At the beginning it's really difficult. I finished all 3 dark souls with a dex build without parrying a single enemy once. Recently started parrying in a new playthrough of darksouls 1 and got my ass handed to me at the beginning, but after you get the hang of it, it's really helpful. And Gwyn was really easy as well.
Just imagine if, after a parry, each of those bosses would have their individual stylish ripostes...Like, the serpent one, you'd take her head and crush it with her own spear, i dunno, things like that, as gruesome as possible.
It would be freaking awesome if you could do those specials as a finisher (boss has like 5% health or something). You do a special animation to kill them, and you obtain a special reward for doing so (like tail chops)
All these bosses to parry. Still no good way to deal crazy damage during that short time they're staggered. I mean it's not worth the risk unless it's the pursuer.
Practice makes perfect, and when you know how to parry, it makes game much much easier. For example, you can immediately kick Pursuer's ass and get that Ring of Blades +1, which is a huge boost at that early stage of the game. Ps. Start parry with Buckler, you can get it very early on, and it's easiest to parry with it (and rest of small shields or parry dagger), then go to mid shields.
Omg the devastated look that Velstadt had every time you parried him even in his "power phase" of the fight. The only boss that I knew could be parried was the pursuer...looks like I got more boss parry timings to learn..but least when that struggle is done with I can get rid of like half the bosses without even trying. Btw have you found if any dlc bosses could be parried besides the Gank Squad in sunken king.
+WolfTamer10 I tried to parry all the DLC-Bosses but couldn't land a single one...So I think it's impossible, but there are some rumours out there saying you can parry Sir Alonne and Ivory King...But I don't think so :D

There are only a few enemies that can do that: skeletons, hollow soldiers, manikins, falconers, last sinner and sir alonne. almost all of them are covered in my vids...if you know other enemies that can parry, it might be worth an entire vid just for them :)
