0.5 CUP OIL
1 MEDIUM ONION
3 BAY LEAF
2 CINNAMON STICK (CASIA BARK)
4-5 CLOVE
4-5 CARDIMON
1/2 TSP PEPPERCORN
4-5 GREEN CHILLI
0.5 GREEN PEPPER
1 LARGE TOMATO
2 TSP GINGER GARLIC PASTE

3 TBS YOGURT
**ADD 2 CUPS WATER AFTER YOGURT TO SOFTEN THE BEEF**
5 HEAPED TSP GROUND MIX POWDER
1 TSP CHILLI POWDER
1 TSP TURMERIC POWDER
**ADD 3 CUPS WATER AFTER BHUNA THE MEAT AND COOK UNTIL REDUCED DOWN TO CORRECT CONSISTENCY**
CORIANDER TO GARNISH
COOKING TIME 1 HOUR AND 20 MINS FOR PERFECT CONSISTENCY AND TEXTURE TO THE BEEF.
WHOLE SPICE:
2 TSP CORIANDER SEEDS
1 TSP FENNEL SEEDS
1 TSP CUMIN SEEDS
1 TSP YELLOW MUSTARD SEEDS
1 TSP PUNCH PHORON

I've made this for the family a couple of times now, only with chicken thighs rather than beef. The first time I made a mistake with the level of chilli and it was much too hot but the second time I'd watched the video again, and it was really nice. Really liked the gentle aniseed notes from the fennel.
Brilliant dish. Grew up eating this dish.

I swear, chef, I'm making this now as we speak...I havent even put any of the powdered/ground spices in yet and already just with the onion gravy base, the yogurt, the whole garam masala and meat it tastes unbelievable.

Latif, I know that you love Colemans Mustard PASTE, but have you ever tried Colemans Mustard POWDER?
If not, then I recommend that you give it a try. You could mix the mustard powder with other ground spices and the mixture would keep in a jar.
Another winner! Manage to get those large bay leaves which do make a difference ! Yep get the liver dish sorted 'cos if you don't I WILL ASK your mum for the recipe LOL!

I have an allergy to dairy. I wonder how soya or coconut yogurt made of coconut milk would taste in this wonderful curry. I could experiment. Spiced Liver.
I have been using the same recipe for Masala Kaleja for about 35 years now. I found it in a book called "The Encyclopedia of Indian Cooking" by Khalid Aziz, published by Treasure Chest in 1985. This recipe is from southern India, not Bangladesh, and it has only 7 ingredients, including 500g lamb's liver.
It is really tasty and always gets a big thumbs-up from my guests.
