, and what kind would be appropriate for an authentic Bangladeshi recipe? I’m very interested in ethnic food, but I can’t find any restaurants serving this type of food within 100 miles of my home. Love you videos, Latif!

I forgot to say, I’m in America, and I’m fascinated with the number and amount of spices you cook with! My mom thought she was doing a good job of seasoning by using salt and pepper! 😂

The fish is commonly called the wallago catfish or helicopter catfish. In Bangladesh, West Bengal and Assam it's known as Boal fish (pronounced Bo-aal).

@@wendyneal4900 Bangladesh has lots of rivers and we also have a wide coast with the sea. That's why you won't find the variety of river or sea fish anywhere in the world like it's found here. Unfortunately in the US, there are not much variety in fish. And the ones it has are mostly sea fish. I'm a Bangladeshi student living in the US for the last 2 years for my grad school and I struggle a lot to buy any fish here that would be appropriate for my Bangladeshi cooking. The few that you can adapt and cook in a Bangladeshi style are salmon, tuna, mahi-mahi, prawns/shrimp, swai and telapia. Then again, there isn't much fish varieties than the ones mentioned here in the US. Or at least what I have seen in common grocery stores. These fishes need to be fried a little first so that they retain their shape and do not break before using them in a curry or vuna type dish.

Brothers and Sisters...the time has come. Time to ditch the "Indian" label and call all Bangladeshi owned restaurants "Bangladeshi restaurants". Time to show the people our unique cuisine. We have so many dishes which we can show case. Fish, meat? Chicken and vegetable dishes. We have more dishes than Indian and Pakistani cusine put together. Lets put Bangladesh on the map. 🇧🇩🇧🇩🇧🇩🇧🇩🇧🇩

      Been saying that for ages.
InshAllah. When I open a takeaway or restaurant I'll name it Bangladeshi Takeaway not Indian, because I'm Bangladeshi and am not Indian. So why should display to the rest of the country as Indian by naming my curry house that!
Whether people come to eat or not I'll take my losses. But I won't name it Indian. Besides, most white brits know now that British Bangladeshis who owns 90% of so called Indian restaurants.
Maybe add a explaination on the top of the menu. So some people dont get confused. That it's the same food you find in curry houses which labelled "Indian restaurant". I've named it Bangladeshi restaurant because I am one and I own it. The food is same as normal other places you been to.

With regard to labeling these things Indian or Bangladesh, perhaps the better label might be Bengali. Just as labeling certain things Indian or Pakistan makes less sense than labeling it Punjabi.

It should be clear and simple. South Asian Food. That what the tag should been from day one. Jeez!
So no one feels offended. Even British Desi Restaurant/Takeaway. Wouldn't been bad. Desi countries are the India,Pakistan,Bangladesh specifically. And these food mainly from them three.

Latif, Challenge for you 😁. Over the years I have enjoyed many Asian dishes including a few I have made myself. Hot ones, very, very hot ones and medium ones. Unfortunately now as I am sure there are thousands if not millions of others have high blood pressure, which really requires less fat and salt intake, sugar too. With Ghee and oil as a mainstay cooking base plus the salt and the meat of course it become a heart attack in a dish. Personally I am a Lamb/Mutton guy I frown upon chicken but only because the real quality chicken is not easy to get. The Challenge-: How about you try create some dishes, Lamb/Chicken etc, equally as tasty as the real thing but with far lower fat and salt.. I am sure thousands would thank you and you never know you could even sell it nationally to the very many other curry lovers who suffer.

@@LatifsInspired Food for thought, or thought for food? If you accept the challenge I do not envy your task but from what I see you are talented so that is not a bad start. Local restaurant has their goods on sale in one of the top four supermarkets. There might well be an opening for low fat versions that are far far better than what is currently on offer by weight watching companies (that isn't food). Fat: NHS fat facts well worth a read, salt per adult 1 teaspoon per day maximum and any dish is only part of daily diet so those totals are spread across the whole day which is very limiting, although I now try keep well below recommendations of both so I can have a naughty meal occasionally so there is scope. It really should be very lean meat only which I know is even more difficult due to all that flavour loss from having no fat. Good meaty fish, haddock, cod etc is an alternative maybe? 😁.

The idea is to have less curry and more rice. Generally in households people cook a light version, heavy versions occasionally, however not many stick to it which results in illnesses. Ultimately no matter what cuisine one usually eats, gluttony can arise. One other habit I’ve noticed over the years in Asian diets, people have generally stopped eating sour and bitter foods which balances out sugar and rich ingredients.

Hi there, a 100% authentic Bangladeshi here. Our everyday food is not based on ghee, lots of oil or salt. In fact Bangladeshi Bengali cuisine use the least amount of oil among all of the South Asian Cuisines and our food is heavily based on rice, fish and meat. We also have an abundance of fresh vegetable and fruits which are naturally grown in the plains and highly fertile soil of the Bengal river delta that I can boldly claim that you won't get anywhere in the world. I do not have the British Bangladeshi food culture though, but I would assume that they are not authentic. In fact I doubt how similar are they since the south asian restaurants in the west actually modifies and lessens the flavor a lot to cater to the bland white palate and also the ingredients and the preparations are quite different as well. I would never understand this if I didn’t come to the US for studies but now I understand how different the food tastes. I still have no idea about the British food though, but I have a generalized idea from different food vlogs that they are not authentic as well.
Fun fact: We rarely use tomatoes in our meat dishes, whereas, most of the western versions of Bangladeshi food uses tomatoes as their base! lol. Also, you won't find the Bangladeshi biriyani known as the kacchi Biriyani outside of the country which is made with aromatic Kalizeera/ chinigura rice and is hands down the best biriyani version in south asia.
