    I have been a chef for 30 years, you are far better than anything I have watched on TV from the mid 80s to recent times, your food is amazing and you as a chef and presenter is just tip top, you are informative, knowledgeable and a pleasure to watch,and your staff around you are happy and wanting to help and get involved, you have an amazing place,
    Ps love the spinach chop before cooking made such a big difference to my dishes, thank you for your UA-cam channel

    First time wathching this channel. Your kitchen is very clean 👍 and all the uniforms are clean 👍, there's no shouting, nice and calm kitchen 👍 and the food looks amazing. The colour of that dish was surprising considering the simple ingredients. Thoroughly enjoyed watching this.

    Just tried this...had to make slight variations due to supplies, butter in place of oil and the addition of some coriander powder ... but oh my! Superb. Glad to have found the channel; keep it up! 👌

Never watch these beautiful cook offs when you're in the slightest bit hungry because you'll salivate until you feel like you have a huge hole in your tummy and unless you attempt this particular dish, nothing else will satisfy.     Lovely Jublee, I used to go to school in Tooting Bec in the sixties. The only thing foreign we had was the Greek Christoffi family running the fish and chip shop. I moved to Hawaii...David Hume.

    I grew up in Peshawar so had the charshi karahi many times. Charsi is from chars, which is the pashtu name for Hash (concentrated cannabis). No cannabis goes into the charsi karahi but authentic charsi karahi is made only with lamb meat and fat with no water. Yours look great too.

    Looks great! You mentioned Peshawar, but they only use tomato, chilies and salt in their charsi, no?

      First they softened the lamb meat in oil,lamb fat and water, later they stirr and put ginger garlic(optional),tomatoes,salt,and green chillies,black pepper (optional) until everything turns into beautiful cooked oily curry

    Like to make nihari karahi type combination with paya and mutton ribs first fast sear then very slow..( i sk my Asian butcher to burn / char feet and ribs ) They use gas torch to burn feathers off chichen wings and murghi boilers

    Maybe keep the lovely crispy triple fried chips dry with the sauce
    lightly dripped . the sauce separate for chip dip!!
    Love chaat masala touch. Just ideas. Wouldn't change a thing in any or recipes Lala.

    It is a Pakistani dish , belongs to Peshawer Pakistan.Nisar Charsi is a v famous restaurent in Peshawer namak mundi. We often travel from Islamabad to Peshawer just to enjoy flavourful lamb tikka, chicken karahi and mutton karahi of famous Nisar charsi tikka restaurent.
