How refreshing to watch someone who wants to TEACH viewers how to do things correctly rather than using it as a stage to perform on! Your speech was slow enough to be understood and delivered with clarity and patience. I look forward to watching more of your channel. I have subscribed. I have also ordered and am awaiting delivery of the distributor and tamping tool.
Thanks for those kind words. Thank you for subscribing. Appreciate that.
Can only second what Suzanne Porter says - an example of a perfectly explained and perfectly clear UA-cam video!
@@rddavies thank you so much. Helps me a lot to make more tips.
I recently bought the Barista Express machine. Definitely this is the best channel to learn on how to make a good espresso!! You explain the topics so well! Thanks Aju!
I just received these with no instructions.... who knew they were adjustable?! Thank you for explaining slowly and clearly
Oh glad to hear that
Another great video on the amount of beans to use and how to work the leveler and tamper. With bottomless portafilter you can really see channeling occurring when your pulling the shot
Sending you a giant thank you Aju! I’ve had my Breville barista express machine for a few months and have been really lost in how to use it. Your videos have been a wonderful, helpful guide! 🇦🇺🙌
Thank you and glad to hear that
I tried to give this a "Big thumbs up!" but I could only find a normal "thumbs up!"
😂
I've watched a plethora of UA-cam videos on the Breville Barista Echoes Express and none of them go through the detailed explanation every step of the way. I've finally come this 🤏🏾 close to getting a perfect extraction. Just received the 2 in 1 tamper today so I'm off to make the suggested adjustments.
Thank you @Aju for your perfected explanations of this process!
Also WDT Method helps reduce channeling and slightly better Extraction. Thank you
Love the detail you put in your videos.
Thank you
Another enjoyable video 🙏❤️🙏 Thank you for taking time to explain so clearly 🙏❤️🙏
You are welcome Ally
Best no nonsense video, I love this simplified video.
Thank you Vic
You’re a very good, clear communicator my friend.
Thank you
That's a really amazing video! I learned a lot in just few minutes. All the best to you! Greetings from Brazil.
Thank you.
Very good!
Aju !!! Once again you had me salivating @ 17:00 and to cap off your torture of my taste buds you told us you couldn’t wait to taste it & never told us how it tasted ! 😂🤣🥲❤️☕️
Oh no... how did I missed that... 😃. It was good but honestly not perfect as there was some channeling etc.
Thank you
Awesome video - Breville should hire you to do their tutorials! Thanks so much
Thank you. 🙂👍

Best review so far
Thank you
Thanks to you ! Now i get it right. 🙏You really understand the machine....You saved me a lot of frustration. Thanks for the time you put in this.
This video was a great help thank you.
Glad to hear that
Love your videos… I just bought this machine! Thanks for the info 😊
You are welcome
Very helpful info. Makes a lot of sense. Thanks
Thank you
I subscribed phenomenal content. This information is amazing. Thank You
Appreciate that 👍
super helpful, definitely subscribed after this one!
Thank you for subscribing 🙏
@@AjusCafe thanks for the content! I actually got a 2-in-1 tamper today and you made the setup super easy! perfect shot right away!
Today I tried to adjust my tamper height and the tips for trouble shooting the channelling video, I finally can pull a shot that's within 22-28secs. It should be a perfect shot,; however, it tastes a little bit sour and bitter....But it's a good start for me after wasting two bags of coffee...😂 Thank you.
Good to hear that.. 2 bags of coffee 😲... glad to clear its getting better.
Amazing video, could you share with us your burr internal setting, as well as the grind size setting on the side? Appreciate your videos.
I don't remember. But i dial in every beans. For example for Lavazza i use 3 or 4 Grind size
Awww Sleepy Head Skittles ❤️
She loves to sleep during daytime.
Great vid, can you add a link to the tamper and leveler you are using👍😎🇬🇧
Brand name is 3Bomber from aliexpress.com But its now available in Amazon. Look for 53mm 2-in-1 tamper leveler. What was the grind size used in this video? What grinding size do you recommend for Breville Barista Express, i usually use Medium Roast Arabica beans. Thanks for the great video!
There is no recommended Grind size for this machine. It depends on your beans. You need to dial in every time you buy or change new beans. Here is a guideline on how to Dial in and should answer your question ua-cam.com/video/XoRRjoI8Ck8/v-deo.html
Great video. Would the same apply for a single espresso shot?
Yes correct
This was very insightful. I'm considering getting an off brand leveler/palm tamper. Any thoughts on that? Should I buy the 40 dollar ones or the one that comes with a pitcher for 10? It says 0-6 MM adjustable. Is this more than 6MM? Also my pucks are wetter than yours. Did you let your sit for awhile or is that right after pulling the shot? Not sure if it's normal
A 2 in 1 palm leveler/tamper is better than the classic tamper. Any brand would do.. Precision tampers are super expensive. You don't really need that, but its up to you if you are very serious about channeling through the edge. Watery puck means you don't have enough Grinds or you took the Portafilter quickly after Extraction. To fix increase the dose, use Razor tool to set correct height and leave Portafilter on GroupHead for a minute after Extraction. If thse didn't help, then its the particular beans that you use. Some as super sticky. If the puck didn't get dry after 3 minutes, then it could be the solenoid failing. See this ua-cam.com/video/7wN1wA_A9Sc/v-deo.html
Thank you Aju for an excellent video! I look forward to applying your suggestions. I bought an old Breville and it’s scraper was missing. Could anybody please give me an accurate height of the Scraper step. I couldn’t find it via Google. Thanks!
Its 7.5mm height. This should be the maximum height after tamping.
Thanks Aju that was quick! Much appreciated. Regards.
Another great video!
How do I know how much coffee I need?
Also can you please tell me if it’s normal if my puck is black after extraction?Thank you in advance
For a double shot take somewhere between 17-19g of beans. Its strongly recommended to weigh your beans. Dark color on the puck is normal. But if its really black it might have burnt a bit and your grinds maybe too fine.
Hi..very informative thanks. Can you pls tell me the exact diameter for the tamper / distributer that i need for the barista? Maybe the link where to get it from? Do i buy the 54mm? Thanks and stay safe
Thank you. Portafilter and basket size is 54mm. So you should buy any tamper/distributor tool between 53mm - 53.5mm. Now 99% of tamper you get are 53mm. It's hard to get anything slightly bigger than that. But I heard some people got 53.3mm size. So you need to look for that in your area. Here is one link for a 53.3mm tamper and they have a distributor tool as well for 53.3mm - stanthonyind.com/collections/wood_metal/products/the-new-levy?variant=33867852169
It may sound like stupid question. Anyway I’m curious to know, the leveller tamper has a shape, I see you’re turning clockwise. But if you figure and analyze the action of the low slope versus the semis raked in regard with the breville barista height gages principle which rake the powder at a specific height. Should we turn anticlockwise? In order to move the over pile coffee powder to an lower area? Or perhaps do it anticlockwise and then finish clockwise? Am I overkilling this simple task?
BTW thank for sharing yours knowledge, you completely change my morning coffee appreciation. My wife is freaking out on “my many tweaking change” I did to our breville barista since I’m following your channel. 👍
Glad to hear that these video helped you. The shape of the distributor side leaves are sloping less to the right. Hence it should be rotated clockwise. Since you mentioned, I'm going to verify the slope again.
Nice video Aju!
Why do you think the grinds should be touching the geouphhead? I thought a little room is needed for preinfusion.
Best wishes!
Thank you. Technically thats the height Breville suggests. I guess there will be a bit of Gap when you do the razor height. If you didnt scrape with razor, you could feel the grinds touching the GH. But as you know the puck expands when hot water soaks and then it will touch the GroupHead screen.. By that time Extraction will be done and you see the screen mark. But if you leave some more gap between GH and Grinds, no harm. Too much gap could lead to soggy puck.
Hi,
Would the same parameters apply for barista pro too? Thanks for the video.
Regards from Germany.
Gracious
Yes that's correct.
Hello, thank you for publishing this interesting video. Unfortunately I do not have those razor cards and I can not adjust the leveler properly. Can you calculate the depth of the card with a caliper? Thanks
Razor tool is 7.5 mm. So I'd use 8.5mm depth to cater for Grinds expansion.
@@AjusCafe Thank you for your response. That's so helpful 🙏🏽. Endless thanks from beautiful Iran
@@AjusCafe as a second question, what size of tamper/leveler do you recommend? 53? 53.3? 53.5 or 54?
@@ami.ability 53mm is standard. 53.3 or with fraction numbers are more precise tampers and they are very expensive.
@@AjusCafe 🌹🥰
What is the brand of the 2 in 1 tamper you are using in the video? Thank you!
3 Bomber from aliexpress.com
Hello friend, i bought dedica ec685 yesterday and im thinking to buy a bottomless portafilter 51mm with this 2 in 1 tamper too. Do you have any specific portafilter to suggest please?
Crema is a good quality brand. I have amazon links for breville. But you can get othet brand from Amazon too for 51mm
Now what if you also use one of them Distributed round metal filters on top ?
If you mean puck screen, i use it sometimes ua-cam.com/video/eZR6PgwOdxM/v-deo.html
before levelling, the most important step takes place...... settling the grind ! if this step is ignored, the distributer will simply crush the grind .
Good point. No wonder why i got a dip on the other end where I had less grinds. Usually I do Weiss Method if i feel its not distributed properly.
@@AjusCafethe weiss method is very thorough, but you may be still not be getting enough pressure. 3 ways of getting more pressure 1.add more coffee 2. add more tamping pressure 3. grind finer.
What about when you are using a puck?
What do you do if you don’t have the leveler? I have a Bambino and it didn’t come with the leveler. Oh BTW love your videos bc I can relate even with the Breville Bambino. Subscribed. Thanks!
Use Weiss Method which is easy. Else use your Breville Razor tool to distribute it in an angle.
@@AjusCafe I’m sorry I meant to say the Razor. I have the same distribution tool/tamper as you but I don’t have the razor tool. My pucks always come out soggy and wet on top
@@Jlui83 thanks for subscribing 👍. If you don't have the razor tool then measure 7.5 to 8mm height on the tamper side. I'd go with 8mm.
Hi, i want to order a tamper but i don t know if i need one 58mm, or 53mm for sage barista express same like yours
It must be 53mm for Breville barista Express
Thanks for another informative video, Aju. I really appreciate this.
I have a question in line with this video, is it okay to have screen marks/design on the puck? I was thinking not to have them to maintain the cleanliness of the group-head. What are your views on this? Thanks.
When hot water goes through the grinds, it expands. So its going to touch the GroupHead screen. If you tamp it too low, it may not touch the GroupHead screen, but that's going to create a mushy layer on the top and that can reduce the taste of coffee. So as per Breville's recommendation of razor height, its going to expand and touch the screen after Extraction. So you will see the screen mark, but not so pronounced.
I thought that you want to avoid having your puck touch the group head since it could actually burn the coffee? That's what a few other youtubers were saying anyway, so I've tried to avoid that by tamping just a bit more to avoid touching the group head.
To clarify, before you extract, the coffee Grinds that you tamp as per (Breville Razor height), will sit just below the GroupHead screen. You can verify this by opening the Portafilter before Extraction and look for the GroupHead screen mark. You shouldn't see it.
Secondly when hot water touches the Grinds, it expands and it will touch the GroupHead just enough. That's why we see the GroupHead screen mark on the puck.
Now if you tamp too hard, lower than the recommended mark, the top portion of the Grinds becomes mushy and that wont give you a tasty espresso.
Lastly if you don't tamp enough, i.e. way above the razor level, then either you won't be able to lock the Portafilter or if you manage to lock, then when the Grinds expands, the puck becomes like a rock and water extracts slowly which can give you bitter taste.
Grinds touching the GroupHead won't burn I guess.
Again other suggests slightly different because this can change from machine to machine. But for breville barista, you must tamp to the razor height(not more, not less) for better Extraction. Hope that helps.
@@AjusCafe What a good thorough explanation! Your videos are a pleasure to watch, esp how you explain everything in details without sounding arrogant like other espresso snobs on youtube do!
@@AmoneyP So glad to read your comments. Thank you.
Why is the group head moving is this normal not losing pressure?
GroupHead should not move and that's not normal.
Do you need to set it up again for the single shot portafilter?
Good question. I won't change the height setting. Instead increase the dose and bit on single shot and see how the Extraction is.
@@AjusCafe Great thanks.
In your video you have 18 grams of beans would that weight be the same if I use ground coffee ?
Yes, that a guided number. The basket can hold up to 21g. If the Pressure is low, you can increase the amount upto 21g
What was your grind size, please
Can't remember. Probably at 4
I've followed your advice here and I can't get the pressure past 10 o'clock. Yours went up to 1 o'clock. What grind setting were you on?
It depends on the freshness of the beans mainly. When was your roasted? Can't remember my settings, but probably size 2 or 3
@@AjusCafe roasted 27 Feb. 18g in and 36g out in 27 sec. All the parameters seem good except the pressure won't go past 10 o'clock. I'm also getting a bit of sourness.
Hi, Aju. Thank for your guidance. It's helpful for me. But I don't have the razor, could you tell me the value of the height of the tamper?
7.5mm. I would use 8mm height to accommodate Grinds expansion after tamp.
@@AjusCafe Thanks a lot
Aw, go skittles! 🐶
I would set the distribution side to the lowest height instead, you don't want to compress it at that point imo
Right
But ever dose and bean will vary. 18 gr height is not the same as 17.5... etc.
Yes
You need to be more succinct. Gets a bit long-winded and boring
Ok noted
I though you Hindus drank tea.
Hi, Which tamper will you recommend? I found the tamper for $44.99 (crema and.mattow) and inexpensive tamper for $13.99. Will tamper for $13.99 do the same job or it is better to buy more expensive. Thanks
Yes both will do the same job. But check the crema brand diameter. I gues it covers Portafilter fully by .1 or 0.2mm more
I found the "Crema Coffee Products 58.5mm Coffee Distributor/Leveler & Hand Tamper, Double Sided". Will it fit to my Breville Oracle portafilter. Recently i bought 58 mm Double sided tamper for $18.99 Will it worse to change it to "Crema tamper"? Thanks@@AjusCafe
