Ingredients: 2 cups quinoa 2 can black beans 1 onion, diced 2 spring onions, chopped (optional) 3 garlic cloves, minced 2 thyme sprigs ½ scotch bonnet, minced 1 1/2 bell peppers, diced 2 tsp allspice 1 tbsp all purpose 2 tbsp paprika (can used smoked version) 1 tsp miso paste 1 vegetable sock cube 1 can chopped tomatoes 2 cups coconut milk, warm 1 cup hot water (boiled in the kettle) salt & pepper to taste (I also added a 1/4 cup of hempseeds before serving but it is completely optional)
Directions: 1. Preheat the oven to 180°C (350°F). 2. In a baking tray, add 1/4 cup of oil along with the onions, spring, onions, garlic, time, scotch bonnet, bell peppers, allspice, all-purpose seasoning, paprika mix until well, combined and place into the oven for 10 minutes until the vegetables are lightly browned. 3. In a large measuring jug or bowl, combine vegetable/mushroom stock, miso paste with 1 cups of boiling water, mix well to melt the stock cube and miso. Add the coconut milk and set aside and set aside. 4. Remove the tray from oven and add black beans, quinoa, can tomatoes and coconut milk stock water. Cover the tray with foil and place back into the oven of 40-45 mins until the quinoa is cooked through. 5. Once cooked, remove from oven, fluff with a fork and add salt to taste. 6. Serve as a main dish, side dish, or portion into containers for meal prep. Enjoy!

I’m Altmost in tears ! I’m changing my diet intake! I found out I have thyroid problems which is causing brain fogs and I hate it! Change has to come ! I’m glad I came across this video ❤❤❤thank you , I need a recipe book asap
It takes a lot of trial and error to find what works best for you but you got this!! I still eat carbs foods but only after I’ve eaten a lot of fibre and nutrients. Sending you love on your journey 💛
