We use agave syrup in our margaritas - a great combo. The Paloma is a classic, especially at weddings, apparently - not something that Mexicans would drink on a standard night out. But, you need the salt - Mexico is all about the lime and salt!

But as we know, the great ship did not make it to New York. The ship hit an iceberg and sank, and the cargo was forever lost.The people of Mexico, who were crazy about mayonnaise, and were eagerly awaiting its delivery, were disconsolate at the loss. Their anguish was so great, that they declared a National Day of Mourning, which they still observe to this day.The National Day of Mourning occurs each year on May 5th and is known, of course, as Sinko de Mayo
I made the blackberry, vanilla and jalapeno smash, but I'm not such a spicy girl, so I substituted the jalapeno with a some pepper flakes, and WOWSAH!!!! The perfect spice proportion, smokey vanilla and sweet were perfection in a glass! This can become a regular whenever a blackberry is available. Thanks for this one!
I made all of these except Tommy’s last night for my wife on Mother’s Day. She loved the Hibiscus Diablo and BlackBerry margaritas. Looking forward to other cocktails. I’ve been following all your recipes. Thanks for sharing.

I love my Aussie bartenders :) Im not a big drinker until this quarantine when my local olive grove delivered some free limes and I made my first Moscow Mule cocktail with bunderberg ginger beer. Now Im stocking up on these goodies and I came here for the hibiscus flowers lol

The heat and spice from the jalapenos work extremely well with the tequila. I build the cocktail as specified in this video, although I include 6 or 7 jalapenos instead of the recommended 4. I also don't strain any of the content, preferring the bits of blackberry and jalapeno in the drink itself. It's fantastic. Thank you, Steve!
I like the use of jalapeno its practically unheard of to my friends and family! I use it in the tijuana rocket: jalapeno and red bell pepper muddle, agave syrup, pomegranate molasses, and tequila. Served in a chilled coupe glass

Capi Mixers are some of my favourites. They make an amazing Tonic and the Grapefruit Soda is always a favourite at Christmas time. Sweet sour and amazingly refreshing just by itself.

I would like add that Mexican limes are Key Limes which are sweet like some oranges are. Here in the USA we used to enjoy them grown in Florida's hot climate but the crops were frozen one unusual cold front and were lost to us forever. I say this about the limes because it changes the complexity of all recipe's. BTW I love your bartender skills, (former bartender).

Fun fact, we grow tons of berries in Jalisco, you can get lots of blackberries here, high quality and quite cheap when they're in season.

The Paloma is made different in the place in MX i visit. Tequila, lime, pure orange juice and squirt soda which is a grapefruit soda

Switch out the Gin for Tequila of choice (mine is a Reposado or Añejo) and you have a Tomas Collins
