    This is probably a stupid question but where is the air you are adding to the milk coming from? The steam wand injects steam which is water vapour. This will condense to water as soon as the temperature is

      Its a brilliant question!! I do see beginners struggle with this concept so I usually omit it altogether. But what's happening is the force of the steam is pushing the milk away and leaving an air gap where the milk was. That air gets mixed into the milk and when the whey proteins β-Lactoglobulin starts to denature from heat, the hydrophobic end of the proteins essentially encased the air bubbles in the milk.

    I’ve been a barista for 5 years and this was the best tutorial in regards to steaming milk that I’ve ever seen, or trained to do. Explaining in depth the reasoning/science behind it made it so much easier to remember. I hate when people don’t explain the “why” to things and expect me to care more about applying those lessons😅

    Tip for everybody reading this and who wants to practice: You can practice by using water with 1 drop of liquid washing soap!

    I learned to foam milk yesterday, I was doing the method everyone told online until I found a comment that said '' dont put the buse IN the milk but rather on the side of it, not too deep '' game changer, oat milk foams so nicely

    I'm researching for my ideal home set up after not working in coffee for a while...but I did for 9-10 years of my life (started almost 20 years ago) and I was watching this video to see if I could test myself on what mistakes you'd mention and HOW they affect the milk....and I passed my own test. 🤣 I miss working in coffee so much and I'm so glad I had such great training and exposure as a young barista! So cool to see all the content on UA-cam these days about it.

    This deserves a lot more views... The only thing missing is how these mistakes will result in the milk. Usually when a newbie ask why their latte art is bad, the advices are mostly "you steam too long", "you steam too hot" or "get a better machine". Looking at the milk will provide intel that it's caused by wrong pitcher size / milk volume, stretching too long/short, wrong wand positioning etc.

    Additional point to add to this wonderful fun short lecture. Warming up the milk gives it light natural sweetness. The top sweetness level: 135 - 150F (57 - 66C).

    I just watched Hoffman on the subject, and the part I was leaving out was the short rest coming off the wand, before swirling. Presto!! My art improved by 100%

      Sure! That’s helpful way to get a foam that’s dense and workable. The reason I try not to recommend it universally is because mooooost people over aerate their milk so letting it sit is often the opposite of what is needed. Granted both methods are great!
      I personally never let my milk sit but it doesn’t hurt the art so long as you swirl it again before pouring.

    Emilee, you are a delight to watch! Your skill and knowledge are superb! I just purchased another Rancilio Silvia M (replacing my 15 y.o. one.) This weekend I'm ordering a Eureka Mignon Silenzio and all kinds of gear, including a 17 oz Cafelat pitcher, WPM 22oz round mouth pitcher, a scale, new cups, etc. I am setting up a home mini-cafe, hehe.
    I have three main questions:
    1) If steaming denatures milk proteins, should one toss out any milk left over in the pitcher? Wouldn't it now be unsuitable? I have always saved it, adding more milk to it to fill it up for the next time.
    2) My new Silvia spits out a lot of water with the steam for up to a minute; then, it still seems 'wet'. If I were to save the leftover milk in the pitcher to recycle it, I'm afraid it would be diluted by bleeding water with the steam. So far, no one has been able to offer a remedy.     3) I usually steam, then pour my shot. However, that makes swirling my pitcher very difficult during that next step. So, should I extract the espresso first? Wouldn't that cool it down too much and break down the crema?

      In addition, I would love to become an accomplished latte artist, even though I would immediately dust it with dark chocolate powder and stir it up. Fleeting art rules! After you explained in another video about the milk sugars, I have also eliminated sweetener, which for 40 years has been real maple syrup, an acquired taste after living in Vermont for 5 years.

    Thanks for the tips I did an espresso coffee course in NZ before moving to Chile in 2019.I bought an espresso machine then my wife bought me the coffee making course 😊. Since moving here I haven't made a coffee from a machine and have recently bought a new one so would love to start making real coffee again properly. Thank you so much for the tips

    Really like how you explain things with such clarity. I was given a beautiful espresso machine that cost more than my first car. It seemed only proper that I learn how to use it correctly and so I began watching many videos on steaming milk. Some are pretty good- but after I discovered yours I knew I didn’t need to look further.
    I like your style- authentic and funny- and most importantly, I can finally make a good “micro- foam” after following your directions re: what to do and what not to do.
    I’m going to keep watching- thank you

    Hey... Just want to let you know that I was randomly looking for for a good video on steaming milk.....found some and all were meh...... Landed on yours and I knew INSTANTLY that this was going to be magical just by the way you started the video welcoming new viewers to your site. I hit the like button and the subscribe button faster than any other site I have been on. I couldn't take my eyes and ears off and learned lots. Great voice, great facial gestures and of course great confidence and information. I can't wait to watch ALL your videos. (I'm not a creeper, honestly....just a great video). PS: drinking coffee for decades, espresso with milk for years and just bought an amazing espresso machine that has not even arrived yet. Soaking up all the knowledge I can get my ears on at the moment. Also roasting my own coffee. Thanks again. Coffee drinkers are the best!
