Jelly Cakes (AUSTRALIAN RECIPE!)

Jelly Cakes are an old-fashioned Australian dessert. To make them you join squares of sponge cake with cream, coat them in raspberry flavoured jelly, and then roll the cakes in coconut.

It would turn into mush on the outside, you need something that isn't going to disolve in contact with the moist jelly.
