Terrific video Steve!! I'm with you! My choice would absolutely be the Classic Paloma. It was fascinating to see the clarified version made. I enjoyed that very much and I will make the Clarified Paloma and the Upgraded Paloma. The Paloma is one of my favourite cocktails so I'd love to try all 3! When I make clarified citrus cocktails, I almost always let the citrus peel infuse into the base spirit overnight, it makes up for the 'numbing' effect of the milk whey. I would also use Campari instead of Aperol for the same reason.
After watching this, I had to quench my sudden thirst with the Paloma I am now enjoying. Did it as a classic - no time to fuss - but the idea of including a splash of Campari was brilliant. I used my favorite and highly recommended go-to, Brooklyn, NY, based Q Spectacular Grapefruit soda. Thanks, Steve!

I’ve been making grapefruit syrup like the cordial method for years. I use a micro plane to zest the peel and use equal parts of sugar to grapefruit juice so it’s 1:1. Dissolve on stovetop and strain. Works great whenever you don’t have grapefruits on hand for Palomas, Hemingway daiquiris, Grapefruit Bucks/Mules. Use it just like simple syrup with fresh citrus to balance it out.
Tried and loved the first two, the third recipe is tad bit intimidating. One point I have to make as a science nerd, Steve says @9:12 or so “increase the pH” but actually when acidity increases pH drops, and when pH increases the alkalinity increases.
I really enjoyed seeing the different variations of this amazing drink, and I just might have to make one this weekend. For my fellow Texans there is an Austin based company called Liber & Co that makes a really good Ruby Red Grapefruit Cordial. I like to use that and Squirt for an extra blast of grapefruit flavor. I'll definitely have to check out how Campari affects the experience. Thanks Steve!
Awesome recipes! I recently had a clarified Paloma at a Mezcaleria Tlecan in Mexico city. It being clarified blew my mind, especially knowing it's done with milk! Thanks for sharing the recipe! I'm gonna try it. That salt grapefruit cordial looks awesome too for other recipes as well.
The second version looks really nice, I am not a big fan of tequila, but I will try that. And regarding clarified cocktails: I kid you not, I made a full bottle last fall, finished it last week and it still tasted the same 😄 Mostly was in the fridge at 5 degrees C tho. I think it works best for cocktails with a lot of fruit, because the sweetness and aromas of the primary fruit stay while light notes vanish.
If you are in Europe use San Pellegrino Pompelino (sparkling grapefruit soda ) for this. Especially if you just fancy a paloma on a Friday night and you haven’t done all of the fancy prep in advance.
I tried it, it doesn't really work, you need a settled mass of milk solids in the bottom of the filter to truly clarify the liquid. When you add pressure , the solids are disturbed too much, so the resulting liquid is very cloudy.
You could always try clarifying the citrus juice separately with milk then putting the drink together? The aperol and ancho Reyes would come through brighter

I make a version with 1/2ozAncho Reyes Verde, 1/2 ozAperol, 2 oz Blanco Tequila 1/2 oz lime juice (shaken)and top 3 oz squirt

in fact it doesnt raise the pH, it decreases the pH of the coconut milk
