🙏 Pray for everyone who has endured this tedious but necessary process 🙏
Literally. I’ve been able to properly dial in my BBE one time…I’ve had it 5 years…send help.
All hail us the Caffè consumers!
Thankyou, helped me alot i had to adjust the grind setting inside the burr head from factory 6 to 3 and the outside dial to 5, it made a huge difference to my preference. 19g of coffee, 38g of espresso in 28 secs or so.
I reset my machine to 18gms of beans pregrind, double shot, timed extraction of 24.3 secs. Mere hmm for this Kiwi
If you're only timing from 1st drop what time are you trying to get? You should be aiming for between 17 to 20 seconds from 1st drop. Maybe a little more depending on the bean.
For the best taste and extraction always use medium roast beans. Dark roast always result in bitter taste even when properly extracted. That is the reason you were getting better taste when you under extracted with lower pressure and fast flow.
I've noticed this myself too, the best espresso I've ever tasted from my machine were from medium roast beans
@@Goetterdaemmerung86 I noticed this as well. Medium roast was way better than the dark roast I bought.
This drove me crazy hence nobody talked about it on youtube ,dude I finished huge bag of Costco kirkland dark espresso beans and everytime I get bitter taste no matter what I do
Great video. It's easy to follow and duplicate these steps. My built-in grinder can't grind fine enough to get the desired pressure and extraction rate. I've ordered a better grinder and also had a local coffee shop grind 500g for me. More testing follows.
I have seen different videos of sage barista express coffee ☕️ machine settings for perfect taste.
In the last three years, I didn't know about pressure settings.
In the last few days, I dived into depth and learned a lot of knowledge about how to make tasty coffee.
Barista Express is one of the best coffee machines for home.
A couple more thoughts Aju: when dialling in the dose, I found it easier to release the coffee into an espresso cup which I'd previously tared, then remove any excess coffee before adding to the portafilter; I also tried consecutive dosing (weighing and taring each cup before dosing). The automatic grind amount was remarkably consistent so I'm less bothered about single dosing.. I guess the next step is to add a separate grinder to the mix and see how much better the coffee tastes. Everyone is raving about the NICHE grinder..but of course it costs as much as the Barista Express in the first place so its not a small investment! Once again thanks for the videos- I'm learning loads! BW Graham
Hi Aju: I've watched several of your videos now (I live in London, UK by the way, and recently bought a Breville Barista same as yours!). I must say your videos are really helpful, specific and clear. I single dose 18g each time (rather than rely on the automatic dosing of the machine) but it would be interesting to see how effective and consistent automatic dosing actually is in a future video? One question: Dosing ratio. Its officially supposed to be around 1:2 but your was quite a lot higher. Any thoughts on that and any plans to make video about dosing ratios and dialling in? Thanks !! Graham
Thank you for the video. I am so new to making espresso and just got the Breville Barista Express. I am feeling more confident. ☕️
Good to hear that. Enjoy your machine
Aju, loved this video, perfectly timed and ideal to follow the process 🤓 Thank you for taking the trouble 🙏
It's my pleasure and I'm glad this helped. Thanks for the feedback.
After watching these vids I reset my machine and was struggling. I double checked the instructions that came with the Breville and extraction should be 2:1 ratio or 19g beans 38g espresso... Not the 50g of espresso you are extracting
You can manually stop the extraction at 1:2 ratio. Auto setting in Breville is not reliable
2nd shot 10 second pre-infusion + 12-13 second drop time = 22-23 second.
The best way to get accurate pre-infusion is use a bottomless portafilter and watch as the bottom of basket begins to saturate. That is your pre-infusion. For those who say timing from pump turn on get pump start up time I say if it takes longer than a second for your pump to begin pre-infusion there's something wrong with your pump or something wrong with brew head your brew head.
Surely when you way the beans there was still be a few grams left over in the hopper.
Hi thanks for this video. I think the problem is the grinder on this machine. We cannot make micrometric adjustment . This explains the big time difference between two very close settings.
These Grinders are not accurate. But usuable.
What about the internal grinder setting? I have my internal set to 3 and external set to 8.
That’s very illustrative, the way you’ve found the perfect balance of the extraction! Thank you
I believe you are supposed to start the timer at the press of the button. So with your machine it’s starting to pour out the machine at the 10th second. So your last shot ended at 20 seconds but in reality you hit the perfect 30 second mark. (Just my thoughts..?)
Hi Jason, you could consider preinfusion also in the timer. Some include and some don't. Both are ok for me. If i include then its 30sec Extraction.
Great video. Please do the same video for a bottomless portafilter no with Lavazza super Crema!
Are you using the dual wall basket?
No. Single wall basket double cup size.
You can adjust your burr so you can achieve finer options and your fine option will move from 4 to 6. Just readjust your grinder burr.
So many videos on dialing in with the external grinder but what about the internal?
You don't really need to adjust the inner burr settings, unless you have issue with low pressure or sour espresso. I've explained in my other video ua-cam.com/video/ifI4AajrDOQ/v-deo.html
Always buy freshly Roasted beans.
I bet a lot of people with ocd went nuts when he almost forgot to do the weight of the last shot 😂. Great video, well edited too!
Lol... i see that video again now and I laughed... good observation! Thanks
@Aju's Cafe I had a few questions for you. If you can’t get any pressure at all using the unpressurized single wall cups is the grind not fine enough you think? Also, do your pucks come out soupy? Is that just the way this machine is?
@@gedionsamuel2256Good questions.. Regarding low pressure, yes you need make grind size more finer. Also increase the dose a bit, if its still low on pressure. I made a 3 series of video on low pressure in my channel. Have a look at all those 3 and I'm sure you will fix that issue permanently ua-cam.com/video/ifI4AajrDOQ/v-deo.html
@@gedionsamuel2256 Regarding soggy puck, i don't normally get. One tip is to ensure you tamp it right at Razor tool height. If you tamp it too low (lower than Razor height 7.5mm), you will get soggy puck. Also, try to leave your puck in Portafilter for 2bor 3 minutes after Extraction. Breville barista Express has a feature where it sucks up water from the puck to make it dry.
Aju's Cafe 🙏 Thank you for the quick response. I’ll go check it out right now.
What was the inner burr size as well?
You didnt do a very good job
You mentioned a tamper and scales but I couldn't find the links? Thanks..
Thanks for sharing I just got my Breville 870 need to work on my coffee making 👍🏻☕️! Which filter did you use?
Congratulations. You are going to enjoy your machine! I always use Non-Pressurized basket because it give you more control. Pressurized basket is for store bought coffee Grinds or for beginners. See my video on basket difference. ua-cam.com/video/U7uDE-E-Z3I/v-deo.html
@@AjusCafe thanks enjoy watching your video learning a lot I’m using the dual wall basket since I’m a beginner but will try other one here soon 😁
@@rueda82nd oh i see. When you switch on Non-Pressurized basket you will need to dial in properly to see the pressure gauge in guided range. And it'll taste better too. Pressurized basket always shows pressure and it is not really hitting the sweet spot of the beans. Buy freshly Roasted beans and try.
This video was one of the most helpful that I’ve found. Thank you!
Do you leave the beans container (hopper?) empty and you always measure the weight of the beans each time you make a coffee? or you are doing this just for the video? 🙂thanks for all the videos by the way
I never leave it in the hopper. Thank you
@@AjusCafe thank you so much! i now add them to the hopper only when i need it ..
I have a question. In commercial so does that mean they always use one or two kinds of beans?
Usually yes it would be same beans to keep the taste same
Your video help me a lots. Thank you. From Malaysia with love
So glad to hear that 🙂
Hey Buddy Thanks for your video I really enjoyed it and was really helpful.
So glad to hear that 🙂
Thanks
Awesome video, very organized and helpful for a beginner. Thanks for the time doing this. Enjoy your coffee!
Thank you for your feedback. Appreciate that 👍
you have to turn the grind dial all the way to MORE to get the full 18g out of the machine.. guess you can press it one more time to get it all out but judging by the amount it did not look like 18
Love your videos, you're great at explaining things and share very valuable knowledge. What I can't understand is how you are achieving correct (in the zone) pressure regardless of whether you are at grind size 6 or move all the way down to 2.
If I am at the 12 o'clock range and move 1 or 2 grind sizes finer I will definitely be over extracted out of the range. Changing grind sizes seems a lot more sensetive for me. I am using super market medium roast beans and have internal burr on setting 3. Thoughts?
David, thank you. Good question though. Answer is simple why I get good extraction and in pressure range is because I use freshly roasted beans. Freshly roasted is much different than store bought beans where we don't know the roasted date. For espresso always buy from a local roaster as they give you the roasted date. Now in 1:37 of this video I mentioned that I roasted this beans 2 days ago. So lot of coffee oils and gas in that beans, so you see good extraction like honey. I have few videos in my channel on how to roast beans at home.
@@AjusCafe Hi Anju, I think I've just spent most of my evening watching all your videos! ☺️ Thank you for the response, I had a feeling the fresh beans made the difference in this case and I will endevour to buy some. Thanks again and keep up the great content ☕
@@davidagius4753 thank you and appreciate your feedback.
What basket did you use? Non pressurized?
Yes Non-Pressurized basket usually
Do we have to roast the beans we get from the stores like Wholefoods that are sold by weight and not in the sealed containers?
Thanks bro
thanks for your efforts I really appreciate
You are welcome
This is the most Indian-Dane accent I've ever heard.
No idea what is Dane.
I notice u have not changed your amount of grind and just adjusted the coarseness. Reason? Is there a reason for using the numbers u use on amount of ground coffee weight? What numbers are we looking for in the weight of coffee after the shot is brewed vs amount ground? What number are we looking for ? Ratio of beginning coffee to weight of coffee after brewing? Thank you.
I see you have double filter but yu hit single filter button?..why?
Thank you for the video it was simple and informative
Thank you
i never imagined that Breville can do extremely well, glad i had one
Thank you brother !
You are welcome
.
Thank you helped with figuring out the process. What a difference
Hey do you use default setting on double coup extraction or you did some improvemnt? 😊
Great video! Very informative! Exactly what I was looking for! Thanks.
Did you use the beans from that bag you purchased or the one you freshly roasted by yourself?
If it’s the one you purchase, what’s the roasted by date?
Usually the best taste period for freshly roasted beans are 6th-14th day.
Did you use the non pressurise or pressurise filter in this video?
Appreciate if you can tell me.
I used freshly Roasted beans which I roasted few days ago.
Non-Pressurized basket was used in the video.
My Breville set the grind to 16. Is it the right setting?
Great job
Thanks
Thank you for this... i just wish you had used the Lavazza beans😂. I've tried at least 20 times and still cant get it right 😢
Welcome
You need to use a different grinder, found this grinder too fiddly when changing coffee beans and types and the coffee retention is shocking
very impressive step by step scientific settings for best espresso :) Thanks for your effort for the best data!
Thank you Henry
Love your videos bro. I learn a lot because of you
So glad to hear that
@@AjusCafe except i noticed that i can not adjust my bur. I have a solis grind and infuse 115.. Keep up this great work dude. Makes my day.
Hi, Aju. problem i have , make a coffee 18grams takes about 26 seconds, make same shot 2min. later 18grams takes about 39seconds !! any ideas ? cheers Michael.
First thing please check if your filter baskets are clogged.
Secondly run few double shot empty shots, just hot water and measure the water volume to see if you are getting it constant.
Thirdly measure 18g of grinds (not beans). i.e. make sure you take 18g of ground coffee into the basket. Because Grinder can dose more OR less than 18g beans.
if the above items are good, then it could be something to do with your beans and grinder. As you know Breville grinder is not consistent in grinding. i.e. some coarser, some very fine. Test it out and let me know.
This is a good learning! Thanks for showing the various settings. The tests has made me realised that I need to do it as well! Now I see why my brew hasn't been tasting consistent. Thank you!
Good to hear that. Its recommended to dial in every time you buy new beans.
You start timing when you start the shot (extraction) not at first drop.
I've seen people time it both ways but it should be when the first drop is "extracted". If you start the timer at the button press, you're timing the pump, preinfusion, etc. not just the actual extraction.
It's been a debate always 🙂. Due to long/slow preinfusion on BBE (8-12sec), i tend to start at 1st drop. Anyway this is not a big deal, as far as its not a very long shot and watch for the change of color.
@@AjusCafe Yes the problem with timing from first drop is you don't factor in pre-infusion and coffee puck saturation, which effects the flow rate. But your right, it doesn't really matter as long as you stick to one method and then adjust from there...and of course, that it taste good to you! Enjoy :)
@@Andy-cp6fb Exactly 👍
what number was the inside grinder?
whats the setting inside the machine?
Bravo excellent simple and not complicated. I will probably stick to one coffee bean. This is a lot of dialing to find the sweet spot. Thank youuuu. Enjoy your coffee
I've tried everything still can't get a good double or single shot! so now I use the dual wall basket.🙂
The beans are not freshly Roasted. That's why
I have the first generation of the Breville espresso machine, how do I know what size is it in metric 53mm/54mm. I want to purchase the air pump for my hopper and the rest of the items. Can you let me know what it is if you happen to know.
53 or 54 can be bought. Max size is 54mm . These accessories are standard size. Most of the link is in the description below. If you meant bellow for breville, then you need to buy one for breville barista Express.
Is it normal for the single and double shot to have different dial ins for the grind size? I found that if I use the grind setting that works for the double shot for the single shot, the single shot starts to choke and I have to make the grind setting 2 steps coarser for it to work for the single shot. For example, I use a grind setting of 8 for my double shot, but the single shot chokes unless I use a grind setting of 10. If I use the setting of 10 for my double shot, it reaches the middle of the espresso zone on the pressure gauge but the flow is a little too fast. This is for the breville barista express by the way. Both of the filter cups are also single wall (unpressurized). Also I am using Lavazza espresso perfetto whole bean blend.
After you've dialed in the grind size, i would suggest you to change only dose when you swap single or double basket. If the Pressure is too low on single, then dose 1g more and see. That's what i do. Single basket is not exactly half of double dose. Usually single ratio is slightly more. So dose 1g more and tamp well and see.
what type the filter are you used it in this video double or single , because I see in the filter size is single, so you grinder is single? or you are using manual grinder? and also I want a solution for why my shot almost all the time the portafilter is so soak after make it an extraction ..thank you
I use single wall double filter only. I use filter size on the machine to single, before I bought the dosing cup. this is to avoid spilling of grinds. So I do 2 single dose to make it double. And tap half way to settle the beans well before dosing the 2nd half. Hope that clarifies.
If its just roasted it should be keep 15 days at least. And not in a tupperwear since the fluid shoud go
Thank you so much for this video. I just got this machine and have wasted a bag of beans. This step by step has been very informative.
Welcome
I feel like the distributor is useless because it doesn't reach down into basket it only distributes the top. I prefer to use a WDT tool it looks like 3 prong whisk.
You need to tap the Portafilter to settle the grinds well, before using distribution tool. It is one of the best tool and must buy tool.
Just out of curiosity, how do you know where to set the grind amount? In every video I watch, I seem to see a different location of the dial. Some around "three o'clock" all the way down to "six o'clock." Any guidance available?
I use weighing scale to weigh beans - 18g from double shot and put the dosing dial to maximum to get all 18g grinds into a dosing cup in one go.
Depending on dosing dial is not reliable as it can change according to the beans too.
Hi i see you were on the single filter setting for a double shot, I just bought a sage BE but i had the double NP filter for a double shot. Am i wrong in doing that. Ive still not made a decent shot yet. Thanks
I used to dose 2 single dose, to avoid spill. In between I tap Portafilter to settle the Grinds before dosing 2nd half. This was before i bought a dosing cup.
What is the Roasted date of the beans that you use? If you don't use freshly Roasted, you won't get a decent Extraction.
Great Video ☕️👍🏼👍🏼👍🏼
For Lavazza as my go coffee I use setting 4 and Burr setting factory on 6 and this usually give good results needle not passing over 12 and right pressure.
Now the video you haven’t made yet is how do you store coffee?? When you open package or roast.
My trick I buy vacuum sealed container and keep it in freezer and this works actually to preserve freshness..
Alan H
I was thinking of coffee storage a lot last night for a change... and you talked about it today... lol. Storing in freezer has mixed opinions. I'd store in a dry place, in a kitchen cabinet. Vaccum seal is great.
Regarding the pressure gauge, i feel 1 O'clock mark extracts better taste for me. Try it and see if you prefer that taste.
@@AjusCafe actually I learned this recently now it’s your opinion how you’ll like to store but for me it works actually 👍🏼👍🏼👍🏼👍🏼☕️
Try it see what you think..
Alan H
@@AjusCafe so for now I’m using single pressurized basket factory bur setting 6 and grid on side is 4 I get around 12 o clock extraction and a bit of crema...
Any recommendations you think would be better for more crema or it’s
Good as it is??
Alan H
@@alanh8101 if freezing works for you then stick on to that. Good to know that. Not sure if freshly Roasted beans act the same way.
With that heat I can’t trust you bro. I’m trying everything but doesn’t work. What’s the size that you use inside of the grinder??
Inner burr is default at 6. What do you mean that heat? And what is not working?
But why 18 grams of coffee , why not 19 or 20 grams ?
Good question. For double cup basket you can go anywhere from 16 - 21g. But mostly 18g is used usually for Beeville's basket. It depends on your beans, grind size as well. But when you dial in a beans, stick on to a number for grams and then change the grind size as needed.
You have the filter set to single and pouring double
Thats To avoid overspill of grinds
You were making the coffee more course rather than finer
They can be very bitter if you go finer. Too Coarser can be sour too. So one must get the right balance.
Great video, thanks. One question - My 'Grind Amount' dial is always at 12, if I go any further I get LOTS of coffee and yet I see yours is at around 4pm. Any time I adjust the grind setting wheel as well it gives me more or less depending on which way I turn it, so I can nevert get a consistent amount unless I leave it one setting. Any ideas?
I leave it to Maximum because i don't use that dial. Instead i weigh my beans to 18g and use it one time. So i always get 18g out. That dial is not reliable and every time you change beans, it can dispense more or less depending on the beans quality.
@@AjusCafe Thanks, that's what I've found. I've started weighing to 18g too.
What is that tamper called? I’d like to buy one
2 in 1 Tamper Leveler from aliexpress.com ua-cam.com/video/ACKVR1nXFcA/v-deo.html
Looks like dark roast to me. But no worries I like dark roast.
Yeah somewhere between medium and dark
Very helpful thank you!
Stir before tasting , it makes a difference.
I do. Sometimes i don't 🙂
1st shot including 11 second pre-infusion you had a 22-23 second shot. Way too short. The flow looked like drip coffee. You should count extraction from point water comes in contact with coffee.
When to count the timer is always a debate. I wait till i see the first drop to start the count. This is because BBE has a slow/long preinfusion time compare to 2 - 3 seconds in pro machines. So its recommended to count when you see the first drop on BBE. Anyway this is not a big deal. Taste matters and stick on to that time.
@@AjusCafe infusion starts the moment water contacts the coffee. Yes there are differences of opinion but follow the science. However your coffee your choice.
I literally wasted a whole bag of beans because I misunderstood the dial, so every time I tried to adjust I was going the wrong way...this was the only video I had watched that took a moment to clarify the grind numbers on the dial...😅
Oh my goodness. Glad you are are to get the extraction right.
What setting are your conical but a at?
Its at 4
This was super helpful THANK YOU!
You are welcome
My Breville BE 870 came with a levelling tool. Unfortunately the grinder stopped working, not the grinder itself but its activating switch became unpredictable, sometimes it worked, sometimes it did not want to start. I bought Breville smart burr grinder which I love. It has the same type of activation, but this is doubled by Start/Pause button. Somewhere in the middle I pause the grinding, press down the coffee, and in the end I use the provided tools to press it down. This smart grinder has digital timer and grind settings. Interestingly, I use grind size 6 for my own roasted beens . For those beans, size 4 is just slow and over extracted. I love Lavazza but I generally use Gran Crema or something similar. How did Lavazza Rossa work compared to your own roasted beans? And my last question: how do you roast raw coffee beans? I only tried the stove roasting in a cast iron pan. What I don't like is blowing away the fluffy bran.
Lavazza Rosa is decent tasting espresso. I prefer Roasting my own. But to compare there are many types of beans that i roast. This Lavazza is better tasting than some of the flavors i roasted. But i still prefer the freshness of roasting my own. I always use cast iron deep Skillet to roast my beans. Here is a video on how I roast ua-cam.com/video/gGnhba65nkQ/v-deo.html
To blow away the chaff you should step outside home and do. The wind or breeze will clean up naturally 👍
Think you so much for this in depth demonstration. I enjoyed it.

Double size Non-Pressurized basket
What type of basket did you use?

I use pre-programmed settings usually.

So basically if you switch to different types of beans, you will have to waste a lot of beans???
Not necessarily. But you should be able to dial in 1 or 2 Attempts.
Makes sense that different beans have different grind settings based on what the individual likes.
All trial and error really, have a fiddle with the machine and find what works best for you.
