Awesome tool. Surprisingly heavy coming from the plastic BE tamper! Got the leveler/tamper combo. Been leveling a little shallower than the razor and then use the other side to tamp to razor depth. It's just fantastic.

One of the things I’ve been doing left is comparing shots with just the distribution tool and not tamping and lowering the doce of grams from 18gm to 15gm. It’s worked really well for me. You should try. For me 15gm seems to be the one. I worked my way down. Every shot is perf! And right in the center of my pressure gauge.

Hi Hoon, glad you and yours are feeling better!
I heard recently that twisting the tamper to polish can create small fractures in the puck and can cause channeling. From my experience with this tamper, once the depth is properly set, you don't really need to tamp. Much as Mark from WLL demonstrated, setting the depth a hair deeper than ideal will obviate the need to tamp. Perhaps you can pull shots both ways to compare on video.

I've been using the distribution tool instead of the tamper as well. Big advantage in consistency and preventing fractures. You still need to be sure that you're putting enough coffee into the portafilter, or else it's under-packed. It will vary according to the bean and the grind setting, but one way to test is to tap the puck out into your hand BEFORE brewing the coffee. If it's been packed well, the un-brewed coffee should come out as a fairly intact puck. This is just part of dialing things in; you can try it once and then put the coffee back into the portafilter and brew it.

I have been experimenting. I don't have a distribution tool, but am "distributing" by holding the tamper at an angle and gently pushing it in, in a circular motion to settle the grounds, followed by a firm tamp. I have seen very few people do this. Might it be used instead of a distributor? What do you think?

When using a tool like this I've found it works best at the shallowest depth possible, i.e. so you're using it solely as a distribution tool and not as a tamping or precision razor replacement.
My process goes as following after grinding the coffee beans: 1st use this distribution tool at it's shallowest depth setting & give it a spin, which will evenly distribute the beans but not tamp them, 2nd tamp it using the tamping tool & then 3rd use Sage's precision razor tool if required. I very rarely need to use the precision razor tool as steps 1 & 2 work out well for me.

Whenever you're using a pressurized basket set 8 for the grinder setting.
Thanks for the great videos. Could you please just clarify that this is 54mm? There seems to be a little confusion online about whether the SBE machine takes 53 or 54mm tools. I’m using a motta 53mm tamper with mine, want to get a leveller tool but don’t want to get the wrong size.

I also weigh the coffee grounds (18 grams) but it always seems like it is too much and I can barely close the portafilter. I use the barista express grinder (at 8). Any idea why this happens when I use the right amount of coffee?

Because the Niche grinds the coffee more consistently. You can really dial in the grounds better than the one that came with the machine. You'll find that the Niche will also be less clumpy so water will flow more evenly. Personally for me, I would've spent just as much on the grinder as my coffee machine. But again, this will depend on your workflow.

When I set my tool up with the Breville gauge I still got shower screen indentions pre brewing. Is it best to just slightly adjust the tamping depth right below that point?

I have not tamped since getting my levelling tool set up, it's soooo much more predictable and consistent.
Have a taste difference in tamping after leveling vs not tamping. Some roasters still claim a difference even with a deep leveling tamp. Would be interested in your opinion.
Hi Hoon, you mentioned something about the puck being nice and dry. I’ve noticed my are usually really wet and sometimes get stuck to the machine where the water comes out (not sure of the part name). Does this mean I have too much coffee in the filter? Thanks!
I get that as well when I use older coffee.
There are a few things that lead to a wet puck. Wet pucks don't mean your coffee is going to taste bad, but they can be messy to clean up. One thing you can do is just wait a few extra seconds before removing the portafilter. This gives time for more water to drip out of the puck.
It is usually caused by the opposite problem than the one you expect. There is too little coffee in your portafilter, so there is a gap between the shower head and the coffee, which ends up filling with water. If you use the razor tool to make sure you have exactly the right "height" of coffee in the portafilter, it will reduce the amount of water. Adding more coffee, of course, means you should go to a slightly higher grind size than you were previously using.
For me works better also when adjusting distribution tool to use leveler, but about 0.5mm-1mm shallow so this way I have a little room for a light pressure for my tamper

As long as the depth is correct you don't need to tamp but try both ways.
with the pressurized basket tamping dose not matter but a slight press will do
Hoon,-Appreciate the content. I measured out 18 grams of beans for breville. Tamo it and try to use the razor to level. But I don't get enough beans that the it doesn't reach. Grind is set to 7 and ground amount is at half way mark. Any help would be appreciated it.
Do you measure the 18g before or after dosing?
18 grams in grinder it yields about 16.5

Yes, correct. But you can get a 53.3mm for better fit.

Hoon's Coffee yes, but not a hard tamp. A tamp and a spin to finish it off then onto the brew head.

I bought an Espresso Distribution Tool that looks exactly like this one. It has a logo on top: Apexstone. But it's the same. Does anyone know about a circular white or clear washer that came with it? I found it lieing on the table after I opened it. When I TRIED to see where it goes, nothing worked. It might just be some packing. piece, but I can't imagine why it is even there. Does the Great Kahoona know?. Do any of the Hoonikans know?

Hey, I'm planning on getting the barista pro and want to buy a distributing tool. But I look online and don't see a 54mm. Only a 53 or higher number. Show me where I can get the right size. Also, do u recommend I get a regular distributing tool or the hybrid of distributing and tamping 2 in 1?
53mm is just fine to use.

Great video. I hate the fact that you have to buy a 53mm leveler for 54mm breville portafilters. Got a breville myself and in germany so far 53mm leveler are not very easy to get. I have yet to find a good one.

Best option is to strip the machine and wrap threads with 2 wrap of plumbers Teflon tape.
That way, adjustments are precise and distance stays in place

Seriously zoom out your camera. First 2 minutes half the stuff you show are barely in the frame. When adjusting your OCD tool as well zoom out a bit. Otherwise nice explainer video.
